2 ounces tequila (recommended: El Tesoro)
1 -ounce Triple Sec
1 -ounce fresh lime juice
3/4 teaspoon simple syrup
Ice cubes
1/2 -ounce mezcal (recommended: Del Maguey "Chichicapa" Single Village Mezcal)

Steps:

  • Place tequila, Triple Sec, lime juice, and simple syrup in a cocktail shaker and shake until combined. Serve over ice in a rocks glass and pour mezcal on top; do not stir the mezcal into the drink, as it should "float" on top.

1 tablespoon fruit powder seasoning, such as Tajin
1 tablespoon sea salt
1 tablespoon sugar
Ice, for chilling and serving
1 cup silver tequila, such as Herradura
3/4 cup fresh lime juice
6 tablespoons raw sugar
1/4 cup orange liqueur
1 teaspoon tamarind puree
Lime wedges, for serving

Steps:

  • Combine the fruit powder seasoning, salt and sugar in a shallow dish. Pour 1/4 cup water into a second shallow dish. Dip the rim of your glasses into the water first, and then into the fruit powder mixture to rim the glass. Place large ice cubes into a cocktail shaker, and then add the tequila, lime juice, raw sugar and orange liqueur. Shake well. Spoon the tamarind puree into the bottom of each glass, fill with ice cubes and pour the margarita mixture over. Serve with lime wedges.

Kosher salt, to rim glasses
4 ounces mezcal
1 ounce agave syrup
1 lime, juiced, plus one cut into wedges, for garnish
Smoked salt, for garnish

Steps:

  • Add kosher salt to a shallow dish and rim 2 rocks glasses. Fill the glasses with ice.
  • Add the mezcal, agave and lime juice to a cocktail shaker filled with ice and shake hard.
  • Divide the mixture between the glasses. Add a lime wedge and a sprinkle of smoked salt to each and serve.

Mango Mez-Garita with Tajín Rim image

Mezcal is tequila's smoky cousin. Both liquors are made from agave, but the roasting technique used for mezcal deepens its flavor and makes it perfect for what we think of as a "grown-up" margarita. Tajín, a chile-and-lime spice mix that's commonly sprinkled over fruit or vegetables, makes an ideal rim for the drink.

2 cups peeled diced mango
1/2 cup Tajín or other chile-lime seasoning
1 lime wedge, for moistening the rims of the glasses, and 2 lime wheels, for garnish
4 ounces lime juice
2 ounces mezcal
1 ounce orange liqueur, such as Gran Gala, Cointreau or Triple Sec

Steps:

  • To make the mango puree, combine the mango and 2/3 cup water in a blender. Pulse until you have a smooth puree, 5 or 6 times.
  • Place the Tajín in a small bowl or on small plate. Run the lime wedge around the rims of two 9- to 11-ounce margarita or high ball glasses. Gently press the glasses into the Tajín, coating the rim well.
  • Fill a large cocktail shaker with ice. Add the lime juice, mezcal, orange liqueur and some mango puree. Shake vigorously until the mixture is chilled and blended, about 10 seconds.
  • Fill the prepared glasses with ice, then pour the margarita carefully into the glass. Garnish with a lime wheel.
