S'mores Magic Bars are gooey, delicious and so simple to make. Toasty marshmallows, melty chocolate and graham crackers . . .they have the yumminess of s'mores without the campfire.

2 1/2 cups graham cracker crumbs
3/4 cup butter, melted
2 1/2 cups mini marshmallows, divided
1 1/3 cups milk chocolate chips (I recommend Guittard or Ghiradeli)
1 cup broken graham cracker pieces
1 (14 oz) can sweetened condensed milk
3 to 4 (1.55 oz) Hershey chocolate bars (1.55 oz), broken into pieces

Steps:

  • Preheat oven to 350 degrees. Spray a 9×13 inch baking dish with non-stick cooking spray or line with parchment paper.
  • In a small bowl, mix together graham cracker crumbs and melted butter. Press mixture evenly into prepared baking dish.
  • Sprinkle half of marshmallows, the chocolate chips and the graham cracker pieces on tops of the graham cracker crust.
  • Pour the sweetened condensed milk evenly on top.
  • Bake for 15 minutes. Remove from oven and sprinkle with the remaining marshmallows. Bake for 12 to 15 more minutes or until marshmallows are browned and edges are golden.
  • Remove from oven and immediately place chocolate pieces on top.
  • Allow bars to cool for at least 20 minutes before cutting into pieces and serving.

These S'mores Magic Cookie Bars will disappear almost as fast as you can make them, they are irresistible! Made up of absolutely amazing layers of graham cracker, sugar cookie, chocolate, marshmallows, and topped with sweetened condensed milk, there is a LOT to love about these!

9 graham cracker sheets (approximately 5.4 oz worth, crushed)
6 TBSPs of unsalted butter (melted)
2 TBSPs granulated sugar
1 1/4 cup all purpose flour (scooped and leveled)
1/4 tsp salt
1/4 tsp baking powder
3/4 cup granulated sugar
1/2 cup unsalted butter (room temperature)
1 tsp vanilla extract
1 large egg
1 cup milk chocolate chips
1 cup mini marshmallows
3/4 cup sweetened condensed milk

Steps:

  • Preheat your oven to 350 degrees. Spray a 9 by 13 inch pan with cooking spray well and set aside.
  • In a large bowl, mix together the graham crackers, the 6 TBSPs of butter (melted) and the 2 TBSPs of sugar. Press into the bottom of the pan.
  • In a different bowl, mix together 1 1/4 cup flour, 1/4 tsp salt, and 1/4 tsp baking powder, set aside.
  • Beat together 3/4 cup of granulated sugar and 1/2 cup unsalted butter until creamy, about two minutes. Add in the egg and then the vanilla until just combined. Slowly add in the flour mixture until it is fully combined.
  • Very carefully spread the cookie dough mixture on top of the graham cracker crust. The easiest way to do this is to take small amounts, flatten it in your hands, and set it on the crust. You may not be able to entirely cover the graham cracker crust, that's okay.
  • Evenly spread the mini marshmallows and the chocolate chips over the top of the cookie dough. Then evenly pour the sweetened condensed milk over the top.
  • Bake for 22 to 27 minutes or until the edges are golden brown. (Mine required closer to 27 minutes.)
  • Let the bars cool overnight before cutting. Or just take a fork and go for it.

2 sticks unsalted butter, melted, plus more, softened, for pan
18 plain graham crackers (about 2 packages)
1/4 cup sugar
1/2 teaspoon fine sea salt
3 cups milk chocolate chips
1/2 teaspoon chipotle pepper powder, optional
3 1/2 cups mini-marshmallows

Steps:

  • Preheat the oven to 350 degrees F. Line the bottom and sides of a 9 by 13-inch baking pan with foil. You want to leave about 4 inches of overhang on the 2 opposite sides. These are going to serve as your handles to remove the bars from the pan in 1 piece, so make sure that there is enough of the overhang for you to have a solid grip. Grease the foil well with the softened butter.
  • In your food processor, grind the graham crackers into a fine meal (you need 2 cups). In a large bowl, combine your crumbs with the sugar, sea salt and melted butter. The mixture should look and feel like wet sand. Set aside a heaping 1/2 cup of the crumb mixture for the topping. Evenly press the remaining crumb mixture into the bottom the foil-lined pan. Pop your crust into the oven and bake until it is golden brown and your kitchen smells of graham crackers, 12 to 15 minutes. Remove the crust from the oven and allow it to cool on a rack or on a dishtowel on your counter.
  • Melt the milk chocolate in a saucepan over low heat, stirring continuously until fully melted. Do not turn up the heat to hurry this process, you must keep it on low. Alternately, you can microwave the chocolate on low power, stirring after 2 minutes. Once the chocolate is fully melted, it's time to add the chipotle pepper powder, if using, and stir it in completely.
  • Preheat the broiler.
  • Pour the melted chocolate over the cooled graham cracker crust. Spread the chocolate evenly over the crust with a butter knife. Sprinkle the marshmallows over the chocolate and press them lightly into the chocolate. Sprinkle the reserved crumb mixture over and in between the marshmallows so that you cannot see the chocolate peaking through the marshmallows. Broil the bars 6 inches from the flame until the marshmallows are golden brown, 1 to 2 minutes.
  • Refrigerate the bars until the chocolate is hard, 2 hours or so. Grab the ends of the foil liner and lift the bars out of the pan in 1 piece. Move to a cutting board and cut into 24 squares.

