BUTTER BEAN AND CHORIZO STEW

A deliciously warming and moreish stew, made with butter beans and chorizo. It's surprisingly low in calories but packed with flavour. For something similar, see this stew idea with pancetta, chorizo and butter beans.

180g dried butter beans
1 tbsp extra-virgin olive oil
250g raw chorizo sausage (from delis), cut into 5mm-thick diagonal slices
1 onion, roughly chopped
3 garlic cloves, roughly chopped
1 red chilli, deseeded and finely chopped
400g can chopped tomatoes
500ml chicken stock, hot
Few sprigs of fresh thyme
Grated zest of 1 lemon

Steps:

  • Soak the butter beans in a bowl of water overnight.
  • The next day, place the beans in a saucepan and cover with plenty of fresh water. Bring to the boil and simmer rapidly for 1 hour until just tender. Drain.
  • Meanwhile, heat the olive oil in an ovenproof casserole dish and fry the raw chorizo for 2-3 minutes until starting to brown. Remove from the pan with a slotted spoon and set aside. Add the onion, garlic and chilli to the pan and cook for 5 minutes, stirring, until the onion is beginning to soften.
  • Add the chopped tomatoes, stock, thyme and lemon zest and add the chorizo and beans to the casserole. Mix well, bring to the boil and simmer, partially covered, for 1¼ hours or until the sauce is thick and the beans are meltingly tender. Check the seasoning and discard the thyme sprigs.
  • Serve with crusty bread and salad.

This Chorizo and Butter Bean Stew is a taste of Spain - full of chorizo, red wine, butter beans, tomatoes, red pepper and onion.

1 tbsp olive oil
200g chorizo, sliced
1 red pepper, chopped
1 red onion, chopped
2 garlic cloves, minced
1 400g tin butter beans, liquid drained
300ml red wine
1 400g tin chopped tomatoes
250mls stock
2 bay leaves
Salt & pepper to taste

Steps:

  • Heat the oil over a medium heat in a casserole pot or frying pan, then fry the chorizo in the pan for 3-5 minutes until it is crispy.
  • Add the onion and red pepper to the pan and sauté for 5 minutes until the vegetables have taken on some colour and have softened.
  • Add the garlic and butter beans and sauté for one minute.
  • Pour the red wine into the dish, bring to a boil and cook for 5 minutes until the liquid has reduced by half.
  • Mix in the tinned tomatoes, stock and bay leaves and leave the dish to simmer on a medium-low heat for 25-30 minutes.
  • When the stew has thickened, taste it and add salt and pepper as required.
  • Serve the stew in bowls with salad and some slices of crusty bread to dunk. Enjoy!

200g cooking chorizo
2 x 400g cans chopped tomatoes
2 x 400g cans drained butter beans
1 tub fresh pesto

Steps:

  • Slice the chorizo and tip into a large saucepan over a medium heat. Fry gently for 5 mins or until starting to turn dark brown. Add the tomatoes and butter beans, bring to the boil, then simmer for 10 mins. Swirl through the pesto, season lightly and ladle into four bowls.

200g chorizo sausage, thickly sliced
1 onion , chopped
400g/14oz chicken thigh fillets, cubed
1 tomato , roughly chopped
410g can cannellini bean , drained
1 large potato , cut into small cubes
500ml hot chicken stock
4 tbsp chopped parsley

Steps:

  • Heat the oil in a large pan. Cook the chorizo, onion and chicken over a high heat for 5 mins. Add the tomato and cook for a further 2-3 mins until pulpy.
  • Stir in the beans, potato and stock. Bring to the boil, then cover and gently simmer for 20 mins until the potato is soft and the chicken cooked through. Stir through the parsley and serve. You can cool and freeze the stew for up to 2 months. To serve, defrost and heat through thoroughly.

350g lean pork mince
2 tsp olive oil
1 large red onion, chopped
2 peppers, sliced, any colour will do
3 garlic cloves, crushed
1 tbsp sweet smoked paprika
2 x 400g cans chopped tomatoes
400g can butter beans, drained
2 tsp golden caster sugar
small bunch parsley, chopped
crusty bread, to serve (optional)

Steps:

  • Season the pork, working the seasoning in with your hands, then shape into small meatballs. Heat the oil in a large pan, add the meatballs and cook for 5 mins, until golden brown all over. Push to one side of the pan and add the onion and peppers. Cook for a further 5 mins, stirring now and then, until the veg has softened, then stir in the garlic and paprika. Stir everything around in the pan for 1 min, then add the tomatoes. Cover with a lid and simmer for 10 mins.
  • Uncover, stir in the beans, the sugar and some seasoning, then simmer for a further 10 mins, uncovered. Just before serving, stir in the parsley. Serve with crusty bread for dunking, if you like.

  • Fill a pot halfway with water; bring to a boil over high heat. Add the pancetta, chorizo and ham hock; simmer over moderate heat for 5 minutes. Drain the meat and return to the pot. Add the stock, beans and bouquet garni and bring to a boil over high heat; skim off any foam. Cover partially and simmer over low heat until the beans are just tender, about 1 hour.
  • Meanwhile, in a small heatproof bowl, mix the saffron with the boiling water until dissolved. Grate the tomato halves on the large holes of a box grater set in a bowl until only the skins remain; discard the skins.
  • In a medium skillet, heat the olive oil until shimmering. Add the onion and a pinch of salt and cook over moderate heat, stirring occasionally, until softened, about 8 minutes. Add the pimentón and cook, stirring, until the onion is coated, about 1 minute. Add the grated tomato and simmer until reduced by half, 3 to 5 minutes. Stir the onion mixture into the pot of beans along with the brewed saffron and the blood sausage. Simmer uncovered until the beans are very tender but not falling apart, about 30 minutes.
  • Transfer the meats to a carving board and let rest for 5 minutes, then cut into bite-size pieces. Discard the ham bone and bouquet garni. Return the meats to the pot and season with salt and pepper. Transfer the fabada to bowls and serve.
