This is heavenly! We have it for all the major winter holidays. Goes wonderfully with Ham or Turkey. Preparation time does not include cooking the sweet potatoes first.

3 cups sweet potatoes, fresh, cooked and mashed
1/2 cup sugar
1/3 cup milk
2 eggs, lightly beaten
1 teaspoon vanilla extract
1/2 cup butter, melted
1 cup light brown sugar
1/3 cup all-purpose flour
1/3 cup butter, melted
1 cup pecans, chopped

Steps:

  • Preheat oven to 350 degrees. Mash potatoes in a large mixing bowl. While still warm, fold in sugar, milk, beaten eggs, vanilla and 1/2 cup melted butter. Stir with wooden spoon until well combined. Put mixture in a 2-quart casserole dish.
  • In a small bowl, combine light brown sugar, flour, 1/3 cup melted butter and chopped pecans. Spoon this topping evenly over sweet potato mixture.
  • Bake about 40 minutes or until topping is crisp, pecans have toasted and sweet potato mixture is bubbling.

3 1/2 pounds sweet potatoes (about 5 medium), peeled and cut into 1-inch chunks
1/3 cup honey
1 large egg
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/8 teaspoon ground ginger
Kosher salt
1 tablespoon packed dark brown sugar
1/3 cup finely chopped pecans

Steps:

  • Preheat the oven to 350 degrees F. Mist an 8-inch square baking dish with cooking spray.
  • Bring a few inches of water to a boil in a pot with a large steamer basket in place. Put the sweet potatoes in the basket, cover and steam until tender, 20 to 25 minutes. Transfer the potatoes to a bowl and let cool slightly. Add the honey, egg, 1/2 teaspoon cinnamon, the nutmeg, ginger and 1/2 teaspoon salt; whip with an electric mixer until smooth. Spread the sweet potato mixture in the prepared baking dish.
  • Mix the brown sugar, pecans and the remaining 1/2 teaspoon cinnamon in a bowl; sprinkle over the potatoes. Bake until hot and beginning to brown around the edges, 40 to 45 minutes.

We went south for Thanksgiving this year and this was served at dinner. This is baked and served right in a cast iron skillet; you can use a 12 or 15 inch cast iron skillet. Scrumptious; it's a side dish and dessert all in one! Prep time does not include the cooking and mashing of the sweet potatoes.

3 cups mashed sweet potatoes
1 cup sugar
2 eggs
1/2 cup milk
1 teaspoon vanilla
1/2 cup butter
1 cup brown sugar
1/3 cup self rising flour
1/3 cup butter, melted
1 cup pecan halves

Steps:

  • Preheat oven to 350 degrees.
  • Mix the first 6 ingredients and pour into a greased cast iron skillet.
  • Mix together the brown sugar, flour and melted butter; sprinkle on top of sweet potatoes.
  • Sprinkle the 1 cup of pecans on top.
  • Bake for 30 minutes or until a little brown and bubbly.
  • Serve straight out of the skillet.

This sweet potato casserole is a Southern classic. So sweet and delicious.

5 pounds sweet potatoes, scrubbed
½ cup unsalted butter, at room temperature
½ cup white sugar
⅓ cup honey
⅓ cup light brown sugar
1 ¾ teaspoons salt, or to taste
¾ teaspoon freshly grated nutmeg, or to taste
3 large eggs, lightly beaten
2 teaspoons vanilla extract
3 cups warm milk
1 tablespoon unsalted butter, softened
1 cup light brown sugar
1 cup all-purpose flour
½ teaspoon ground cinnamon
½ teaspoon freshly grated nutmeg
¼ teaspoon salt
½ cup cold unsalted butter
1 cup pecans, chopped

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Place potatoes on a foil- or parchment-lined baking sheet.
  • Bake in the preheated oven until very tender, 1 to 1 1/2 hours. Remove from the oven and allow to cool briefly, about 5 minutes. Peel.
  • Transfer peeled sweet potatoes into a large bowl of an electric mixer fitted with beaters or a whisk attachment. Mix on low speed to begin mashing them. Add 1/2 cup butter and mix until absorbed. Add white sugar, honey, brown sugar, 1 3/4 teaspoon salt, and 3/4 teaspoon nutmeg; mix until thoroughly blended. Add eggs and vanilla and beat on medium speed for 2 minutes.
  • Reduce mixer speed to low and slowly add the heated milk. Taste and adjust salt and nutmeg if needed.
  • Grease a 9x13x2-inch baking dish with 1 tablespoon softened butter and pour potato mixture into it.
  • Pour brown sugar, flour, cinnamon, nutmeg, and salt for topping into a mixing bowl and mix well. Use your fingers to work the chilled butter into the mixture until it resembles oatmeal with some pea-sized pieces of butter in it. Stir in the pecan pieces and mix well. Sprinkle the mixture evenly over the top of the sweet potatoes.
  • Bake in the preheated oven until topping is golden brown and crisp and sweet potatoes are set, but still slightly loose in the center, 30 to 45 minutes.

  • Prepare the Sweet Potato Filling: Preheat oven to 400ºF. Coat a 13- x 9-inch glass baking dish with cooking spray, or lightly butter a 12-inch cast-iron skillet. Using a fork, poke several sets of holes in each sweet potato. Arrange sweet potatoes in prepared baking dish. Bake until very tender when pierced with a fork, 50 minutes to 1 hour. Remove from oven; cool in baking dish until cool enough to handle, 15 to 20 minutes (do not turn the oven off).
  • Remove sweet potatoes from baking dish, and set dish aside. Cut sweet potatoes in half lengthwise, and scoop flesh into a large bowl. Discard skins.
  • Mash sweet potato flesh well using a potato masher. Add eggs, granulated sugar, milk, butter, vanilla extract, and salt. Beat mixture with an electric mixer on medium speed until smooth, about 1 minute. Spoon mixture into baking dish.
  • Prepare the Topping: Stir together pecans, brown sugar, flour, and salt in a medium bowl. Add melted butter, and stir until well combined. Sprinkle evenly over Sweet Potato Filling in baking dish.
