Peanut (Or Peanut Butter) Ginger Chicken image

Delicious flavorful chicken dish that is as fast and easy to make as it is tasty! All amounts are approximate and can be tweaked to suit your tastes, I typically make a little more of the sauce. This recipe is originally from Jaylene at Nibbledish.com, I've changed the amounts to what I use for a family of 4.

1 1/2-2 lbs chicken breasts
4 tablespoons peanut butter (Creamy or Chunky)
3 tablespoons soy sauce
3 tablespoons white vinegar
3 tablespoons brown sugar
1 tablespoon olive oil, plus some (for cooking)
3 -4 garlic cloves
2 tablespoons ginger
salt and pepper
water (optional)
parsley flakes (optional) or fresh parsley (optional)
sesame seeds (optional)

Steps:

  • In a bowl, prepare the peanut butter sauce. Add the peanut butter, soy sauce, vinegar, brown sugar and 2 Tbs. olive oil together and stir until you form a smooth paste.
  • Dice garlic and ginger as fine as you can get them, I use a grater with small holes and grate my garlic so that there are no large chunks for those that don't care to bite into a large piece of garlic.
  • Cube your chicken into small bite sized pieces or cut into small strips if you prefer.
  • In a pan, heat up some olive oil (I usually use about 2 Tbs.) add the garlic and ginger and cook until fragrant, about 30 seconds depending on how hot you got the olive oil. Then add the chicken, season to your taste with salt and pepper, and cook until completely cooked through.
  • Add the sauce mixture and stir to coat all of the chicken. Reduce heat to a medium low and cook for an additional 5 to 10 minutes stirring frequently. If the sauce starts to become too think or clumps together add small amounts of water and stir to keep a nice consistency. The sauce should coat the chicken without being soupy.
  • Remove the pan from heat and serve the chicken over rice. Garnish with parsley or sesame seeds if you wish.

I love making a double batch of this sauce and keeping it in the door of the fridge for a day when I need something tasty in a pinch. Don't like spice? Simply omit the hot sauce and the red pepper flakes. You can also sub thinly sliced lean beef for the chicken or just make it a stir-fry with all vegetables...

1/2 cup smooth peanut butter
1/4 cup low-sodium soy sauce
1/4 cup apple cider vinegar
1 tablespoon honey
1 tablespoon hot sauce
1 tablespoon sesame oil
1 knob ginger, grated (to equal about 1 tablespoon)
5 large cloves garlic, grated
1 pound boneless, skinless chicken breasts, cut into 1/4-inch-thick strips
Kosher salt
1/4 teaspoon red pepper flakes
3 tablespoons canola oil
12 to 15 small red radishes, quartered, plus 1 loose cup radish greens, coarsely chopped
1 large red bell pepper, cored, seeded and cut into 1/2-inch-thick strips
1 cup frozen peas
Zest and juice from 1 small lime

Steps:

  • In a large bowl, whisk the peanut butter with the soy sauce, vinegar, honey, hot sauce, sesame oil, ginger, two-thirds of the garlic and 2 tablespoons warm water until smooth. (If the sauce is too thick, thin with a little more warm water.) Set aside.
  • Arrange the pieces of chicken on a baking sheet in a single layer. Sprinkle on one side with salt and the red pepper flakes. Turn the pieces on their other side and sprinkle again with salt.
  • Heat a large heavy-bottomed skillet over high heat. Add half of the oil and heat until it begins to smoke. Remove the skillet from the heat and quickly add half of the chicken pieces in a single layer. Return the pan to high heat and cook, stirring from time to time, until the chicken is fully cooked, 3 to 5 minutes. Drain and repeat with the remaining oil and chicken.
  • In the same skillet, stir in the remaining garlic, radishes, radish greens and peppers and season with salt. Mix so the radish greens wilt. Stir in the peanut sauce and simmer for an additional minute. Taste for seasoning. Stir in the peas and the chicken. Turn off the heat and let rest a couple of minutes on the stove. Top with a few grates of lime zest and the juice.

