CHEDDAR POTATO & BEEF BAKE



Cheddar Potato & Beef Bake image

Comfort food at its finest in this casserole of beef and potatoes in a creamy Cheddar sauce.

1 lb (500 g) lean ground beef
1/4 cup (50 mL) finely chopped onion
2 boxes Betty Crocker* Country Cut Cheddar Scalloped Potatoes
5 1/2 cups (1.375 L) water
2/3 cup (150 mL) milk
2 tbsp (25 mL) butter or margarine
2 tsp (10 mL) chopped fresh thyme leaves (or 1/4 tsp/1 mL dried)
2 cups (500 mL) shredded old Cheddar cheese
1/4 tsp (1 mL) paprika

Steps:

  • Heat oven to 400ºF. Spray 13x9-inch (3-quart) glass baking dish with nonstick cooking spray. In large skillet, cook ground beef and onion over medium-high heat, stirring frequently, until no longer pink; drain.
  • In 3-quart saucepan, heat water, milk and butter to boiling. Stir in thyme, 2 pouches potatoes and 2 pouches sauce mix. Heat until mixture starts to thicken, about 1 minute.
  • Spoon 2 1/2 cups (625 mL) potato mixture into bottom of dish. Spoon ground beef over potatoes. Top with remaining potato mixture.
  • Bake 30 minutes or until potatoes are tender. Remove from oven. Combine cheddar cheese with paprika. Sprinkle over potatoes.
  • Return to oven and bake 5 to 10 minutes until cheese is melted.

½ pound ground turkey
¼ cup chopped onion
1 (16 ounce) can stewed tomatoes, undrained
1 (.75 ounce) packet brown gravy mix
1 teaspoon chili powder, or to taste
½ cup frozen corn kernels
½ cup uncooked elbow macaroni
1 cup shredded lettuce
3 tablespoons sour cream
2 cups corn tortilla chips

Steps:

  • Bring a small saucepan of lightly salted water to a boil. Add macaroni and cook until almost tender, about 6 minutes. Drain and set aside.
  • Crumble the turkey in a large skillet set over medium heat. Cook and stir until evenly brown; drain. Add onion to browned turkey meat and cook until onion is tender, about 5 minutes. Stir in tomatoes, gravy mix and chili powder until combined then mix in the corn and macaroni. Cover; reduce heat to low and simmer, for 10 minutes, stirring occasionally.
  • Serve on a bed of tortilla chips topped with shredded lettuce and sour cream.

1 pkg. (1 oz.) TACO BELL® Taco Seasoning Mix
1 cup BREAKSTONE'S or KNUDSEN Sour Cream
1 pkg. (8 oz.) KRAFT Shredded Cheddar Cheese
1 red pepper, cut into strips

Steps:

  • Heat oven to 350°F.
  • Brown meat in large skillet. Meanwhile, microwave potatoes as directed on package, except reduce the microwaving time to 5 min.
  • Drain meat; return to skillet. Stir in seasoning mix. Add sour cream and cheese; mix well. Gently stir in potatoes.
  • Spoon into 13x9-inch baking dish sprayed with cooking spray; top with peppers.
  • Bake 20 min. or until heated through.

1 lb ground beef
1/2 cup chopped onion
1 jalapeno, minced (optional or more to taste)
2 (8 ounce) cans tomato sauce
1 tablespoon chili powder
1/2 teaspoon salt
6 corn tortillas, cut in half
2 cups cheddar cheese, shredded (8 oz)

Steps:

  • Preheat oven to 325 and grease 1 1/2 qrt casserole dish.
  • Brown meat and drain.
  • Add onion and jalapeno (if using) and cook with meat until tender.
  • Stir in tomato sauce and seasonings.
  • Layer one-third of meat mixture, cheese and one half of tortillas in casserole dish; repeat layers, ending with cheese.
  • Bake at 325 for 20 minutes.
  • Note: Corn tortillas will soften and absorb the sauce.
  • These are recommended.
  • Flour tortillas will expand and the casserole will be too doughy-therefore flour tortillas are not recommended.

3 russet potatoes
2 tablespoons olive oil
2 teaspoons salt
½ lb ground beef
1 tablespoon taco seasoning
½ cup black beans, drained, rinsed
½ cup tomato, diced
1 cup cheddar cheese, plus more for topping
guacamole, to serve

Steps:

  • Preheat the oven to 350°F (180°C).
  • Carefully pierce potatoes with a fork. On a baking sheet, oil the potatoes well and sprinkle with salt.
  • Bake for about one hour. If making more potatoes, an additional 15 minutes per potato is needed.
  • In a skillet over high heat, add the ground beef with a bit of oil.
  • Add the taco seasoning, black beans, and tomatoes. You may want to drain the ground beef mixture once cooked if there's too much liquid.
  • Once the potatoes are cooled, cut them vertically, scoop out the inside, and transfer to a bowl.
  • In the bowl with the scooped out potatoes, add the ground beef mixture and cheddar cheese. Mix well.
  • Scoop the potato mixture back into the potatoes and top with cheddar cheese.
  • Bake an additional 15 minutes until the cheese is melted.
  • Serve warm with guacamole.

3 cups potatoes, cooked and diced
1 cup lettuce, shredded
1 cup cheddar cheese, shredded
3 tablespoons onions, grated

3 eggs, hard-cooked and chopped
2 tablespoons olive oil
1 teaspoon salt
1/8 teaspoon pepper
1/8 teaspoon prepared mustard
1 dash Tabasco sauce
3/4 cup light cream (or mayo)

Steps:

  • In a medium bowl combine potatoes and lettuce; toss.
  • In a small bowl, combine cheese, onions, olives, chili pepper, eggs, olive oil, salt, pepper, mustard and Tabasco sauce.
