Smokey Sausage, Kale & Sweet Potato Soup image

This soup is so versatile that it works with whatever you have on hand. If you don't love chickpeas, use cannellini, black or kidney beans. Or, take them out altogether. If you don't like kale add swiss chard or spinach. Feel free to switch up the spices if you prefer something a bit tamer.

1 tablespoon olive oil
1 medium onion, diced
3 cloves garlic, minced
1 large sweet potato, diced
3 cups Hillshire Farm® Smoked Sausage, sliced into 1-inch rounds
1 (19 ounce) can chickpeas
1 teaspoon paprika, sweet or smoked
½ teaspoon ground coriander
1 teaspoon ground chipotle pepper
½ teaspoon ground cumin
½ teaspoon salt, or to taste
6 cups low-sodium chicken stock
4 cups kale (or spinach)
1 teaspoon Crumbled feta cheese or goat cheese
1 teaspoon Freshly ground black pepper, for garnish

Steps:

  • Drizzle olive oil in a large pot over medium heat. Add the diced onion and cook until onions release some moisture, about 5 minutes. Stir in garlic, sweet potato, sausage, and chickpeas. Add paprika, coriander, chipotle powder, cumin, and salt. Cook for another 5 minutes, stirring once or twice.
  • Pour stock into the pot and bring to a simmer. Cook until sweet potato has softened, 10 to 15 minutes. Taste for seasoning; add more salt, if needed. Stir in the kale (or spinach) and cook for 1 minute until kale has wilted. Ladle into bowls and top with cheese, if using, and freshly ground pepper.

Bringing you this creamy, rich Sausage, Kale, and White Bean Soup! Herby Italian sausage, kale, smoky paprika, creamy beans and potatoes, and a splash of cream. This is a must-make for soup season!

1 tablespoon olive oil
1/2 yellow onion, thinly sliced
3-4 large cloves garlic, thinly sliced
1 pound ground Italian sausage (mild or hot)
1/2 to 1 teaspoon smoked paprika (optional)
1-2 tablespoons flour (optional, makes it a bit thicker)
5 cups chicken broth
one 15-ounce can of cannellini beans
4 medium potatoes, diced (any kind of potato will work)
2 stalks kale, ribs removed, chopped
3/4 cup heavy cream (can sub half and half)
1/2 teaspoon salt (more or less to taste)
freshly ground black pepper and lemon juice

Steps:

  • Heat the olive oil over medium-high heat. Add the onion and garlic; sauté for 10 minutes or until very soft and fragrant. Add the sausage and cook until browned. Drain out excess grease.
  • Add the smoked paprika and flour; sauté for one minute.
  • Add broth, a little at a time. Add potatoes; bring to a simmer over low heat. Cook for 10-15 minutes or until potatoes are tender. Add kale and white beans and simmer for another 5-10 minutes.
  • Add half and half, salt, pepper, and lemon juice to taste. VOILA!

This soup is probably my mom's favorite thing that I've ever made. The funny thing is, it's inspired by her guilty pleasure: the Olive Garden. I can see why she likes it, though-it's hearty, with bright green kale, homemade sausage, and a little Parmesan to take the savory flavor to a whole new dimension.

1 1/3 tablespoons fennel seeds
1 pound pork shoulder, boneless, cubed
1 tablespoon Espelette pepper
1 teaspoon red pepper flakes
Salt, to taste
2 tablespoons olive oil
5 cloves garlic
1 onion, diced
1 onion, diced
2 cloves garlic
7 cups chicken stock
3 Yukon Gold potatoes, peeled
1 tablespoon sherry vinegar
1 bunch kale, stems removed, roughly chopped
olive oil
Parmesan

Steps:

