SOUTHERN FRIED CABBAGE WITH SAUSAGE
This is a family favorite cabbage recipe. The cabbage is cooked down with tomatoes, seasonings and smoked sausage for a hearty and delicious meal-in-itself. Serve with cornbread.

Steps:
- Chop/slice the sausage, cabbage, and onion.
- In a large non-stick skillet, pre-cook the sliced sausage about 3 minutes to render some of the fat out. Remove sausage from skillet and drain on paper towels if needed. Set aside. Wipe the skillet clean.
- In the same skillet, melt the butter. Add cabbage and onion and cook and stir on medium-high for about 5 minutes, until cabbage starts to wilt.
- Add remaining ingredients, and the sausage.
- Cover the skillet and cook for about 10 minutes.
- Uncover, and finish cooking until cabbage is desired tenderness and most of liquid has been reduced.

Steps:
- Heat an iron skillet over medium heat.
- Add the chopped bacon pieces and cook until crispy. Remove the bacon once cooked and set aside to use as garnish later.
- Remove and discard any undesirable outer leaves from the cabbage.
- Cut the cabbage into strips or chop into smaller pieces if desired.
- Add the cabbage to the skillet and turn to coat with the bacon drippings.

- Cook the bacon in a heavy bottomed skillet over medium heat until it starts to become crisp and most of the fat is rendered. Remove the bacon with a slotted spoon to a paper towel lined plate to dry, and remove all but about 2 tbsp of the bacon grease from the pan.
- Add the onion, cook for about a minute or two, then add the garlic and continue to cook until the onion is softened - about 5 - 6 minutes.
- Increase the heat a bit, add begin to add the cabbage, stirring well to combine. You might not be able to fit all the cabbage in at once, so continue to stir, and as the cabbage cooks and wilts add more until it is all in the pan
- Add the paprika, cayenne, salt, pepper and Worcestershire sauce, stir well to combine, then add the cooked bacon.
- Continue to cook and stir for about 15 mins more, or until the cabbage is cooked and tender.

- Saute the bacon in a heavy skillet until crispy.
- Remove the bacon from the skillet and set aside.
- Spoon off all but about 2 tablespoons of bacon grease.
- Add the onions to the skillet and saute until they just begin to become translucent.
- Add the cabbage and garlic; saute, stirring often, for about 10 minutes.
- Add the chicken stock and seasoned salt. Simmer for about 10 minutes, or until it is as tender as you like and the liquid has mostly evaporated.
- Stir in the bacon and serve.

SOUTHERN FRIED CABBAGE
Steps:
- In a large skillet or dutch oven cook bacon over medium-high heat until crisp. Remove to paper towels to drain using a slotted spoon, reserving 4 Tbsp drippings in skillet.
- To the drippings add onion. Saute over medium-high for 3 minutes or until beginning to brown then add garlic and fennel seed, if using. Saute for 1 minute.
- Add cabbage to skillet. The skillet will be full but, the cabbage will shrink as it cooks. Once it begins to shrink, add salt, onion powder, granulated garlic, pepper flakes and black pepper. Mix well.
- Cook over medium heat stirring occasionally until cabbage has softened and is browning, about 15-20 minutes.
- Crumble bacon and add back to the cabbage or use to garnish the top.
- Serve and enjoy.

I just came up with this creation about 3 days ago. I was so good and I found out that bacon fat REALLY does add FLAVOR to your dishes. This has all the flavor and more. Everything is blended together in a medley of flavors! I hate to brag... but this one is no. 1!

Steps:
- Render fat from bacon (more rendered bacon fat may be needed if you wish to use any two larger heads of cabbage).
- Remove bacon from skillet and chop into bite size pieces. Set aside and let drain on paper towels.
- Shred cabbage as if making coleslaw.
- Slice onions into thin half moon.
- Saute cabbage and onion in bacon fat until lightly browned.
- Mix bacon pieces in with cabbage and onions. Set aside and let drain on paper towels.
- Peel potatoes. Dice into bite sized pieces.
- Season chicken with Soul Seasoning and pepper (or whatever you have around).
- Fry until well browned in skillet with bacon fat.
- Add chicken broth, bouillon cubes, potatoes and water.
- Boil until chicken well tender.
- Set aside two chicken halves to cool.
- Shred into chunky bite sized shreds.
- Add chicken, potatoes, cabbage mixture and 2 cans of northern beans.
- Boil all until rendered down into thick gravy like consistency.
- Let cook until chicken is tender and all flavors are well blended, at least for 1-1 1/2 hours extra. Remember the longer you cook this, the better it is going to taste, so a crock pot would be "PERFECT" for this particular dish.
- NOTE: If dish is too fatty for you.
- After and only after frying the chicken, you may take a paper towel and take the grease out of the pan, if you are cooking in a skillet or pot of some kind do not clean the skillet.
- You will need all the flavor on bottom of pan for flavoring.

- Remove bacon from pot, leaving the grease.
- Add cabbage to pot and cook over medium high heat for 10 minutes, Stirring every minute or so.

- Add Worcestershire, apple cider vinegar, garlic powder, & brown sugar.

- Remove the first outer layer of leaves from the cabbage and discard.
- Rinse the head of cabbage well under cold running water.
- Carefully slice the cabbage in half, then into quarters.
- Slice each quarter again, the long way, then cut each wedge into bite sized pieces.
- Place your skillet over Medium heat on your stove top.
- Add the butter.
- Add the bacon grease.
- Add the cabbage.
- Stir the cabbage as it cooks down to fully coat the pieces in the butter.

SOUTHERN FRIED CABBAGE
Steps:
- In a large skillet over medium heat, cook the bacon until crisp. Remove the bacon from the pan using a slotted spoon and allow the bacon fat to remain in the skillet.
- Add the onion to the pan. Cook until translucent - about 5 minutes.
- Add the cabbage and cook, stirring occasionally, for about 10 minutes. Add the chicken broth, salt, and pepper and cook, stirring occasionally, until the cabbage is tender to your liking. Add the bacon back to the skillet and stir to combine. Serve immediately.
FRIED CABBAGE AND BACON
Steps:
- Heat vegetable oil in dutch oven or deep bottom skillet. Add bacon and cook until crispy. Remove bacon to a papertowel lined plate. Set aside. Remove all but 3 tablespoons of bacon grease from pot. Turn heat to low.
- Add mustard, chicken stock, salt and pepper, stirring to incorporate. Carefully add in cabbage and toss to coat with liquid. Continue to cook on low heat for approximately 15 minutes until cabbage is cooked but not mushy. Add bacon back to pot and gently stir into cabbage. Taste and adjust seasoning.
- Serve immediately. Can be stored in a sealed container in fridge for 2 days.

- 1. In a skillet, fry the bacon pieces and chopped onion together until the bacon is cooked and the onion is starting to brown. Do not drain bacon drippings.
- 2. Add the cabbage and stir fry for several minutes, until the cabbage is coated with the drippings. Add 1/2 Cup of water and cover for a few minutes at medium heat.
