1 each small red and green pepper, seeded, quartered lengthwise
8 Italian bread slices (1/2 inch thick)
1/4 cup KRAFT Chipotle Aioli
2 cups shredded cooked chicken
4 KRAFT DELI DELUXE Process American Cheese Slices
1/2 cup TACO BELL® Thick & Chunky Mild Salsa

Steps:

  • Heat panini grill.
  • Spray hot grill with cooking spray. Add peppers; grill 4 min. or just until tender and evenly charred. Cool slightly.
  • Cut peppers into strips. Spread bread slices with aioli; fill with chicken, peppers and cheese to make 4 sandwiches.
  • Grill sandwiches, in batches if necessary, 4 to 6 min. or until cheese is melted and sandwiches are golden brown.
  • Serve with salsa for dipping.

1/2 teaspoon sugar
1/2 teaspoon garlic salt
1/2 teaspoon lemon juice
8 slices oat bread
1/2 pound thinly sliced deli ham
4 slices Swiss cheese
2 tablespoons butter

Steps:

  • In a small bowl, mash the avocado with sugar, garlic salt and lemon juice. Spread over four slices of bread; layer with ham and cheese. Top with remaining bread., Spread butter over both sides of sandwiches. Cook on an indoor grill for 2-3 minutes or until bread is browned and cheese is melted.

1 small tomato, seeded, chopped (1/3 cup)
1/2 teaspoon ground red pepper (cayenne)
1/4 teaspoon salt
2 teaspoons vegetable oil
1 lb boneless skinless chicken breasts, cut into thin strips
1 1/2 teaspoons ground cumin
1 medium onion, cut into thin wedges
1 medium green bell pepper, cut into thin strips
1 package (11 oz) Old El Paso™ flour tortillas for burritos (8 tortillas; 8 inch), heated as directed on package
1 cup shredded Monterey Jack cheese (4 oz)
Old El Paso™ Thick 'n Chunky salsa, if desired
Sour cream, if desired

Steps:

  • In medium bowl, stir together corn, tomato, red pepper and salt; set aside.
  • In 12-inch nonstick skillet, heat oil over medium-high heat. Add chicken; sprinkle with cumin. Add onion; cook 5 minutes, stirring frequently.
  • Add bell pepper; cook 5 to 7 minutes, stirring frequently, until chicken is no longer pink in center and bell pepper is crisp-tender.
  • To assemble each wrap, spoon 3/4 cup chicken mixture down center of warm tortilla. Top with 1/4 cup corn mixture; sprinkle with 2 tablespoons cheese. Fold 2 sides of tortilla toward center; secure with toothpick. Serve with salsa and sour cream.

¼ cup water
¼ cup vegetable oil
1 (1.06 ounce) package mesquite marinade
2 (4 ounce) skinless, boneless chicken breast halves
1 teaspoon olive oil
½ medium red bell pepper, sliced
½ medium green bell pepper, sliced
½ medium onion, sliced
2 teaspoons salted butter, softened
4 slices sourdough bread
¾ cup shredded Monterey Jack cheese

Steps:

  • Whisk water, vegetable oil, and marinade mix together in a glass or ceramic bowl. Add chicken and toss to coat. Cover with plastic wrap and marinate in the refrigerator for 15 to 30 minutes, or overnight.
  • Preheat an electric grill (such as George Foreman®) for medium heat and lightly oil the grate.
  • Remove chicken from the marinade and shake off excess. Discard the remaining marinade.
  • Place chicken on the preheated grill, close the lid, and cook until no longer pink in the center and the juices run clear, about 6 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
  • While chicken is cooking, heat olive oil in a skillet over medium heat. Add bell peppers and onion and saute until tender, 5 to 7 minutes.
  • Butter one side of each slice of bread. Assemble 2 sandwiches by layering Monterey Jack cheese, vegetables, and chicken between the unbuttered sides of the bread.
  • Place sandwiches on the grill, close the lid, and cook until bread is golden brown and cheese is melted, about 3 minutes.

2 cups fresh cilantro, leaves and stems, packed
4 garlic cloves
1 jalapeno, seeded and chopped
1/2 lime, juice of
2 tablespoons olive oil
1 pinch salt
1/4 cup mayonnaise
1 tablespoon canned chipotle chile puree (*)
1/2 teaspoon sugar
butter, softened
4 slices bread, 1/2 inch thick
2 ounces monterey jack pepper cheese, thinly sliced
3 ounces rotisserie cooked chicken, torn into pieces

Steps:

  • * Puree a can of chipotles in adobo and keep in a jar in the refrigerator.
  • Process cilantro, garlic, jalapeno, lime juice and salt in food processor till minced. Slowly drizzle in oil while machine is running, forming a paste.
  • Mix mayonnaise, chipotle puree, and sugar in a small bowl.
  • Spread each slice of bread with butter on one side. Spread cilantro pesto on the other side of two slices and top with cheese and chicken. Spread the other two slices with the mayo mixture and place on top of the chicken, butter side up. Toast in Foreman grill or in a skillet with a weight on top. (Cook over medium heat. When first side is browned, flip over and cook the other side, weighting again.).

Use a fork to pierce each chicken breast in several places and then place the chicken breasts in a medium-sized glass baking dish.
