S'MORES COOKIES
If you have kids, it's a safe bet that they love s'mores--my kids certainly do. When we're at our beach house, they constantly beg me to make them. These s'mores cookies are less messy than the original, as well as being portable and great to have with you whenever you go on a road trip. This recipe came from one of my old pastry chefs--and I loved it so much. By marrying two American classics--the chocolate chip cookie and the s'more--this just might achieve cookie nirvana.

- Preheat the oven to 350 degrees F; position the rack in the middle of the oven. Line three rimmed baking sheets with parchment paper.
- In a large bowl, whisk together the flour, graham cracker crumbs, baking soda, and salt until thoroughly combined. Set aside.
- In the bowl of a stand mixer fitted with the paddle attachment, cream the butter and both sugars together on medium speed until light and fluffy. Meanwhile, in a small bowl, lightly beat together the egg, maple syrup, and vanilla. Add the egg mixture to the whipped butter-sugar mixture and mix until combined on low speed.
- Add the flour mixture and mix on medium speed until combined. Scrape down the paddle to get every bit of the dough into the bowl. Fold in the chocolate chips. Scoop golf ball-sized balls of the dough with an ice cream scoop and place them on the prepared pans, leaving 2 inches between the cookies on all sides. (You should be able to fit 6 cookies on each half-sheet at a time.)
- Bake for about 5 minutes, or until the cookies start to spread. Remove the pans from the oven and place 4 marshmallows on top of each cookie, gently pressing them into the dough. Return the cookies to the oven and bake for 10 minutes more, or until the cookies are golden and set around the edges and still a little soft in the center.
- Transfer the cookies to a wire rack and let cool completely. Store the cookies at room temperature in a tightly sealed container for up to 1 week.

- Heat oven to 375°F (350ºF for convection ovens).
- Beat butter, egg, and Cookie Mix with hand mixer until blended. Freeze dough for 15 minutes.
- Scoop chilled cookie dough into 12 mounds, using 1 tablespoon dough for each mound; flatten each into a 2-inch (5 cm) round. Place 2 Chocolate Wafers in center of each round and mold dough around wafers to completely enclose wafers.
- Set aside one tablespoon of Graham Crumbs, placing the remaining crumbs into a shallow dish. Roll each of the dough balls in the crumbs until coated and place on a parchment-lined baking sheet.
- Bake for 8 to 9 minutes, or until puffed and lightly browned around the edges.
- While the cookies bake, cut each marshmallow lengthwise in half, then cut each marshmallow piece crosswise in half using kitchen shears.
- Remove cookies from the oven. Top each cookie with 1 marshmallow piece, pressing gently into the cookie to secure. Bake an additional 2 to 3 minutes, or until marshmallows puff and start to melt.
- Remove cookies from the oven and cool for 2 minutes, before transferring to a wire rack.
- Microwave the remaining chocolate wafers in a bowl on high for 1 minute, stirring after 30 seconds, until melted and smooth.
- Drizzle chocolate over the cookies and sprinkle with reserved Graham Crumbs.

CAMPFIRE S'MORES

- Butter a 9- by 11-inch pan.
- Place the chocolate in a large bowl over a double boiler at a low simmer. Stir the chocolate until melted, and then turn off the heat. In a separate pot, bring the cream just to a simmer. Stir in the espresso and chile powder, and then remove from the heat. Add the cream mixture to the chocolate and whisk into a smooth, shiny consistency. Refrigerate.
- Melt the butter in a large pot over low heat. Stir in the marshmallows and cook until fully melted. Add the vanilla paste and popped popcorn, coating thoroughly.
- Press half of the popcorn mix into the prepared pan. Sprinkle with half of the salt and the chocolate mixture. Spread the remaining popcorn mix on top, sprinkling with the rest of the salt. Refrigerate until set.
- Once cool enough to easily handle, cut first into rectangles and then into triangles. Let sit at room temperature until slightly tacky.
- Crush 2 sheets of the graham crackers in a shallow dish. Place the triangles into the crumbs and press the crumbs into the bottom and sides. Place the triangles on a baking sheet and top with a few remaining marshmallows. Put under the broiler until light brown. Top with larger piece of graham for garnish.
CAMPFIRE S'MORES PUDDING COOKIES
Campfire s'mores in cookie form! You want these cookies to be slightly undercooked. It helps make them extra soft!

- Cream butter, brown sugar, and white sugar together in a bowl. Add pudding mix and beat until well incorporated. Beat in eggs and vanilla extract.
