3 cups white sugar
3/4 cup margarine
2/3 cup evaporated milk
1 (12 oz) package semisweet chocolate chips
1 (7 oz) jar marshmallow cream
1 cup chopped walnuts
1 tsp vanilla extract

Steps:

  • Grease a 9x13-inch baking pan.
  • In a large saucepan over medium heat, mix in sugar, margarine, and evaporated milk. Stir to dissolve sugar. Bring the mixture to a full boil for 5 minutes, while stirring constantly.
  • Remove from heat and add in chocolate chips. Stir until chocolate chips are melted. Add marshmallow cream, chopped walnuts, and vanilla extract. Beat well until mixture is combined.
  • Transfer fudge to the prepared baking pan and let cool. Once firm, cut into squares.
  • Enjoy!

3 cups granulated sugar
¾ cup unsalted butter
⅔ cup evaporated milk
1 pound semi-sweet chocolate
7 oz. jar marshmallow creme
1 teaspoon vanilla extract
1 cup chopped walnuts (optional)

Steps:

  • Prepare your ingredients. Make sure the chocolate is chopped if using a large block, or have the chocolate together. Chop the nuts if you are using them. Take the marshmallow creme out of the jar and place it in a bowl.
  • Prepare the 9*13 baking pan. Line the pan with foil and butter the inside.
  • Using a large 3 quart saucepan that has a thick bottom, bring the milk, sugar, and butter together to a rolling boil over medium heat. Make sure you are stirring constantly once it starts to boil and bubble.
  • Once it starts to boil, start a timer for 4 minutes. If you are using a candy thermometer, you want to remove the fudge mixture when it reaches 234°F.
  • Once the 4 minute timer goes off or the mixture reaches the temperature, add the marshmallow creme and chocolate.
  • Let the chocolate and marshmallow melt and then mix together well. Add the vanilla and if you are adding walnuts, stir them in now.
  • Pour the mixture into the prepared pan and let it cool before slicing.
  • Let it set for 4 hours. Place it in the refrigerator to make it more firm.

1 (225 g) package clear mint hard candies
2 1/2 cups semi-sweet chocolate chips
1 (300 ml) can sweetened condensed milk

Steps:

  • Line an 8 inch square pan with waxed paper, using two 15" by 7" strips. Cross one strip over the other, at right angles; so that strips hang equally over all sides of the pan. This makes removal much easier.
  • Unwrap candies and put them in a heavy-duty freezer bag. Smash with a wooden meat mallet or the bottom of a heavy pot until finely crushed.
  • In a 1.5 - 2 L microwave-safe bowl, stir together chocolate chips and condensed milk.
  • Microwave, uncovered, at medium power for 1 minute. Wearing oven mitts, remove bowl from microwave; stir well.
  • Return to microwave and and heat again, uncovered, at medium power for another 1 minute. Remove bowl once again; and stir well until smooth.
  • Measure out 1/4 cup crushed candy, set aside. Pour remaining crushed candy into chocolate mixture and stir well. Using a stiff, heatproof spatula, scrape fudge into prepared pan. Push mixture into all four corners of pan until evenly distibuted, smoothing top with spatula.
  • Sprinkle reserved candy evenly over top, pressing down gently with your hands so it sticks to the fudge. Fold paper over top of the pan. Refrigerate 1-2 hours, until firm.
  • Lift fudge out of pan by grasping edges of waxed paper. Place on a board, and carefully peel off waxed paper. Cut into small squares. Put each square in a paper candy cup. Arrange in festive gift boxes.
  • Can be stored, refrigerated for up to 3 days.

60g cocoa powder, sieved
200g caster sugar
60ml vegetable oil
2 large eggs
180g plain flour
1 tsp baking powder
70g icing sugar

Steps:

  • Mix the cocoa, caster sugar and oil together. Add the eggs one at a time, whisking until fully combined.
  • Stir the flour, baking powder and a pinch of salt together in a separate bowl, then add to the cocoa mixture and mix until a soft dough forms. If it feels soft, transfer to the fridge and chill for 1 hr. Heat the oven to 190C/170C fan/gas 5. Tip the icing sugar into a shallow dish. Form a heaped teaspoon of the dough into a ball, then roll in the sugar to coat. Repeat with the remaining dough, then put, evenly spaced, on a baking tray lined with baking parchment.
  • Bake in the centre of the oven for 10 mins - they will firm up as they cool. Transfer to a wire rack and leave to cool. Will keep for four days in a biscuit tin.

100g butter
750g caster sugar
397g can condensed sweetened milk
150ml whole milk
½ tsp vanilla extract

Steps:

  • Line a 20cm square brownie tin with baking parchment. Put the butter, sugar, condensed milk and whole milk into a pan and heat gently for a few minutes until the butter is fully melted.
  • Turn the heat up and simmer for 20-30 mins, stirring regularly to prevent the mixture sticking to the bottom of the pan, until thick and darker in colour.
  • Remove from the heat and use an electric whisk to beat the mixture for 5 mins. Stir in the vanilla, then tip the mixture into the prepared tin. Level the top and leave to cool completely before cutting into small squares.

Steps:

  • Vanilla Ice Cream with Chocolate Fudge Swirl:.
  • In a mixing bowl, combine heavy cream, evaporated milk and salt. With a stand mixer, beat until stiff peaks form gradually increasing speed to high, as mixture thickens. Slowly drizzle in sweetened condensed milk starting mixer speed at low and gradually increasing it to high. Beat on high speed until stiff peaks form. Add vanilla extract. Beat until it is well blended, maintaining stiff peaks. Spread one-third of the ice cream onto the bottom of a freezer-safe container. Spread half of the fudge swirl over ice cream. Spread one-third of the ice cream over the fudge swirl. Spread half of the fudge swirl over ice cream. Spread remaining one-third ice cream over the fudge swirl. With a knife, gently swirl the ice cream with the fudge swirl back and forth about two times. Cover tightly. Freeze until firm and completely solid, about 8-10 hours.

  • Place heavy whipping cream and semisweet chocolate chips in a double-boiler. Stir until all of the chocolate chips have melted and the mixture is smooth. Cool completely. Store in a tightly covered container in the refrigerator.

125g salted butter, plus extra for the tin
397g can condensed milk
460g light muscovado sugar
150ml whole milk
2 tsp vanilla bean paste

Steps:

  • Butter and line a 20cm square cake tin with baking parchment. Put the butter, condensed milk, sugar and milk in a large saucepan over a low heat. Stir continuously until the sugar dissolves.
  • Increase the heat and bring to the boil. Bubble for 10 mins, stirring all the time until the mixture reaches 115C on a sugar or probe thermometer. Remove from the heat and leave to cool to 110C. Add the vanilla, then beat in a stand mixer or with an electric hand whisk until it cools to 60C. This will help break up any large sugar crystals. The fudge should be thick and matte-looking.
  • Spoon the fudge into the prepared tin and press down with a spoon to smooth the surface. Leave to set, then cut into squares. Will keep for up to three weeks in an airtight container.
