SPAGHETTI SQUASH WITH GARLIC, PARSLEY AND BREADCRUMBS
Spaghetti squash gets its name from the fact that once it is cooked, the flesh breaks down into long spaghettilike strands. I find spaghetti squash a bit dull on its own, as it does not have the sweetness and depth of many other winter squash. But it is hard to resist substituting spaghetti squash for pasta every once in a while, and the squash will pick up other robust flavors in the dish. Most spaghetti squash are pretty large; you will need only half of a 3 to 3 1/2-pound squash for this recipe. You can toss the leftovers with tomato sauce the next day.

- Preheat the oven to 375 degrees. Pierce the squash in several places with a sharp knife. Cover a baking sheet with foil, and place the squash on top. Bake for one hour, until the squash is soft and easy to cut with a knife. Remove from the heat, and allow to cool until you can handle it. Cut in half lengthwise, and allow to cool some more. Remove the seeds and discard. Scoop out the flesh from half of the squash, and place in a bowl. Run a fork through the flesh to separate the spaghettilike strands. You should have about 4 cups of squash. (Use some squash from the other half if necessary). Set aside the other half for another dish.
- Heat the oil in a large, heavy nonstick skillet over medium heat, and add the garlic and bread crumbs. When they begin to sizzle and smell fragrant and the breadcrumbs are crisp - that is, after about a minute - stir in the squash and parsley, and season to taste with salt and pepper. Toss together over medium heat until the squash is infused with the garlic and oil and heated through, 6 to 8 minutes. Remove to a warm serving dish, top with freshly grated Parmesan and serve.
SPAGHETTI WITH GARLIC, PARSLEY AND BREAD CRUMBS

- 1. Crisp the bread crumbs in a non-stick skillet with 1 tablespoon olive oil or so. 2. Cook the spaghetti in plenty of salted boiling water. Meanwhile, warm the oil with the garlic and pepper flakes in a wide skillet over medium heat. As soon as the garlic begins to color, remove the pan from the heat. 3. Drain the spaghetti, shaking off the excess water, and put it in a warmed pasta bowl. Pour the oil mixture over the top and toss with the parsley and cheese. Taste for salt, season with pepper, and serve with the bread crumbs scattered on top.
PASTA WITH BREAD CRUMBS, CHEESE, GARLIC AND RED PEPPER FLAKES
This is a delicious, fast and easy dish to prepare. The key is to have everything prepped, because it comes together really fast. Cut back on the red pepper flakes if you don't like things too hot but do add at least a pinch.

- Boil a large pot of water, add lots of salt, cook the pasta until al dente, reserve 1/2 cup of the pasta water and drain.
- While waiting for the water to boil, mince the garlic, chop the basil and parsley and grate the cheese.
- While the pasta is cooking, heat the olive oil to medium low in a large, deep skillet and sauté the garlic and red pepper flakes for about 8 minutes (do not let the garlic brown, it should be golden).
- Take 1/2 cups of cooked pasta water and add it to the garlic mixture.
- Drain the pasta, add it and the chopped herbs to the garlic mixture and toss well.
- Place the pasta in a large serving bowl and add the grated cheese and bread crumbs.
- Toss well and adjust to your taste. You might like to add a little more olive oil, red pepper, salt or pepper.
- Enjoy!

PASTA WITH CAPERS, GARLIC, AND BREAD CRUMBS

- Fill a 6-quart kettle three fourths full with salted water and bring to a boil for pasta. Cut crust from bread and, using large holes of a hand grater, grate enough bread to measure 2/3 cup. Finely chop separately capers and garlic.
- Boil pasta until al dente.
- While pasta is cooking, in a large heavy skillet cook garlic in oil over moderate heat, stirring, just until pale golden, about 2 minutes. Stir in capers, parsley, and bread crumbs and cook, stirring, until bread crumbs and garlic are golden, 1 to 2 minutes.
- Drain pasta in a colander and transfer to a heated large bowl. Pour sauce over pasta and toss to combine.
- Serve pasta with Parmesan.

- Bring a large saucepan three-fourths full of water to a boil. Add the green beans and salt and cook until the beans are almost tender, about 5 minutes. the timing will depend on thr thickness of the bean.
- Drain the beans and rinse under cold running water to hault the cooking. Drain well and pat dry with paper towels.
- In a large frying pan over medium heat, saute the garlic and parsley in the olive oil until the garlic is fragrant, about 1 minute. Add the crumbs and cook, stirring until crunchy and browned, about 3 minutes. Add the green beans and stir until they are hot and coated with the crumbs, just a few minutes.

- Place the bread in the bowl of a food processor and process until coarse breadcrumbs form.
- Use a zester to remove the rind from the lemon. (Alternatively, use a vegetable peeler to peel rind from lemon. Use a small, sharp knife to remove white pith from rind. Cut rind into very thin strips.) Juice the lemon.
- Heat 2 tablespoons of the oil in a frying pan over medium heat. Add breadcrumbs and cook, stirring continuously, for 2-3 minutes or until breadcrumbs are golden and crisp. Transfer to a plate.
- Heat the remaining oil in the pan over medium heat. Add the garlic, chilli and anchovies and cook, stirring, for 1 minute or until aromatic. Add lemon rind, juice and parsley leaves. Remove from heat.
- Meanwhile, cook the spaghetti in a large saucepan following packet directions until al dente. Drain well.
- Add the spaghetti to the garlic mixture and toss to coat. Add half the breadcrumbs and toss to coat.
- Spoon evenly among serving bowls. Sprinkle with remaining crumbs and serve immediately.

PASTA WITH GARLIC OIL AND TOASTED BREAD CRUMBS
This recipe was in a 2000 Chef's Illustrated magazine. It's different than most pasta recipes with garlic oil, and so yummy! It takes a little longer to prepare, but it's worth it. Don't be afraid to toast the crumbs until dark brown. The crunchier the better!

- Adjust oven rack to middle position, place large oven-safe serving bowl on rack, and heat oven to 200 degrees. Prepare pasta according to directions on package, reserving 1/2 cup pasta cooking water before draining.
- Heat butter in heavy-bottomed 10-inch skillet over medium-high heat until foaming. Add bread crumbs and cook, stirring frequently, until golden brown, toasted, and fragrant, 2 to 3 minutes. Transfer crumbs to small bowl and mix in cheese and 1/2 teaspoon minced garlic; set aside. Wipe out now-empty skillet with large wad of paper towels.
- Mix remaining minced garlic with 1 teaspoon water. Heat olive oil, garlic, and pepper flakes in cleaned skillet over medium heat until fragrant, about 2 minutes. Add vermouth, reserved pasta cooking water, remaining 1 teaspoon salt, and pepper to taste; cook to blend flavors, about 1 minute longer.
