BAKED SPINACH & FETA PASTA
Feta softens in the oven before it's combined with spinach and pasta, with the pasta cooking right in the baking dish. Enjoy this one-pan dish on its own as a vegetarian main or serve with sautéed chicken breast for a boost of protein.

Steps:
- Preheat oven to 400°F.
- Place feta in the center of a 9-by-13-inch baking dish. Bake until softened and starting to brown, about 15 minutes.
- Meanwhile, combine spinach, oil, garlic, dill, salt and pepper in a large bowl. Use your hands to massage the spinach until it's reduced in volume by half. Stir in pasta.
- After the feta has baked for 15 minutes, add the spinach and pasta mixture to the baking dish. Pour boiling water over the mixture and gently stir. Cover with foil and bake until the pasta is tender, about 18 minutes. Remove from the oven and stir. Cover and let stand for at least 3 minutes before serving.

SPINACH AND FETA BAKED PASTA

Steps:
- Pre-heat oven to 375 degrees F. Start by cooking your pasta. Cook according to package directions and drain. Add the spinach leaves into the empty pasta cooking pot and then poor the hot pasta right on top of the spinach. Give it a stir to make sure the heat from the pasta gets to all the spinach. That should help wilt the spinach and break it down.
- Next, pour in the pasta sauce, feta cheese (make sure to leave a little for topping) and 1 cup of mozzarella cheese. Stir to make sure all the ingredients are evenly distributed and then pour pasta into a large baking dish (9×13). Top your pasta with another small handful of feta cheese and remaining 1/2 cup mozzarella and then cover pasta bake with aluminum foil.
- Place baked feta pasta in the oven and bake until you can hear the sauce bubbling, 20-25 minutes. Remove the foil and bake for another 5 minutes or so, until the cheese on top is melted.

Steps:
- Heat margarine in a skillet.
- Saute shallots and garlic for 4 minutes in the margarine.
- Stir while doing so.
- Add flour.
- Cook for 1 minute on low flame.
- Add milk and remove from heat.
- Keep aside.
- Squeeze out the water from the spinach and chop.
- Add spinach, cheese, bell pepper, salt and pepper to taste to the cooked sauce.
- Re-heat on low heat.
- Stir well for a minute.
- Remove from heat.
- Garnish with parsley.

- Melt the butter with the oil in a large pan, tip in the leeks and splash in a little hot water. Cover and cook over a low heat, stirring occasionally, for about 10 minutes until no longer squeaky.
- While the leeks are cooking, boil the penne in salted water according to the packet instructions. Meanwhile, tip the crème fraîche, sundried tomatoes and mustard into the leeks, add three-quarters of the cheese and season well. Stir until the cheese melts. Take off the heat.

- Bring 2 quarts of water to boil in a large pot.
- Meanwhile, heat the olive oil over medium heat in a large skillet or shallow saucepan. Add onions and cook for 5 minutes to soften, stirring to prevent browning. Add the garlic, diced tomatoes, and oregano. Cook for about 10 minutes and add the chopped spinach. Cook for another 5-10 minutes until the spinach has softened and the flavors developed. Add salt & pepper to taste.
- When the sauce is nearly done (about the time you add the spinach), cook the linguine according to the package directions.
- Drain the pasta and place servings on individual plates. Spoon sauce on top. Sprinkle with feta and serve immediately.

- Have prepared spinach ready next to stove. Melt the butter in a wide saucepan. Whisk in the flour and cook, stirring constantly (don't let it brown).

SPINACH AND FETA PASTA
An all time favorite of mine, I got this recipe from Allrecipes posted by Suki. It's fast and easy to make and tastes fantastic. Crusty rolls for mopping up the juices is all that's needed to finish the meal. I use lots more of the red pepper flakes to add zing and probably more feta as well since it's my favorite cheese. It's a real filling dinner for those nights when we want to eat vegetarian and DH requests this one frequently.
