1 tablespoon olive oil
1 onion, diced
2 garlic cloves, minced
1/4 teaspoon crushed red-pepper flakes
5 waxy potatoes (1 1/2 pounds), peeled and cut into 1/2-inch chunks
3 cans (14 1/2 ounces each) reduced-sodium chicken broth
1 bunch kale (12 ounces), stemmed and shredded
12 ounces smoked chicken sausage, cut into 1/2-inch half moons

Steps:

  • In a large pot (6 to 8 quarts), heat oil over medium. Add onion and cook until soft, stirring, 2 to 3 minutes. Add garlic and red-pepper flakes; cook unti fragrant, 1 minute. Add potatoes and broth; bring to a boil. Reduce heat; simmer until potatoes are tender, 10 to 15 minutes.
  • In a blender, puree half the soup. Return to pot; add kale and sausage. Simmer until kale is wilted, 10 to 15 minutes.

14 oz smoked sausage (diced)
½ tsp minced garlic
½ onion (diced)
1 TBS olive oil
4 cups 1 quart vegetable broth
2 15 oz cans fire roasted diced tomatoes
3 kale leaves (chopped)
2 small sweet potatoes (about 4 cups)
2 stalks celery (diced (about 1 cup))
2 large carrots (diced (about 1 cup))
2 cups green beans (fresh or frozen, chopped into 1" long pieces)
2 TBS Italian seasoning
Salt & Pepper to taste

Steps:

  • Add 1 TBS olive oil in a large skillet and heat over medium-high heat.
  • Add olive oil, diced sausage, onion and minced garlic to the skillet and cook until it the sausage is browned (about 10 minutes).
  • While the sausage is browning: add vegetable broth, diced tomatoes, chopped kale, sweet potatoes, celery, carrots green beans, and Italian seasoning to the pot of your slow cooker and stir to combine.
  • Add browned sausage, onions and garlic to the slow cooker and stir to combine.
  • Cook on high for 3-4 hours, or low for 6-8 hours until the sweet potatoes are fork tender.
  • Serve warm!

8 ounces mild Italian sausage, casings removed
1 teaspoon salt

1 large yellow onion, chopped

5 cups chicken broth
3 cups cubed sweet potato
1 bay leaf
1 (15 ounce) can great northern beans, drained
1 (15 ounce) can diced tomatoes, undrained
5 cups chopped kale, or to taste

Steps:

  • Heat olive oil in a large pot over medium-high heat. Add hot sausage, mild sausage, salt, and pepper; cook, breaking up sausage with the back of a wooden spoon, until no longer pink, about 5 minutes.
  • Stir onion and celery into the pot; cook and stir until onion is soft and translucent, about 5 minutes. Stir in garlic until fragrant, about 30 seconds. Add chicken broth, sweet potato, and bay leaf. Bring to a boil; cook over medium-high heat for 10 minutes.

Start this potato soup recipe by caramelizing Italian sausage and it will taste like you spent much longer than 35 minutes simmering comfort food creation!

2 tablespoon olive oil
8 ounce bulk Italian sausage
2 onions, chopped (about 2 cups)
1 teaspoon dried oregano, crushed
1 teaspoon fennel seeds
Kosher salt and freshly ground black pepper
2 Yukon Gold potatoes (1 lb), cut into 1-inch pieces
8 cup chicken stock from Whole Poached Chicken with Bonus Stock, or purchased chicken stock
1 bay leaf (optional)
1 15-16 ounce can cannellini beans, rinsed and drained
1 large bunch kale, stemmed and leaves torn (10 to 12 cups)
2 tablespoon red wine vinegar
Grated Parmesan cheese

Steps:

  • Heat oil in an 8-quart stock pot or Dutch oven over medium-high. Add sausage and break it up with a wooden spoon into bite-size pieces. Let sausage pieces cook without stirring until brown on the bottom, 2 to 3 minutes. Using tongs, flip sausage pieces over and leave them until cooked through and golden brown, 2 to 3 minutes more.
  • Transfer sausage to a plate lined with paper towels, leaving the fat and oil behind in the pan. Cover sausage with aluminum foil to keep in any moisture; set aside.
  • Return pot to medium and add onions, oregano, fennel seeds, 1 teaspoon salt, and 1 teaspoon pepper. Cook, stirring often, until the onions are translucent and soft, 10 to 12 minutes. 1 pound sweet Italian sausage (casings removed)
1 tablespoon olive oil
1 large yellow onion (chopped)
1 teaspoon salt
1/2 teaspoon pepper
4 garlic cloves (grated or finely minced)
2 large sweet potatoes (peeled and chopped into 1/2" cubes, about 3 cups)
4 cups chicken stock
1 bay leaf
1 bunch kale (stems removed and chopped)

Steps:

  • Heat a large pot over medium high heat. Cook the sausage in the olive oil, breaking it up with the back of a wooden spoon until almost cooked thru, about 5 minutes. Add in the onion, salt and pepper, and cook until turning translucent, another 5 minutes, stirring occasionally. Add in the garlic and cook until fragrant, 30 seconds. Add in the sweet potatoes, chicken stock and bay leaf. Cook partially covered over medium heat until the sweet potatoes are tender, 20 minutes.

2 tablespoons butter
3 potatoes, peeled and diced
2 stalks celery, chopped

1-1/2 lbs nitrate-free smoked sausage, sliced
1 large yellow onion, finely diced
4 cloves garlic, minced
2 tsps smoked paprika
1/2 tsp chili powder
4 large sweet potatoes, peeled and diced
6 cups bone broth
4 heaping cups roughly chopped baby spinach or kale
sea salt and freshly ground black pepper, to taste, about 1/4 teaspoon each

Steps:

  • Heat oil in a large dutch oven or stock pot over medium heat. Add sliced sausage and saute for 3-4 minutes, stirring frequently until nicely browned.
  • Stir in the onion, garlic, paprika, and chili powder. Continue to cook for 3-4 minutes.
  • Add in your diced sweet potatoes, broth and bring to a boil. Once it starts bubbling, reduce heat and simmer, covered for 20 minutes, or until potatoes are tender.
  • To make your soup a bit creamier, once it's done cooking, remove some of the sweet potatoes onto a plate. Using a fork mash, then return to the soup together with the spinach/kale. Stir well to combine and wilt the spinach.
  • Taste, then season with sea salt and pepper.
