Here's what you need: Great Value® Almond Milk, Great Value® Berry Medley, dried apricot, coconut chips

1 cup Great Value® Almond Milk
1 ½ cups Great Value® Berry Medley
¼ cup dried apricot, diced
¼ cup coconut chips

Steps:

  • In a blender, combine the almond milk, berries, apricots, and coconut chips. Blend on high speed until smooth.
  • Enjoy!

This is sweet and so delicious. The orginal recipe calls for apricot nectar, but I used guava nectar as I had some guava nectar opened.... Blend and enjoy! This is from the book Smoothies, and in there it is called abc easy as 1-2-3 The preparation includes freezer time.

Number Of Ingredients 4

1/2 small banana, chopped
1 cup diced fresh apricots or 1 cup canned apricots (I used Splenda sweetened)
1/4 cup light coconut milk (or 2 tbsp. coconut milk and 2 tbsp. cold water)
3/8 cup apricots (as written) or 3/8 cup guava nectar, chilled

Steps:

  • Place the apricots and the bananas in a container and frezze overnight.
  • Place all ingredients in blender and blenderize.
  • Stop and chop at fruit with a knife to help the blender.
  • Blend until smooth.
  • I think this would be even better with rum in it.
  • Pour drink in glass, insert straw-- close your eyes and imagine yourself on a tropical island.
  • Drink slow and enjoy.
  • I have since made this smoothie without the coconut milk and it is also good that way, just use 3/4 cup guava nectar.

This recipe (with measurements slightly tweaked) comes from the SMOOTHIES & JUICES 2006 cookbook that I received from my current cookbook swap partner, Tansy. Preparation time does not include the time for the apricots to soak in boiling water overnight.

2 cups boiling water
1 cup dried apricot, quartered
1 1/2 cups orange juice
2 tablespoons plain yogurt
1 teaspoon dark brown sugar (SOFT)

Steps:

  • Put quartered apricots in a small bowl & pour boiling water over them, before covering them & leaving to soak overnight.
  • In the morning, put the apricots & the water into a food processor or blender & process until pureed.
  • Add orange juice to the mixture & process until combined.
  • Pour into two tall glasses & top each with 1 tablespoon of yogurt & a sprinkling of brown sugar.

Just made this up today with what I had on hand and both my toddler and I loved it. A yogurt based smoothie that is quite tasty. The flaxmeal is not a MUST, but does increase the "health factor" and it tastes great in this smoothie (feel free to increase it to 2 T if you like).

1/4 cup sliced strawberry (frozen if you like)
5 apricot halves (from a can or tin with juice reserved)
3/4 cup nonfat vanilla yogurt
1 tablespoon apricot nectar (reserved from the can)
1 tablespoon flax seed meal
1/4 cup cold water

Steps:

  • Place first 5 ingredients in blender and mix well. Add water til you get the desired consistency. Taste and add a bit more apricot nectar if it's not sweet enough for you!
