- In a large resealable plastic bag, combine the flour, salt and pepper. Add beef, a few pieces at a time, and shake to coat. In a large skillet, brown meat on both sides in 4 teaspoons oil. Place in a 5-qt. slow cooker., In the same skillet, saute onion in remaining oil until lightly browned; place over beef. Combine the soup, oregano and thyme; pour over onion. Cover and cook on low for 7-8 hours or until meat is tender.

SLOW COOKER SWISS STEAK
I threw this together in my crock pot one day and we loved it! A little time consuming because I sauteed the vegetables and browned the meat first, but it's well worth it. Browning the meat first gives it a better flavor. This is great with mashed potatoes!

- In a shallow bowl, mix the flour, salt, and pepper. Lightly coat the round steak pieces in the flour mixture.
- Heat the oil in a skillet over medium heat, and saute the celery, onion, and carrots about 5 minutes, until tender. Remove from heat, and set aside. Mix in the round steak pieces, and cook until lightly browned.
- Place the vegetables and steak in a slow cooker. Mix in the tomatoes with juice, Worcestershire sauce, and brown sugar.
- Cover, and cook 8 to 10 hours on Low, until the round steak is very tender.

- Preheat broiler or prepare barbecue.
- Season steak with garlic salt and pepper.
- Score steak diagonally twice, reversing direction creating "x"s or crisscross pattern.
- Place bacon lengthwise over steak and sprinkle with parsley.
- Roll steak lengthwise, securing with toothpicks at 1-inch intervals.
- Broil or grill, turning frequently until browned on all sides and cooked to degree of doneness desired (20 minutes for med rare).
- While steak is grilling/broiling, cook mushroom and onion slices in bacon grease in same skillet for 15-20 minutes or until browned to desired doneness.
- When steak is done remove toothpicks and cut meat into 8 1-inch rounds and top with mushroom and onion slices.
ROLLED FLANK STEAK
I searched and searched for just the right rolled flank steak recipe and couldn't find it. So, I created my own! This was a big hit when I made it for company.

- Place the flank steak on a cutting board with the short end closest to you. Starting from one of the long sides, cut through the meat horizontally to within 1/2 inch of the opposite edge. (You can also ask your butcher to butterfly the flank steak for you instead of cutting it yourself.)
- Mix the soy sauce, olive oil, and steak seasoning together in a gallon-sized resealable plastic bag. Marinate flank steak in the refrigerator 4 hours to overnight.
- Preheat oven to 350 degrees F (175 degrees C). Grease a glass baking dish.
- Lay out the flank steak flat in front of you with the grain of the meat running from left to right. Layer the provolone across the steak, leaving a 1-inch border. Arrange the bacon, spinach, red pepper, and mushrooms across the cheese covered steak in stripes running in the same direction as the grain of the meat. Roll the flank steak up and away from you, so that when the roll is cut into the pinwheel shape, each of the filling ingredients can be seen. Roll firmly, but be careful not to squeeze the fillings out the ends. Once rolled, tie every 2 inches with kitchen twine.
- Place in prepared baking dish, and bake in preheated oven for one hour, or until the internal temperature reaches 145 degrees F (65 degrees C). Remove from the oven and let rest for 5 to 10 minutes before cutting into 1 inch slices. Be sure to remove the twine before serving!

- If not precut, cut beef into strips.
- Lay a piece of bacon on top of each piece of beef and roll up. Secure each with a toothpick.
- Season with salt and pepper.
- Fry remaining bacon in large skillet and crumble. Reserve bacon fat in pan.
- Sear roll-em-ups on all sides in bacon fat.
- Put roll-em-upa, bacon pieces,onion,and mushrooms in a crock pot set to low.
- Add more salt and pepper to your taste.
- Cook 6 hours.
- Stir together cornstarch and water and mix in gently to thicken sauce.
- Serve over or alongside mashed potatoes.(remember to remove toothpick!).
- Enjoy!

- Place onions in slow cooker. Cut steak into 8 equal pieces. Spread with mustard; top with bacon and pickles. Roll up each steak piece, starting at one short side; tie with kitchen string to secure.
- Heat oil in large nonstick skillet on medium heat. Add roll-ups; cook 3 to 4 min. or until evenly browned, turning occasionally. Transfer to slow cooker. Add wine and bouillon cube; cover with lid.

- Prep the beef: If your beef comes in fairly long pieces, cut them in half, we're looking for pieces that are about 4x4-inches (roughly cut).
- Prepare the rouladen: Easiest way to do this is to assemble a bunch of rouladen at once, as in an assembly line (see picture above), so lay the pieces of beef on a cutting board, as many as you can fit. Start by spreading about a teaspoon of mustard on each piece of beef, followed by a tsp of onion, a piece of bacon, season with a bit of salt and pepper. Next add a piece of carrot and pickle, you may add 2 of each, depending how big they are. Roll them up and secure each rouladen with a toothpick. Repeat with remaining ingredients.
- Sear the rouladen: Heat a bit of the vegetable oil in a frying pan or skillet. Add a few rouladen to the skillet, about 6 or so depending on the size of your skillet, but don't overcrowd. Sear the rouladen on all sides. Transfer the seared rouladen to a large Dutch oven that's oven safe and has a lid.
- Make the gravy: In that same skillet make gravy from the drippings. In a bowl whisk together 1 cup of flour with about 3 to 4 cups of water. Pour about 1 cup of this slurry in the skillet with the drippings. Whisk until it starts to thicken and the flour cooks a bit then add about 1/4 cup of red wine. Continue cooking for a couple more minutes while whisking, then pour this gravy over the seared rouladen in the Dutch oven. Clean the skillet and repeat with remaining ingredients. You might need to do this in 3 or 4 batches. There should be enough gravy to cover all the rouladen.
