CHICKEN PARMESAN DRUMSTICKS

Here, chicken Parmesan is transformed into a one-pan meal you can eat out of hand. The drumsticks are oven-fried, then topped with marinara sauce and mozzarella and baked until the cheese is gooey.

1 1/2 cups seasoned Italian breadcrumbs
5 tablespoons canola oil
Kosher salt and freshly ground black pepper
8 chicken drumsticks (about 2 pounds), skin on, at room temperature
1 1/2 cups jarred marinara sauce, warmed, plus more for serving
1/3 cup grated Parmesan (about 1 ounce)
6 ounces part-skim mozzarella, thinly sliced into 1/8-inch pieces

Steps:

  • Position an oven rack on the lowest shelf and preheat the oven to 450 degrees F. Combine the breadcrumbs, oil, 1/2 teaspoon salt and 1/4 teaspoon pepper in a large resealable plastic bag. Put the drumsticks in a large bowl and toss to coat with 1 tablespoon water. Place the drumsticks in the bag with the breadcrumbs and shake well to coat, pressing the breadcrumbs firmly into the meat. Arrange the drumsticks in a circle on a 9-inch pie dish with the tips facing out (they may rest on the rim of the dish). Bake until the breadcrumbs are dark golden and the internal temperature registers 165 degrees F on an instant-read thermometer (avoid touching bone), 30 to 35 minutes.
  • Divide the sauce evenly over the drumsticks. Sprinkle the Parmesan over the top and lay 1 slice of mozzarella on top of each drumstick. Return the drumsticks to the oven and cook until the cheese is melted and bubbly, about 10 minutes. Serve.

My family loves this recipe. I use perdue perfect portions boneless skinless breasts and ragu extra meat spaghetti sauce when making this. This is quick and easy to make. There are never any leftovers.

6 boneless skinless chicken breasts
2 cups shredded parmesan cheese
1 tablespoon dried parsley
1 tablespoon dried basil
1 tablespoon dried oregano
olive oil flavored cooking spray
spaghetti sauce
1 1/2 cups 2% shredded mozzarella cheese

Steps:

  • Preheat oven to 400.
  • Combine parmesan cheese, parsley, basil and oregano in a baggie.
  • Wash each breast with water and put in cheese mixture.
  • Spray 11 x 13 pan wih olive oil cooking spray.
  • Make sure each piece is coated with cheese and place each breast in pan and dump remaining cheese mixture on top.
  • Cook for 20-25 minutes until chicken is done.
  • Top with spaghetti sauce and then add mozzarella cheese.
  • Bake unitl cheese is melted, about 5 minutes.
  • Serve with a side of spaghetti, salad and garlic bread.

12 chicken drumsticks
2 cups grated Parmesan cheese
1 egg
1 teaspoon ground black pepper
1 teaspoon salt

Steps:

  • In a shallow bowl, mix together salt, pepper, and cheese. In a separate bowl, beat egg until lemon colored. Dip chicken in egg, coating well. Roll in cheese.
  • Bake at 400 degrees F (205 degrees C) for 45 minutes, or until brown.

12 skinless chicken legs, without thighs
1/2 cup 2% low-fat milk
1/2 cup fine breadcrumbs
1/4 cup finely grated parmesan cheese
1 tablespoon italian seasoning
1/2 teaspoon garlic powder
1/8-1/4 teaspoon cayenne pepper
vegetable oil cooking spray
1 dash coarse salt

Steps:

  • Dry chicken with paper towel.
  • Put chicken into a medium bowl and pour milk over; let stand, stirring occasionally for 15 minutes.
  • Meanwhile; to a zip lock plastic bag, add the bread crumbs, parmesan cheese, Italian seasoning, garlic powder and cayenne pepper, close bag and shake to mix.
  • Take one leg at a time, coated with milk and add to zip lock bag, close bag and massage parmesan mixture on to leg until well coated.
  • Place on veggie sprayed rack of broiler.
  • Repeat until all legs are on broiler rack.
  • Sprinkle any parmesan mixture, left in bag, over chicken on rack.
  • Preheat oven to 350f degrees.
  • Place broiler on middle rack in oven for 30 to 40 minutes, or until brown and crisp.
  • Turn with tongs after the first 15 or 20 minutes.
  • Remove to warm serving platter and sprinkle with course salt to taste.
