CHEESY HASH BROWN CASSEROLE
There are so many cheesy hash brown casserole recipes in existence. How do you find the right one? This version is simple and free from all the fluff, but always pleases a crowd.

Steps:
- Thaw the potatoes in the fridge (it's okay if they aren't totally thawed) on the counter for a couple of hours or in the fridge overnight.
- Preheat the oven to 400.
- In a large bowl, mix the sour cream, cream of chicken soup, onion powder, cheese, salt and pepper. Taste for proper seasoning and adjust to your preference.
- Add the potatoes and stir to coat.
- Transfer to a greased baking dish. Pour over the melted butter. Bake at 35-40 minutes until the center is hot and bubbly and the top is slightly browned.

This is my mother's very own recipe and a holiday staple at the Haslett house.

Steps:
- Preheat oven to 350 degrees F. In a large mixing bowl, combine all the ingredients except for the crumbled potato chips (or corn flakes) and parsley.
- Spread mixture into a 9- by 13-inch glass baking dish. Top with crumbled chips or cereal and bake uncovered for 1 hour.
- Turn oven temperature up to 400 degrees F and bake another 15-20 minutes, or until casserole is browned on top and around the sides of the pan. Sprinkle with parsley, with desired, before serving.

Steps:
- Combine 1/2 cup mayonnaise and next 3 ingredients in a saucepan.
- Gradually add milk, and cook, stirring constantly, over medium-low heat 8019 minutes or until thicken. Remove from heat.
- Add cheddar cheese, and next 3 ingredients, stirring until cheese melts and is well-blended.
- Place half of potato slices evenly in a lightly greased 11x7" baking dish; pour half of cheese mixture over potatoes.
- Repeat layers with remaining half of potato slices and cheese mixture. Sprinkle with Parmesan cheese.
- Bake, covered, at 350 degrees, for 1 hour.
- Uncover and bake 30 minutes more or until potatoes are golden brown and fork tender.

CHEESY POTLUCK POTATOES
I can't remember where I found this recipe but it's great for a crowd and easy to make. You can get most of the ingredients cubed and ready to go days ahead. The most time is boiling the potatoes.

Steps:
- Clean potatoes and boil till tender but firm.
- Keep the skin on and cube in bite size pieces.
- Place in an ungreased casserole dish and toss with the onions, pimentos and seasonings.
- Top with the cubed cheese.
- Sprinkle with the bread cubes and drizzle the butter on top.
- Bake uncovered in a 350°F oven until the cheese is melted and the bread is nicely browned.
