SPANISH CHICKEN AND RICE SOUP

Spanish Chicken and Rice Soup image

Provided by Rachael Ray : Food Network

Time 2h5m

Yield 4 servings

Number Of Ingredients 20

2 tablespoons butter
1/4 cup broken vermicelli or thin spaghetti, 1 inch pieces
1/2 cup long-grain white rice
1 quart chicken stock
2 pieces boneless, skinless chicken breast, rinsed
1 small white or yellow onion, peeled and halved
2 tablespoons fresh flat-leaf parsley leaves, finely chopped
2 fresh bay leaves
1 tablespoon extra-virgin olive oil
5 ounces Spanish chorizo, chopped or crumbled, casing removed (recommended: Gaspar's or Trois Petit Cochons)
1 large Spanish yellow onion, chopped
2 carrots, peeled and chopped
Few ribs celery from the heart, chopped
1 red chile pepper, thinly sliced
4 cloves garlic, chopped or very thinly sliced
1/4 to 1/3 cup diced piquillo pepper or drained pimiento peppers
Salt and freshly ground black pepper
Pinch saffron threads (about 20)
1 1/2 teaspoons smoked sweet or sweet paprika
1 (15-ounce) can fire-roasted diced or crushed tomatoes or 1 (15-ounce) can diced tomatoes with green chilies

Steps:

  • Place the butter in a small pot over medium heat. Melt the butter and toast the pasta 2 to 3 minutes or until golden in color, add the rice and stir to coat. Add 1 cup stock to the pot and bring the mixture to a bubble, reduce the heat to low, cover the pot and cook 15 minutes. Stir in parsley; turn off the heat and cover. Let stand to cool. Fluff the rice with a fork then place in container and store in the refrigerator.
  • Meanwhile, place the rinsed trimmed chicken pieces in a shallow pan with the onion and bay leaves and cover with just enough water to come up to the top of the chicken, bring the mixture to a boil and reduce the heat to a simmer and gently poach to cook through, about 12 to 15 minutes. Place the chicken in a bowl and shred the meat with 2 forks. Reserve the stock.
  • While the chicken poaches start the soup by heating a Dutch oven over medium-high heat with a turn of the pan extra-virgin olive oil, add the chorizo and brown a couple of minutes. Add the onions, carrot, celery, chile, garlic, and piquillos to the pot and season with a little salt and some black pepper. Cook for 7 to 8 minutes to soften, then stir in the saffron threads and paprika to combine. Strain the chicken cooking liquids, about 2 cups, into the pot then add 3 cups stock-in-a-box, chicken, chorizo, and tomatoes. Bring the soup to a bubble, simmer a few minutes to combine flavors then cool completely, cover and place in the refrigerator for make-ahead meal.
  • To reheat and serve, place the soup over medium to medium-high heat covered, stirring occasionally until heated through. Add the rice to the soup and return the soup to a bubble. Serve in shallow bowls.

Time 7h40m

Yield 10 or more main-course servings; 24 appetizer servings

Number Of Ingredients 19

6 pounds fresh beef tripe, trimmed of all fat
3 pigs' feet, each about three-quarter pounds and split in half lengthwise
12 cups water
2 cups dry white wine
6 cups finely chopped onions
5 tablespoons finely minced garlic
6 bay leaves
10 sprigs parsley, tied into a bundle
3 large tomatoes, about two and one-quarter pounds, cut into one-inch cubes, about six cups
10 peppercorns, lightly crushed
1/4 teaspoon freshly grated nutmeg
1 teaspoon dried thyme
Salt to taste, if desired
6 tablespoons olive oil
1 pound Spanish sausages (chorizos), cut into one-quarter-inch rounds
1/2 pound cured ham, diced
6 tablespoons flour
6 tablespoons paprika
1 teaspoon dried hot red-pepper flakes

Steps:

  • Put the tripe and pigs' feet in a kettle and add cold water to cover. Bring to the boil and drain immediately.
  • Cut the tripe into one-and-one-half-inch squares and put it in a clean kettle. Add the pigs' feet, the water, wine, half of the chopped onions, garlic, bay leaves, parsley sprigs, tomatoes, peppercorns, nutmeg, thyme and salt. Bring to the boil and cover. Let simmer four or five hours.
  • Heat the oil in a heavy skillet and add the remaining onions. Cook, stirring, until they are wilted. Add the sausage and ham and cook, stirring, about five minutes. Stir in the flour and paprika and cook about one minute.
  • Add three cups of the liquid from the tripe and stir until the mixture thickens. Add the sausage mixture to the tripe. Add the pepper flakes and stir. Cover. Cook until the tripe is tender, about one or two hours. Stir the tripe often from the bottom to prevent sticking. Uncover and continue cooking one or two hours, or until the tripe is extremely tender. Skim off most of the fat from the surface of the tripe.
  • Remove the pigs' feet from the tripe. Cut the skin from the bones. Discard the bones. Cut the skin into thin (julienne) strips. Return the skin to the tripe.

PUERTO RICAN MONDONGO

Puerto Rican Mondongo image

This simple, nourishing stew of tripe and vegetables is found in innumerable variations throughout Latin America and around the Caribbean. On the islands of Aruba and Curaçao, it is known as sopi mondongo. Cooking Puerto Rican food is a bit similar to Island and Spain cuisine; it has a distinctive flavor combined with foreign influences using native seasonings and ingredients. Serve in deep bowls with white rice and avocados.

FLACZKY - POLISH TRIPE SOUP W MARJORAM

Flaczky - Polish Tripe Soup W Marjoram image

This is my mother's recipe. I havent seen this anywhere else. This is a work in progress, figuring out the exact measurements of all the spices. I like making this in bulk, you can definately reduce the ratios

Provided by ben.baxter

Categories     Beef Organ Meats

Time 2h15m

Yield 12 serving(s)

Number Of Ingredients 13

2 large onions
2 stalks celery, halved
2 large carrots, sliced
3 lbs tripe
2 tablespoons maggi seasoning (optional)
2 teaspoons whole black peppercorns
2 teaspoons whole allspice
1 tablespoon marjoram
1/2 teaspoon salt
1 teaspoon ground nutmeg
1/2 teaspoon paprika
2 bay leaves
1/3 cup flour

Steps:

  • wash tripe, cut in 1/3in strips, no more than 3in long.
  • in large soup pot, saute whole onion, celery and carrot until golden.
  • add tripe, and 6-7c water, enough to cover.
  • add maggi (optional), salt, marjoram, nutmeg, paprika, bay leaf, pepper and allspice. I reccomend putting your whole pepper and allspice in either a tea ball, or in cheese cloth, otherwise this soup gets difficult to eat when you have to pick out the spices.
  • cook for 1-2 hours until trip is tender, not soft and mushy.
  • make a roux. Fry 1/3c flour over high heat until it turns light brown. Take some liquid out of the soup, mix the roux into that liquid, and add the mixture back.
  • Serve with rye bread.
