Tomato- and pepper-based ranchero sauce works great for dishes other than Huevos Rancheros. We've added it to the slow cooker with everyone's favorite easy app - chicken wings - for a savory, less fiery, take on wings.

3 lb chicken wing sections
2 packages (0.85 oz each) Old El Paso™ chicken taco seasoning mix
1 can (14.5 oz) Muir Glen™ organic fire roasted diced tomatoes, drained
1 can (10 oz) Old El Paso™ enchilada sauce
1 can (4.5 oz) Old El Paso™ chopped green chiles
1 medium onion, quartered
2 medium serrano chiles, seeds and stems removed
5 cloves garlic
1 teaspoon ground cumin

Steps:

  • Spray 6-quart slow cooker with cooking spray. Add chicken wings and taco seasoning mix; toss to coat.
  • Add remaining ingredients to blender. Cover; blend 30 to 60 seconds or until smooth.
  • Pour tomato mixture over chicken in slow cooker. Stir to coat chicken. Cover; cook on Low heat setting 3 1/2 to 4 1/2 hours or until chicken is cooked through (at least 165°F).
  • Set oven control to broil. Spray large rimmed sheet pan with rack with cooking spray. Place chicken in single layer on rack in pan; reserve sauce. Broil 4 inches from heat 5 to 7 minutes, turning once, until browned.
  • Stir sauce in slow cooker; serve with chicken wings.

1 6 oz. can tomato paste
3 Tbsp homemade taco seasoning
1 lb. boneless skinless chicken breast
1 lb. boneless skinless chicken thighs
Salt and pepper to taste

Steps:

  • Whisk together the diced tomatoes with their juices and the tomato paste in the base of the slow cooker. Stir in the taco seasoning.
  • Add the chicken breast and thighs to sauce and spoon the sauce over the top. Set the slow cooker on low and cook for 8 hours.
  • Once cooked, pull apart the chicken with 2 forks and serve in tacos, on tostadas, or in enchiladas. Enjoy!

Crock Pot Ranchero Chicken is slow cooked chicken in a zesty Ranchero Sauce. Use for tacos, enchiladas, nachos, or tostadas!

Number Of Ingredients 15

2lbs chicken breasts
2 cups chicken broth
1 teaspoon salt
1/2 teaspoon pepper + shake red pepper flakes
juice of 1/2 lime
1 Tablespoon extra virgin olive oil
1 large shallot or 1/2 onion, chopped
1 green bell pepper, chopped
1 jalapeño pepper, seeded and minced
3 cloves garlic, minced
2 teaspoons cumin
1/4 teaspoon (or more) cayenne pepper
4 cups chicken broth
15oz can crushed tomatoes
1/3 cup chopped fresh cilantro

Steps:

  • For the Ranchero Sauce: Heat olive oil in a large skillet over medium-high heat. Add shallot, bell pepper, and jalapeno pepper, season with salt and pepper, then saute until vegetables are tender, 5 minutes. Add garlic, cumin, and cayenne pepper then saute for 1 more minute. Add chicken broth and crushed tomatoes then turn heat to high to bring liquid to a boil. Reduce heat slightly then boil, stirring often, until sauce reduces by half (3 cups,) about 20 minutes. (A splatter screen is very helpful, especially near the end.) Taste then add salt and pepper if necessary, and then stir in fresh cilantro.
  • To a large, 5-6 quart crock pot, add the chicken broth, salt, pepper, red pepper flakes, lime juice, chicken breasts and 2 cups Rancher Sauce. Cover and cook on low for 4-5 hours then shred chicken and place back in the juices to cook on low for 1 more hour. Scoop chicken into a storage container then mix with remaining Ranchero Sauce. Use chicken as filling for tacos, enchiladas, nachos, or tostadas.

I have a love/hate relationship with nachos. The love part? How can one not appreciate a giant platter of crunchy carbs topped with all the shredded meats and all the melted cheeses and spicy what nots and more crunchy do dads and cool, creamy sauces and salsas? It's a no-brainer. The hate part? My unruly lack of self control when it comes to all the things. This version is blanketed with a world of ranchy shredded chicken and green bell peppers, so there's just no way to prepare you or your mouth for what's about to happen.

1 pound boneless skinless chicken breasts
1 pound boneless skinless chicken thighs
1 green bell pepper, sliced
One 1-ounce packet (about 3 tablespoons) dried ranch dressing seasoning
1/3 cup chicken stock
1 bag tortilla chips (blue, yellow, whatever)
1 cup shredded Cheddar (about 4 ounces)
1/2 cup crumbled queso fresco
1/4 small red onion, thinly sliced (about 1/4 cup)
1 jalapeno, thinly sliced
1/2 cup fresh cilantro leaves
2 scallions, thinly sliced
Salsa and ranch dressing, for serving, optional

Steps:

  • Toss the chicken, bell pepper, ranch seasoning and stock in a slow cooker. Cook on high for 4 hours (or low for 6 to 8 if you need to!). Use two forks to shred the chicken then remove to a plate.
  • Preheat your oven to broil.
  • Spread out the chips on a large rimmed baking sheet. Top with the shredded chicken, bell pepper, both cheeses, red onion and jalapeno. Broil for a few minutes, until the cheese melts.
  • Top with the cilantro and scallions, and drizzle with the salsa and ranch dressing if desired.

I do not remember where this recipe came from, originally it called for beef chuck. I've modified it and now make it with chicken. It's always well received at my house. You can make it mild or hot, depending on the type of salsa you choose. Serve with a salad and some warmed up tortillas.

4 boneless skinless chicken breasts, cut into strips
2 tablespoons olive oil
1 cup chopped onion
1 clove garlic, minced
1 (4 ounce) can green chilies
1 1/2 cups chicken broth
1 (7 ounce) can green chili salsa
1 cup cheddar cheese, cubed
3 cups hot cooked rice

Steps:

  • Saute chicken over medium heat,in olive oil about 5 minutes.
  • Add onions and continue cooking until chicken is done and onions are soft (about 10 more minutes).
  • Add garlic, green chiles and broth.
  • Bring to boiling.
  • Reduce heat and simmer, covered for 30 minutes.
  • Stir in salsa.
  • Bring to a boil.
  • Remove from heat.
  • Gently fold in cubed cheddar cheese.
  • Serve immediately over beds of rice.
