I wish I could give credit where it's due, but I don't remember where this recipe originated. It seems as soon as this coffee cake is out of the oven, my family has it eaten!

- In a bowl, cream butter and sugar. Beat in eggs and vanilla. Combine flour, baking soda and salt; add alternately with sour cream to the creamed mixture. Fold in apples. Spoon into a greased 9-in. square baking pan. In a small bowl, mix topping ingredients; sprinkle over batter. Bake at 350° for 35-40 minutes or until done.

Mom and I formulated this recipe back in the '50s after visiting a friend's farm where they made the most delicious sour cream ever. Our first try was perfect, and these apple squares soon became a favorite to serve at social functions. Years ago, we made six pans of these squares when a young Johnny Carson presented his magic show at our card club!

- In a large bowl, combine the flour, brown sugar and butter; beat at low speed until crumbly. Stir in nuts. Press about 2-3/4 cups into an ungreased 13x9-in. baking pan. , To the remaining crumb mixture, add the cinnamon, baking soda, salt, sour cream, vanilla and egg. Beat until thoroughly combined. Stir in apples. Spoon evenly over crust. Bake at 350° for 35-40 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack. Cut into squares. Garnish with whipped cream if desired.

- Set oven to 350 degrees.
- Prepare an ungreased 13 x 9-inch baking pan.
- In a large bowl, combine flour, brown sugar and butter; beat at low speed until crumbly.
- Stir in nuts.
- Lightly press 2-3/4 cups of the crumb mixture in bottom of an ungreased baking dish.
- To the remaining crumb mixture, add cinnamon, baking soda, salt, sour cream, vanilla and egg; mix well with a wooden spoon.
- Stir in apples.
- Spoon evenly over the crumb base in the pan.
- Bake for 30-40 minutes, or until a toothpick inserted in the center comes out clean.
- Cool slightly; cut into squares.
- Serve with ice cream or whipped cream -- YUMMY!

GRANDMA'S SOUR CREAM APPLE SQUARES
Grandma's Sour Cream Apple Squares is an old-fashioned dessert that will have your family begging for more. These delicious bars have two layers including a creamy apple layer and a sweet brown sugar crust. Serve these with whipped cream just like our Grandma did.

- Preheat oven to 350 degrees F.
- With a mixer, blend flour, brown sugar and softened butter until crumbly. The consistency should be that of sand; stir in chopped nuts.
- Press 2 3/4 cups of the mixture into an ungreased 9x13 inch pan.
- To the remaining mixture, add cinnamon, baking soda, salt, sour cream, vanilla and egg; blend well. Stir in apples.
- Spoon evenly over the base in pan.
- Bake for 25 to 35 minutes or until golden brown, and a toothpick comes out clean.
- Cut into squares, and serve with whipped cream if desired.

- Cream butter and sugar until smooth.
- Add eggs one at a time, mixing well after each addition.
- Add vanilla and stir in sour cream.
- In a separate bowl, combine dry ingredients and stir into wet ingredients until just mixed.
- In another bowl, combine all ingredients for topping except the apples.
- Toss the topping with the sliced apples.
- Scrape the cake batter into a 9x12 inch cake pan and level.

- In a large bowl, combine first 3 ingredients. Blend at low speed until crumbly. Stir in nuts. Press 2-3 cups of crumb mix firmly on an ungreased 13 x 9 pan. To remaining crumbs, add all other ingredients except apples. Blend well, stir in apples. Spoon batter evenly over crumb base. Bake at 350 degrees for 35-45 minutes until tested comes out clean. - Preheat oven to 350*.
- Combine cake mix and butter; mix until crumbly.
- Reserve 2/3 cup of crumbly mixture for topping.
- Stir brown sugar into remaining mixture.
- Cover bottom of ungreased 13x9 inch pan with brown sugar mixture. Pat down.
- Arrange apple slices over base.
- Blend sour cream and egg; spread evenly over apples.
- Sprinkle topping mixture over all.

- In a small bowl mix nuts, cinnamon, and 1 cup of the sugar; set aside.
- Cream butter and the rest (1 cup) of sugar, beating until light and fluffy with electric mixer on high.
- Add Eggs one at a time, beating after each addition.
- Add vanilla.
- Add flour, baking powder, salt and baking soda, beating well.
- Add sour cream; mix well.
- Spread 1/2 of the batter in a 9 or 10 inch square pan.
- Top with all of the slices of apples. Over the top of the apples put 1/2 of the nut, sugar, cinnamon mixture.
- Add remaining batter and then sprinkle remaining nut mixture over all.
- Bake at 350° for 40 minutes or until knife inserted in center comes out clean.
- Set out of oven on wire rack for 30 minutes.
- Loosen edges, lift out and let cool.

- For Topping: Blend walnuts, brown sugar, flour, cinnamon in processor until nuts are finely chopped.
- Add butter and cut in using on/off turns until clumps begin to form.
- (Can be made 1 day ahead) Cover and chill.
- For Filling: Mix apples, sugar, cinnamon, and lemon juice in a bowl.
- For Cake: Preheat oven to 350F.
- Butter 13 x 9 x 2 inch glass baking dish.
- In a small bowl, whisk sour cream and buttermilk to blend.
- In a medium bowl, sift flour, baking powder, baking soda, and salt.
- In a large bowl, beat butter and both sugars until creamy.
- Add eggs, one at a time, beating well after each addition.
- Mix in lemon juice and vanilla extract.
- Beat in dry ingredients alternately with sour cream mixture in 3 additions each, mixing just until smooth.
- Spread half of batter in prepared pan.
- Spoon apple filling on top of batter.

I make these often it's a wonderful easy recipe and they are very moist! Serving size is only estimated depending on the size you cut the squares. You can even add in nuts in place of the chocolate chips or use about 6 ounces each!

- Grease a large cookie sheet.
- In a bowl combine oil, sugar and eggs, beat until well combined.
