Spaghetti with green beans image

A delicious and healthy green bean pasta recipe from Puglia in Southern Italy, this spaghetti with green beans is easy to make and great way to get kids to eat veggies. You can serve the bean sauce as a side dish without pasta too.

400 g fresh green beans 14oz
400 g spaghetti 14oz
250 g ripe fresh tomatoes 9oz (cut into quarters)
200 g tomato passata 9oz (less or omit if serving without pasta)
1 garlic clove (peeled)
1 fresh or dried red chilli pepper/ peperocino (optional)
1 red onion
2 tbsp extra virgin olive oil
cacioricotta or pecorino cheese (grated)
salt (for pasta water and to taste)
black pepper (to taste)

Steps:

  • Wash the green beans and cut off the thinner parts at each end. Peel and slice the onion very finely. Cut the tomatoes into halves or quarters depending on how big they are.
  • Pour the oil into a large frying pan or skillet, heat it and fry the garlic clove, onion and whole peperoncino until the onion starts to soften. Then add the tomato pieces and cook until they start to soften too.
  • In the meantime, in a pot with plenty of salted water, partly cook the green beans for a few minutes. Drain the beans and add them to the pan with the onion and tomatoes.
  • Continue cooking for 5 minutes then add the tomato passata and mix everything together. Simmer for 10-15 minutes. Add salt and pepper to taste.
  • When the sauce is almost ready, cook the pasta in plenty of boiling salted water according to the instructions on the packet. I used the water I cooked the beans in. If you are using fresh pasta the cooking time will be very short.
  • Remove the garlic clove and red chilli pepper from the sauce. Drain the pasta and add it to the green beans and tomato sauce.
  • Add a generous sprinkling of grated cacioricotta and mix well. I also added a handful of chopped fresh parsley or you can use basil. (both are optional)
  • Serve with more grated cacioricotta or pecorino sprinkled on top.

500 grams green beans ((just over 1 lb) ends trimmed and rinsed)
450 grams spaghetti
1/3 cup extra virgin olive oil (plus extra for drizzling)
3 large garlic cloves (finely minced)
pinch red pepper flakes (optional)
salt and pepper (to taste)
grated Parmesan or Pecorino Romano cheese ((for serving) as much as you like! )

Steps:

  • Bring a large pot of salted water to a boil and add your spaghetti. Cook until al dente, according to the manufacturers suggested cooking time.
  • In the last 5 minutes of cooking add the green beans. They should be done at the same time as the spaghetti and be fork tender.
  • Meanwhile, in a large enough skillet to hold the pasta, heat olive oil on medium high heat. Add minced garlic and red pepper flakes. Cook for 1 minute. Do not burn the garlic!
  • When the pasta and green beans are ready, drain and add to the skillet. Toss with the garlicky oil to coat. Stir in extra olive oil, as needed, if the pasta is dry. Add black pepper, if desired.
  • Serve immediately with plenty of grated cheese at the table!

500 grams Spaghetti
300 grams green Beans
400 grams tomatoes
1 garlic clove
1 bunch Basil
2 Tbsps Tomato paste
100 grams Parmesan (freshly grated)
5 Tbsps olive oil
salt
freshly ground peppers

Steps:

  • Blanch the tomatoes, peel, quarter, core and cut into cubes.
  • Peel and chop the garlic. Rinse and shake dry the basil leaves, pluck into small pieces and coarsely chop (set aside some basil leaves and 2-3 tablespoons of diced tomato for garnish). Purée everything with the tomato paste, then stir in half of the parmesan and the olive oil. Season with salt and pepper.
  • Rinse the beans, cut off ends and cook with the pasta in plenty of boiling salted water for about 8 minutes, or until al dente.
  • Drain pasta and beans and serve with the tomato pesto on warmed plates. Sprinkle on the remaining tomatoes and parmesan and garnish with basil.