  • For the sausage: Heat a dry skillet and toast the fennel seeds until fragrant. Add toasted fennel to the pork along with the Espelette pepper, red chili flakes and a big pinch of salt. Toss and set aside. Over high heat, coat the bottom of a soup pot or Dutch oven with olive oil. Position the meat grinder over the pot. Add 5 whole garlic cloves and the onions to the meat mixture. Turn the grinder on high and run the sausage mixture through the grinder. Use the plunger if needed to push the meat through and into the heated soup pot to brown.
  • For the soup: When the sausage has begun to brown and caramelize, add the onions and garlic, roughly chopped, to the pot. Stir the sausage mixture so it doesn't stick to the bottom; then add olive oil and cook 2-3 more minutes. Add the stock and a pinch of salt, scrape the bottom of the pot with a wooden spoon, and cover. Bring to a rolling boil over high heat.
  • As the soup comes to a boil, thinly slice the potatoes on a mandoline. Stir them into the soup, making sure the slices come apart. Add plenty of freshly ground black pepper and another pinch of salt. Cover, bring back to a rolling boil, and continue to let boil for 20 minutes.
  • Finish the soup: Reduce heat to low and remove lid. The potatoes should be broken down and the soup thickened. Adjust the seasoning with salt and pepper; then stir in the vinegar. Pull the fibrous stem out of the kale leaves and discard; roughly chop the leaves and add to the soup to wilt. Ladle into bowls and serve with more pepper, salt, a drizzle of olive oil, and a fresh grating of Parmesan.

1 pound smoked kielbasa or Polish sausage, cut into 1/4-inch slices
3 medium Yukon Gold or red potatoes, chopped
2 medium onions, chopped
2 tablespoons olive oil
1 bunch kale, trimmed and torn
4 garlic cloves, minced
1/4 teaspoon pepper
1/4 teaspoon salt
2 bay leaves
1 can (14-1/2 ounces) diced tomatoes, undrained
1 can (15 ounces) garbanzo beans or chickpeas, rinsed and drained
1 carton (32 ounces) chicken broth

Steps:

  • In a Dutch oven over medium-low heat, cook the sausage, potatoes and onions in oil for 5 minutes or until sausage is heated through, stirring occasionally. Add kale; cover and cook for 2-3 minutes or until kale is wilted. Add garlic; cook 1 minute longer. , Add the remaining ingredients. Bring to a boil. Reduce heat; cover and simmer for 9-12 minutes or until potatoes are tender. Discard bay leaves.

1 large onion, chopped
4 garlic cloves, chopped
1 bay leaf, dried
1 lb kale, coarsely chopped

1 (15 ounce) can chickpeas, drained and rinsed
1 (28 ounce) can crushed tomatoes in puree
1 lb turkey kielbasa or 1 lb reduced-fat kielbasa, diced
43 ounces fat-free low-sodium chicken broth, 3 small cans
crushed red pepper flakes

Steps:

  • Heat oil in a deep pot over medium heat. Add onions, cook for 5 minutes until softened.
  • Add garlic, bay leaf, and kale to the pot. Cover and wilt the greens for 2 minutes. Season with salt, pepper and crushed red pepper to taste.
  • Add beans, tomato, kielbasa and broth to the pot and bring to a bubble. Reduce heat back to a simmer and cook for 10-15 minutes longer.

4 ounces smoked fully cooked sausage (such as kielbasa or hot links), sliced into rounds
2 3/4 cups canned low-salt chicken broth
3/4 pound small red-skinned potatoes, thinly sliced
1 cup dry white wine
5 cups thinly sliced trimmed kale leaves (about 3/4 of medium bunch) or 3/4 of 10-ounce package frozen chopped kale, thawed, drained
1/4 teaspoon caraway seeds, lightly crushed

Steps:

  • Sauté sausage slices in heavy medium saucepan over medium-high heat until beginning to brown, about 3 minutes. Add chicken broth, sliced potatoes and white wine and bring mixture to boil. Reduce heat to medium, cover and simmer until potatoes are almost tender, about 10 minutes.
  • Add kale and caraway seeds to soup. Simmer soup uncovered until potatoes and kale are very tender, about 10 minutes longer. Season soup to taste with salt and pepper. Ladle soup into bowls and serve immediately.
