TURKEY SOUP FOR THE SLOW COOKER
This is how I take care of the turkey carcass. But you can make this soup by following the directions and using 12 cups of chicken broth with 1/2 teaspoon of poulty seasoning. You can freeze the carcass and make the broth when convenient for you.

Steps:
- Turkey Broth:.
- Put the turkey carcass in your slow cooker on Low with an onion, celery stalk,a carrot, salt and pepper,bay leaf, 1/2 poultry seasoning, 2 teaspoons chicken powder and water. Cook on Low overnight.
- Next morning, strain the both and pour it back in the slow cooker.
- Remove turkey meat from bones, set meat aside.
- Soup:.
- In the slow cooker with the broth, add onions, garlic, carrots, celery, thyme, salt and pepper.
- Cook at High for 4 hours; add turkey, noodles, and parsley.
- Cook another 1/2 hour.
- Enjoy!
- NOTE: Cooking time doesn't include the overnight that your broth is cooking.

- In a slow cooker, cover beans with cold water; let sit overnight. Drain beans and return to slow cooker.
- Season turkey with salt and pepper. In a large skillet, heat 1 tablespoon oil over medium-high. In two batches, brown turkey on all sides, adding 1 tablespoon oil for second batch, about 10 minutes total. With a slotted spoon, transfer meat to slow cooker. Return pan to heat and add 1 tablespoon oil, onion, and garlic. Cook, stirring occasionally, until onion is translucent, 4 minutes. Add wine and bring to a boil, stirring and scraping up any browned bits with a wooden spoon. Boil 1 minute, then add mixture to slow cooker.
- Add 1 1/2 cups water and lemon zest to slow cooker. Season with salt and pepper. Cover and cook on high 6 hours. (Beans should be tender and turkey will be just beginning to fall apart.) Add lemon juice and stir. Serve stew with lemon wedges.

- Remove the turkey from the fridge 30 minutes before cooking. If using frozen meat, make sure it is fully defrosted.
- Rub the turkey all over with the butter, salt and freshly ground pepper, then grate over the nutmeg.
- Put the onion, carrot, garlic, thyme, bay leaves and cider (or dry white wine) in the slow cooker, then add the turkey, skin-side up. Close the lid.
- Cook for 6 hours on low without opening the lid. After 6 hours, remove the turkey from the slow cooker and place on a large, warmed plate. If you have a meat thermometer, check that the meat has reached 70C/158F in the centre. Leave to rest, loosely covered with kitchen foil, for around 10 minutes.
- Meanwhile, make the gravy by straining the juice from the slow cooker into a saucepan. Place on a low-medium heat.
- In a cup, mix the cornflour with the milk, then whisk this mixture into the warm meat juices. Bring to a simmer and cook on a low-medium heat for a few minutes until thickened.
- Serve the turkey in slices with the gravy, and trimmings and sides of your choice.
