Yield Makes 10 drinks

Number Of Ingredients 6

3/4 cup water
1/2 cup sliced fresh ginger (2 ounces)
3/4 cup sugar, divided
1 tablespoon finely chopped crystallized ginger
2 lemon wedges
2 (750-ml) bottles chilled Prosecco

Steps:

  • Simmer water, fresh ginger, and 1/2 cup sugar in a small saucepan, uncovered, 10 minutes. Remove from heat and let steep 15 minutes. Strain syrup through a sieve into a bowl, discarding solids. Chill until cold.
  • Finely grind crystallized ginger with remaining 1/4 cup sugar in a blender or food processor, then spread on a small plate.
  • Run lemon wedges around rims of glasses, then dip rims into ginger sugar. Put 1 tablespoon syrup into each glass and top off with Prosecco.

1 (89 ounce) bottle orange juice
1 (46 ounce) can pineapple juice, chilled
1 (89 ounce) bottle orange juice
1 (2 liter) bottle ginger ale, chilled
1 (46 ounce) can pineapple juice, chilled

Steps:

  • COCKTAIL:.
  • Place 1 tablespoon finely grated ginger in a piece of cheesecloth, and squeeze juice from ginger into a large pitcher; discard cheesecloth and solids.
  • Stir 2 bottles sparkling wine, 1 container orange juice, and 1 can chilled pineapple juice into ginger juice.
  • Serve over ice, with orange slices and fresh mint sprigs for garnish.
  • MOCKTAIL:.
  • In a large pitcher, stir together 1 container orange juice, 1 bottle chilled ginger ale, and 1 can chilled pineapple juice.

2 teaspoons finely grated peeled fresh ginger
1/2 cup sugar
1 bottle (750 ml) dry sparkling wine, such as Cava, Prosecco, or Champagne

Steps:

  • Set a fine-mesh sieve over a small bowl; set aside. In a small saucepan, boil ginger, sugar, and 1/4 cup water until syrupy, about 2 minutes. Pour through sieve into bowl, discarding solids. (To store syrup, refrigerate in an airtight container, up to 1 week.)
  • Pour 1 tablespoon syrup into each of 8 tall glasses. Top with sparkling wine, and gently stir.