1 pound Chinese long beans (or green beans), trimmed
3 tablespoons extra-virgin olive oil
2 cloves garlic, minced
1 14.5-ounce can cherry tomatoes
3 fresh basil leaves, torn
Freshly ground pepper
1/2 cup shaved ricotta salata cheese (about 2 ounces)

Steps:

  • Bring a large pot of salted water to a boil. Add the beans and cook until tender, about 2 minutes. Drain and dry well with paper towels.
  • Heat 2 tablespoons olive oil and the garlic in a medium saucepan over medium heat, stirring, until the garlic just starts browning, about 2 minutes. Stir in the tomatoes, basil, 1 teaspoon salt and 1/4 teaspoon pepper. Reduce the heat to low and bring to a low simmer. Cook, stirring, until the tomatoes start breaking down, 15 to 20 minutes.
  • Heat the remaining 1 tablespoon olive oil in a large skillet over medium-high heat. Add the beans and stir-fry until slightly browned and hot, 1 to 1 1/2 minutes; season with salt and pepper. Transfer to a platter and top with the tomatoes and ricotta salata. Season with more pepper.

2 tablespoons olive oil
1 shallot, chopped
8 ounces green beans, trimmed and cut in 1-inch pieces

1/2 cup freshly grated Parmesan
1/3 cup store-bought pesto
1/2 cup ricotta cheese, such as Calabro

Steps:

  • Bring a large pot of water to a boil over high heat. Sprinkle generously with salt. Add the pasta and cook 1 minute less than the package instructions, about 5 minutes. Drain well, reserving 1/3 cup of pasta water.
  • Meanwhile, heat a large skillet over medium-high heat. Add the oil and shallots with 1/2 teaspoon salt and cook for 1 minute. Add the green beans and another 1/2 teaspoon salt. Cook, stirring often, until the beans are just cooked through, about 4 minutes. Stir in the peas and cook another minute to warm through. 18 cherrystone clams, shucked, with clam juice reserved, about 2 cups
1 pound green beans
12 cups water
Salt to taste
1 pound imported spaghetti
2 tablespoons olive oil
1 tablespoon finely chopped garlic
5 ripe plum tomatoes, about 1 pound, cut into 1/2-inch cubes
1/8 teaspoon red hot-pepper flakes
1/3 cup Absolut lemon vodka or regular vodka flavored with the juice of 1/2 lemon, optional
1/3 cup heavy cream
Freshly ground pepper to taste
1/2 cup coarsely chopped fresh basil leaves or 1/2 cup chopped Italian parsley
Freshly grated peccorino or Parmesan cheese, optional

Steps:

  • Chop the clams coarsely; there should be about 1 cup.
  • Trim or break off the ends of the beans and remove the strings. Cut the beans into 2-inch lengths.
  • Bring the water, salted to taste, to a boil in a kettle and add the green beans. Bring to a simmer and cook for 6 to 7 minutes. Do not overcook; the beans should remain crisp. Drain and reserve the cooking liquid.
  • Bring the reserved cooking liquid to a boil. Add the spaghetti, stir and cook for about 6 minutes. Drain.
  • Meanwhile, heat the oil in a large skillet. Add the garlic and cook briefly, stirring, without browning. Add the tomatoes, pepper flakes and the reserved clam juice. Cook, stirring, over medium heat until the liquid has been reduced to about 2 cups.
  • Add the drained spaghetti, beans, vodka, if desired, cream and freshly ground pepper. Bring to a simmer. Cook until the spaghetti is al dente, stirring, and add the clams and basil. Toss and cook 1 minute. Serve immediately with peccorino or Parmesan cheese, if desired.

Turn heat to low and add 1/2 cup of the reserved pasta water to the skillet (be careful of splattering) and cook until it is reduced by about half, 1 to 2 minutes more. Turn heat to medium and add the pasta, green beans and butter to the skillet and toss until the butter melts. Add the cheese and an additional 1/4 cup water and toss until the cheese is emulsified and the pasta is glossy with sauce. If needed, add an additional 1/4 cup pasta water to loosen. Season with kosher salt, to taste.
  • Transfer the pasta to a large bowl, top with gremolata and drizzle with more olive oil. Pass additional grated cheese at the table, if desired.

1 lb spaghetti
1 (14 1/2 ounce) can of campbell's vegetarian baked beans or 1 (14 1/2 ounce) can pork and beans
2 (8 ounce) cans tomato sauce
1 small onion, sliced
1 1/2 cups water

Steps:

  • In a medium sauce pan heat the oil.
  • Saute the onion till soft.
  • Add the 2 cans of tomato sauce, the beans and the water.
  • Simmer 10 minutes.
  • Cook spaghetti according to directions.
  • Drain (leave a bit wet) and put in large bowl.
  • Top with bean sauce.
  • Let sit a few minutes before serving.
  • Add parmesan cheese.
  • Serve with a salad and crusty bread.
