CROCK POT STUFFING

Easy stuffing made from scratch and cooked to perfection in your slow cooker.

Number Of Ingredients 12

1 cup butter
½ teaspoon black pepper
½ teaspoon salt or to taste
2 teaspoons poultry seasoning (store bought or homemade)
2 medium onions (diced)
2 cups celery (chopped)
6 cups cubed and dried white bread
6 cups cubed and dried brown bread
¼ cup chopped parsley
1 tablespoon fresh herbs, or more to taste (thyme, sage, rosemary (optional))
3-4 cups chicken broth
2 eggs

Steps:

  • Heat butter over medium heat until melted. Stir in poultry seasoning, black pepper and salt to taste. Add celery & onions and cook until softened (do not brown). Cool completely.
  • Place bread cubes in a large bowl. Add cooled celery and onion mixture, parsley and fresh herbs if using.
  • Add chicken broth a little bit at a time just to moisten and gently stir. You may not need all of the broth (see note below). Stir in eggs.
  • Cover and refrigerate overnight if making ahead of time.
  • Grease a 5-6 qt slow cooker well. Place stuffing in the slow cooker and turn onto high for 30 minutes. Reduce temperature to low and cook an additional 3-4 hours or until hot and cooked through. If stuffing is done before your meal is ready it can remain on warm.

2 1/2 pounds (1.25kg) high-quality sandwich bread or soft Italian or French bread (about 2 loaves), cut into 3/4-inch dice (about 5 quarts)
8 tablespoons butter (1 stick; 4 ounces; 115g), plus more for buttering slow cooker
1 1/2 pounds (680g) sage sausage, removed from casing
1 large onion (about 12 ounces; 350g), finely chopped (about 2 cups)
4 large ribs celery (about 12 ounces; 350g), finely chopped (about 2 cups)
2 cloves garlic, minced or grated on a Microplane
1/4 cup minced fresh sage leaves (or 2 teaspoons dried sage leaves)
Kosher salt and freshly ground black pepper, if needed (see note)
24 ounces low-sodium chicken or turkey broth (3 cups; 720ml), preferably homemade
3 whole eggs
1/4 cup minced parsley leaves, divided

Steps:

  • Adjust oven racks to lower-middle and upper-middle positions. Preheat oven to 275°F (135°C). Spread bread evenly over 2 rimmed baking sheets. Stagger trays on oven racks and bake until completely dried, about 50 minutes total, rotating trays and stirring bread cubes several times during baking. Remove from oven and allow to cool. Turn off oven.
  • In a large Dutch oven, melt butter over medium-high heat until foaming subsides (do not allow butter to brown), about 2 minutes. Add sausage and mash with a stiff whisk or potato masher to break up into fine pieces (largest pieces should be no bigger than 1/4 inch). Cook, stirring frequently, until only a few bits of pink remain, about 8 minutes. Add onions, celery, garlic, and sage and cook, stirring frequently, until vegetables are softened, about 10 minutes. Remove from heat and add half of chicken stock.

1/2 cup unsalted butter or 1/2 cup olive oil
2 large yellow onions, minced
4 celery ribs, chopped
1 tart apples, peeled, cored, and chopped or 1 large carrot, peeled and chopped
1 loaf French bread, cut into small cubes
1 (7 ounce) package seasoned stuffing mix or 2 cups crumbled day-old cornbread
1/2 cup flat leaf parsley, chopped
1 1/2 teaspoons dried sage
1 1/2 teaspoons dried thyme
1 1/2 teaspoons dried marjoram
1 teaspoon salt
black pepper
1 large egg, beaten
1 1/2-1 3/4 cups turkey broth or 1 1/2-1 3/4 cups chicken broth, as needed
2 tablespoons unsalted butter, cut into pieces

Steps:

  • In a large skillet, heat the butter until melted over medium-high heat; Add the onions, celery, and apple and cook, stirring occasionally, until softened, about 5 minutes.
  • Put the bread and stuffing mix in a large bowl; Add the parsley, dried herbs, salt, and pepper and toss to combine.
  • Pour the sauteed vegetables over the bread cubes and mix together; Add the egg and enough of the broth, stirring, until the ingredients are evenly moistened. Taste to adjust the seasonings.
  • Coat the slow cooker with butter, olive oil, or nonstick cooking spray.
  • Pack the stuffing lightly into the cooker which allows for expansion as it heats up.
  • Dot with butter pieces and sprinkle with a few more tablespoons of chicken broth.
  • Cover and cook on HIGH for 1 hour.
  • Reduce the heat to LOW and cook until puffy and nicely brown around the edges, 4-5 hours.
  • NOTE: The dressing can sit in the coooker, covered, on KEEP WARM for 2-3 hours before serving.
  • Serve hot right out of the crock if you wish.
  • FACTS: A 1-lb. loaf of bread will yield about 6 cups of cubed bread, 1 1/2-lb.=10 cups, 2-lb.=12 cups.
  • White bread will give a lighter textured stuffing than whole wheat or whole grain.
  • You will serve about 1/2 to 1 cup of stuffing per person.

Here's a Crock-Pot stuffing recipe I found in the Calgary Herald and thought I'd share it. I'm going to use it for Christmas with the vegetable stock for my vegetarian so I will add my comments after Christmas.

2 cups chopped onions
1 1/2 cups thinly sliced celery
1 cup diced tart apple, peeled and cored
1/4 cup butter
1 tablespoon ground sage
1 teaspoon ground marjoram
1 teaspoon salt
1 teaspoon pepper
1/2 teaspoon savory
1/2 teaspoon thyme
12 cups lightly toasted bread, cubes
1/4 cup fresh parsley, chopped
1 1/2 cups chicken stock or 1 1/2 cups vegetable stock

Steps:

  • In a large fry pan saute onions, celery and apple in butter until onion is just translucent.
  • Stir in sage, marjoram, salt, pepper, savory and thyme.
  • Combine vegetable mixture with the bread cubes and parsley.
  • Toss well.
  • Pour stock over mixture, tossing well.
  • Spoon into your crock-pot.
  • Cover and cook on high for one hour.
  • Reduce to low and continue cooking for 2-3 hours, stirring every hour.
  • As stated for Vegetarians use vegetable stock.
