SLOW-COOKER CHICKEN SAUSAGE WITH CABBAGE & APPLES



Slow-Cooker Chicken Sausage with Cabbage & Apples image

The cabbage comes out tender without being mushy and gives the slow-cooker chicken sausage a slightly sweet flavor. A splash of vinegar at the end perks up the whole meal with a bit of acidic brightness. There are several varieties of smoked chicken sausage from which you can choose. We recommend using an apple-flavored smoked sausage to complement the apples and vinegar.

1 medium head green cabbage, cored and cut into 16 wedges (about 2 pounds)
2 Granny Smith apples, cored and cut into 1-inch-thick wedges (about 20 ounces)
¼ teaspoon kosher salt
½ teaspoon smoked paprika
½ teaspoon black pepper
2 ½ tablespoons olive oil
1 (13 ounce) package smoked chicken sausage, cut diagonally into 2-inch pieces
3 tablespoons apple cider vinegar, plus more for serving
¼ cup unsalted chicken stock
1 bunch Fresh flat-leaf parsley leaves

Steps:

  • Toss together the cabbage, apples, salt, paprika, pepper, and 1 1/2 tablespoons of the olive oil in a 5- to 6-quart slow cooker. Cover and cook on HIGH until the vegetables are tender, 5 to 6 hours.
  • Heat the remaining 1 tablespoon oil in a large nonstick skillet over medium-high. Add the sausage, and cook, turning to brown on all sides, about 4 minutes. Remove from the heat; add 3 tablespoons of the vinegar. Return to the heat, and cook until most of the liquid evaporates, about 30 seconds. Add the stock to the skillet; bring to a boil, scraping to loosen the browned bits from the bottom of the skillet. Spoon over the vegetable mixture in the slow cooker. Cover and cook on HIGH until the flavors come together, about 1 hour. Garnish with the fresh parsley leaves, if desired, and serve with a splash of apple cider vinegar.

2 pounds smoked kielbasa or Polish sausage, sliced
1 jar (24 ounces) chunky applesauce
1/2 cup packed brown sugar
1/2 cup chopped onion

Steps:

  • Combine all ingredients in a 4- or 5-qt. slow cooker. Cook, covered on low, until heated through, 3-4 hours.

This sausage and apple stuffing is a hybrid of my mother-in-law's recipe and my family's recipe. I tried it this Thanksgiving, and both sides of the family loved it.

1 loaf white sandwich bread
½ pound sage-flavored bulk breakfast sausage
2 tablespoons butter
1 cup finely chopped onion
¾ cup diced celery
1 medium Golden Delicious apple, chopped
⅓ cup chopped fresh parsley
2 tablespoons chopped fresh sage
1 tablespoon chopped fresh rosemary
2 teaspoons chopped fresh thyme
1 teaspoon salt
¼ teaspoon ground black pepper
1 cup chicken broth, or more as needed
⅓ cup unsweetened applesauce
1 large egg
cooking spray

Steps:

  • Tear bread into small pieces and spread out on a baking sheet. Let dry at room temperature for 8 hours or overnight.
  • Heat a large skillet over medium-high heat. Cook and stir sausage in the hot skillet until browned and crumbly, 5 to 7 minutes. Remove sausage to a paper towel-lined plate to drain. Drain and discard grease from the skillet.
  • Melt butter in the same skillet over medium heat; stir in onion and celery. Cook and stir until very tender, about 10 minutes. Add sausage, apple, parsley, sage, rosemary, thyme, salt, and pepper. Cook for 2 minutes, then remove from heat.
  • Put dried bread pieces into a large bowl. Pour sausage mixture over bread and mix.
  • Combine chicken broth, applesauce, and egg in a bowl. Pour over bread mixture and mix well. Add more broth, as needed, to moisten all the bread. Don't add too much now; more can always be added later if needed.
  • Spray the inside of a slow cooker with cooking spray. Pour stuffing mixture into the slow cooker; cover and cook on High for 1 hour. Reduce heat to Low and cook for 4 hours; stir the stuffing halfway through cooking, scraping the sides and adding more broth if it seems dry.

Steps:

  • 1. Heat oil in a large pan on a medium heat, fry the sausages 5 mins turning frequently.
  • 2. Scatter over the onion, and cook for another 5 mins until softened.
  • 3. Increase the heat and add the rosemary and apples, and cook for 3-4 minutes till the apple changes colour.
  • 4. Add the cranberry sauce and mustard to the stock and stir, then add the stock to the pan too.
  • 5. Bring to the boil and simmer uncovered for 10 mins.
  • 6. Season to taste and serve with mashed potatoes (sweet potatoes work well with this dish)

1 lb fresh sauerkraut or 1 lb canned sauerkraut
1 lb smoked sausage (for a low-fat version) or 1 lb smoked turkey sausage (for a low-fat version)
3 tart cooking apples, thinly sliced
1/2 cup packed brown sugar
3/4 teaspoon salt
1/8 teaspoon pepper
3/4 cup apple juice or 3/4 cup cider

Steps:

  • Rinse sauerkraut and squeeze dry.
  • Cut sausage into 2-inch pieces.
  • Put 1/2 the sauerkraut in the slow cooker.
  • Add the sausage pieces on top.
  • Continue to layer remaining ingredients in slow cooker in the order listed.
  • Top with remaining sauerkraut.
  • Do not stir the layers.
  • Cover.
  • Cook on high 4 hours, or low 6-7 hours.
  • Stir before serving.
