Hot Milk Cake With Lemon Filling and Boiled White Frosting image

This is another recipe that I fondly remember from the Frances Virginia Tea Room which was located on the third floor of the Collier Bldg in Atlanta until 1962.

4 eggs
2 cups sugar
2 cups flour
1 cup milk
1/2 cup butter
1 tablespoon flour
3 teaspoons baking powder
1/2 teaspoon salt
1 teaspoon pure vanilla extract
1/2 teaspoon almond extract
1 cup sugar
4 tablespoons flour
1 pinch salt
2 egg yolks
1 1/2 cups water
1/4 cup lemon juice
1 teaspoon grated lemon rind
1 tablespoon butter
2 cups sugar
2/3 cup water
2 egg whites, room temperature
1 pinch salt
1/8 teaspoon cream of tartar
1/2 teaspoon pure vanilla extract

Steps:

  • FOR THE CAKE:.
  • Preheat oven to 350 degrees.
  • Beat eggs thoroughly with electric mixer. Gradually ad sugar. Beat until fluffy. Sift flour 2 times. Add, beating thoroughly. Place Milk and butter in small saucepan and let come to a boil. Add immediately to flour mixture and beat until cool (8-10 minutes). Batter will be quite thin. Sift in remaining 1 tablespoon flour, baking powder and salt. Add floverings. Beat 1 minute more. Pour (about 1 cup batter per pan) into 3 well-greased and floured 9 inch cake pans*. Bake approximately 30 minutes or until tester comes out clean.
  • * I get sneaky here cause I love Kittencal's pan release, #78579.
  • FOR THE FILLING:.
  • Mix dry ingredients. Beat egg yolks with water and juice. Add dry ingredients. Blend well. Cook in double boiler until clear. Remove from heat. Add rind and butter. Spread on layers and stack.
  • FOR FROSTING:.
  • Boil sugar and water until syrup forms thread about 3 inches long when dropped from a spoon, or cook until syrup has reached 238 degrees on candy thermometer. Beat egg whites with salt until stiff. While very hot, pour syrup in fine stream over egg whites. Beat until misture is creamy and reaches spreading consistency. Add cream of tarter and vanilla. Spread on sides and top of cake.

3 tablespoons sugar
3 1/2 teaspoons baking powder
1 teaspoon salt
1 egg
milk
3 pints fresh blackberries
1 cup sugar
3/4 cup water
1 1/2 tablespoons butter

Steps:

  • Sift the flour, 3 tablespoons sugar, baking powder, and salt into a medium bowl and mix well.
  • Add the egg, stirring until blended. Add just enough milk to make a stiff batter and mix well.
  • Combine the blackberries, 1 cup sugar, water, and butter in a medium saucepan. Bring to a boil, stirring occasionally.
  • Drop the batter 1 spoonful at a time (each spoonful should be 1/6 of the batter) into the boiling blackberry mixture. Cover and simmer 15-20 minutes.
  • Serve with ice cream or whipped cream.

3 (1/4 ounce) packages unflavored gelatin
1/2 cup cold water
3 cups boiling tomato juice
1/2 cup catsup
1/4 cup lemon juice
2 tablespoons grated onions
1 tablespoon prepared horseradish
1/4 teaspoon salt

Steps:

  • Let gelatin soak in cold water. Add gelatin mixture to boiling tomato juice. Add remaining ingredients. Stir well. Pour into molds. Chill.
  • Tea Room Notes: Small ring molds were used for this aspic. It was often served on chicken, shrimp or tuna salads. Quite colorful and tasty.

Years ago, there was restaurant called the English Room on Newbury Street in Boston. They would serve a big bowl of salad at every table with this wonderful dressing. I found this recipe a long time ago in one of the Boston newspapers.

2/3 cup sugar
1 teaspoon dry mustard
1 teaspoon paprika
1 teaspoon celery seed
1/4 teaspoon salt
1 tablespoon onion, grated
1/2 teaspoon orange rind, grated
1/3 cup honey
1 tablespoon lemon juice
1/4 cup orange juice
1/3 cup red wine vinegar
1 cup salad oil

Steps:

  • Mix together sugar, dry mustard, paprika, celery seed, and salt.
  • Add onion and grated orange peel.
  • Blend in honey.
  • Combine lemon juice, orange juice and red wine vinegar in seperate bowl; blend well; add to mixture.
  • Add salad oil in a slow stream, beating constantly with a hand mixer or whisk.