8 large boneless, skinless chicken breast halves
MARINADE:
1 tablespoon brown sugar
2 tablespoons Jif® Extra Crunchy Peanut Butter
1/4 cup Crisco® Pure Canola Oil
1/2 cup soy sauce
1/3 cup fresh lime juice
2 large cloves garlic, minced
1/2 teaspoon cayenne pepper
1/2 teaspoon salt
PEANUT SAUCE:
1 cup Jif® Extra Crunchy Peanut Butter
1 cup unsweetened coconut milk
1/4 cup fresh lime juice
3 tablespoons soy sauce
2 tablespoons dark brown sugar
2 teaspoons finely minced fresh gingeroot
2 cloves garlic, minced
1/4 teaspoon cayenne pepper, or to taste
1/2 cup chicken stock
1/2 cup heavy cream
Chopped fresh cilantro, for garnish

Steps:

  • WASH, trim and pound chicken to flatten to a consistent thickness.
  • MIX brown sugar, peanut butter, oil, soy sauce, lime juice, garlic, cayenne pepper and salt in a small bowl to make marinade.
  • PLACE chicken in a shallow dish (or food storage bag). Cover with marinade. Marinate 1 hour at room temperature or as long as overnight in refrigerator.
  • When ready to cook: HEAT grill. Combine peanut butter, coconut milk, lime juice, soy sauce, dark brown sugar, ginger, garlic and cayenne in a heavy saucepan to make peanut sauce. Cook over medium heat, stirring constantly, about 15 minutes or until thickened. Whisk in chicken stock and cream. Cook 1 minute more, whisking. Keep warm while grilling chicken.
  • REMOVE chicken from marinade and place on hot grill. Grill 4 to 6 minutes on each side, turning only once, until browned and no longer pink in center.
  • SPOON peanut sauce over hot chicken and sprinkle with cilantro.

1 carrot, peeled
2 cups chicken broth, divided
1/3 cup reduced-fat peanut butter
1 tablespoon chopped peeled fresh ginger
1 tablespoon low sodium soy sauce
2 tablespoons honey
1 -2 teaspoon crushed red pepper flakes
1 garlic clove, minced
1 lb boneless skinless chicken breast
5 cups cooked soba noodles (about 10 ounces uncooked buckwheat noodles)
6 tablespoons sliced green onions
6 tablespoons chopped chopped dry-roasted unsalted peanuts

Steps:

  • Shave carrot lengthwise into thin strips using a vegetable peeler.
  • Combine 1/3 cup broth, peanut butter, ginger, soy sauce, honey, pepper, and garlic; stir with a whisk until smooth.
  • Place chicken in a large saucepan; add 1 2/3 cups broth. Bring to a boil. Reduce heat, and simmer 4 minutes or until chicken is done. Remove from heat; let stand 20 minutes. Drain; cut chicken into 2-inch pieces. Combine carrot, peanut sauce, chicken, and noodles in a large bowl; toss to coat. Sprinkle with onions and peanuts.

1/4 cup soy sauce
1 tablespoon grapeseed or vegetable oil
2 teaspoon minced fresh ginger
1 tablespoon green onion tops, minced
3/4 cup chunky peanut butter
1 cup chicken broth
2 tablespoon brown sugar
2 tablespoon soy sauce
1 tablespoon lime juice
1 tablespoon minced fresh ginger
2 teaspoon Sriracha sauce or chili paste with garlic

Steps:

  • Preheat oven to 400 degrees.
  • Trim chicken and pound between two sheets of plastic wrap to an even 1/2-inch thickness. Arrange in a greased shallow baking dish just large enough to hold the breasts without crowding. Stir together the soy sauce, oil and ginger. Pour over the chicken, turning to coat. Bake for 20 minutes or until chicken is cooked through.
  • For Peanut Sauce, combine peanut butter, broth, brown sugar, soy sauce, lime juice, ginger and Sriracha sauce in a small saucepan. Cook over medium heat, stirring constantly, until smooth and thickened, about 4 minutes. Lower heat and simmer, 1 minute longer. Spoon over chicken breasts and sprinkle with green onions.

4 teaspoons white wine vinegar

Steps:

  • Prepare the peanut sauce by adding the peanut butter, hoisin sauce, rice vinegar, honey (or agave), chili garlic sauce, soy sauce and water to the bowl of a food processor, and process the ingredients until completely smooth and creamy; pour into a large cup or bowl, and set aside.
  • Add the chicken pieces into a bowl and season with salt and pepper, then toss to coat; sprinkle over the cornstarch, then toss once again to coat the chicken evenly.
  • Place a large heavy-bottom skillet over medium-high heat, and add in about 1/2 cup of the oil; once the oil is hot and shimmering, work in batches adding some of the coated chicken pieces to the pan, and allow them to sit, undisturbed, for about 3-4 minutes until a pale golden color and slightly crisp; stir to allow the chicken to brown on the other side for another minute or two, until cooked through; remove the chicken from pan and repeat with remaining chicken.