NO-BAKE S'MORES BARS



No-Bake S'mores Bars image

Nonstick cooking spray, for the pan
4 tablespoons salted butter
One 10-ounce bag mini marshmallows
One 12-ounce bag semisweet chocolate chips
Pinch of kosher salt
9 graham crackers, broken into pieces
1/4 cup mini chocolate-coated candies
2 tablespoons rainbow sprinkles

Steps:

  • Line a 9-inch square baking pan with waxed paper, overlapping all 4 sides. Spray with cooking spray.
  • Place a nonstick pan over low heat and add the butter. When melted, add two-thirds of the marshmallows and cook, stirring, until the marshmallows have melted and combined with the butter, about 3 minutes. Next, fold in the chocolate chips and stir until they are melted too. Add the salt and half of the broken graham crackers and stir so the cracker pieces are incorporated into the chocolate marshmallow mixture but not broken up too much.
  • Tip the mixture into the prepared pan and press it into the pan with a wooden spoon. Sprinkle over the remaining graham crackers and marshmallows, pressing them down with your hands so they set into the base. Next, add the coated candies and sprinkles and press them down.
  • Allow to set for 1 hour before removing from the pan and cutting into bars. Or you can chill for 10 minutes and slice if you're in a hurry!

  • Line a 9-by-13-inch baking dish with foil, leaving a 2-inch overhang; coat with cooking spray. Mix 2 1/4 cups graham cracker crumbs and 1 1/2 sticks melted butter in a medium bowl; press into the pan. Drizzle evenly with one 14-ounce can sweetened condensed milk. Layer with 1/2 cup chocolate chips, 1/2 cup sweetened shredded coconut, one 7-ounce box roughly chopped Samoas and 1 cup chopped pecans. Gently press into the milk. Bake at 350˚ until golden and bubbling, about 25 minutes. Let cool completely. Cut into pieces.

M&M'S MAGIC BARS

1 stick unsalted butter, melted, plus more for the baking dish
2 cups graham cracker crumbs
1/2 cup semisweet chocolate chips
3/4 cup chopped pecans
1 14-ounce can sweetened condensed milk
1 cup unsweetened shredded coconut
1 cup red and green M&M'S

Steps:

  • Preheat the oven to 350˚ F and butter a 9-by-13-inch baking dish. Combine the melted butter and graham cracker crumbs in a bowl. Transfer to the baking dish and use your hands or the bottom of a measuring cup to firmly press the crumbs into an even layer. Sprinkle the chocolate chips and chopped pecans over the graham cracker crust. Drizzle the condensed milk evenly on top, then sprinkle with the coconut and M&M'S. Lightly press the coconut and M&M'S into the condensed milk.
  • Bake until golden brown and bubbly, 20 to 25 minutes. Let cool at least 30 minutes in the pan, then cut into squares.

2½ cups graham cracker crumbs
10 Tablespoons butter (melted)
14 ounces sweetened condensed milk
4 whole graham cracker sheets
4 Hershey's Milk Chocolate Bars ((1.55 ounces each))
10 ounces miniature marshmallows (1 bag)
11.4 ounces M&M's (1 package, (we used Red, White and Blue M&M's))
½ cup milk chocolate chips

Steps:

  • Heat oven to 350 degrees. Grease a 9 x 13 inch glass pan.
  • In a medium sized mixing bowl mix together the graham cracker crumbs and melted butter, press into the bottom of the pan.
  • Then pour the sweetened condensed milk over the graham cracker crust.
  • Break up the graham crackers and Hershey bars into pieces and spread all over the top of the sweetened condensed milk.
  • Bake for 20 minutes. Then remove from oven and carefully put marshmallows all over the top and return to the oven for another 10 - 15 minutes. (marshmallows should start to turn brown)
  • Remove from oven and quickly spread the M & M's over the top of dessert. Return to oven for about 3-5 more minutes.
  • Let cool for about 30 minutes. Then melt the chocolate chips in a microwave safe bowl or container. Drizzle melted chocolate chips over entire dessert. (Or you can put melted chocolate in a baggy and clip the corner and pipe over all of the dessert).
  • Let cool for about an hour. Then slice and serve!

18 HONEY MAID Honey Grahams, divided
1/2 cup butter, melted
1 can (14 oz.) sweetened condensed milk
1 pkg. (4 oz.) BAKER'S Semi-Sweet Chocolate, finely chopped
2-1/2 cups JET-PUFFED Miniature Marshmallows

Steps:

  • Heat oven to 350ºF.
  • Line 13x9-inch pan with foil, with ends of foil extending over sides; spray with cooking spray. Finely crush 14 grahams; mix with butter. Press onto bottom of prepared pan. Drizzle with milk.
  • Break remaining grahams into bite-size pieces. Sprinkle over dessert; top with chocolate, then marshmallows.
  • Bake 20 to 25 min. or until marshmallows are puffed and golden brown. Cool completely. Use foil handles to remove dessert from pan before cutting into bars.
