SKILLET ROASTED CARROTS!
This recipe is from Tom Colicchio, the head judge of Top Chef. I got this recipe from Today's Kitchen cookbook(recipes made on the Today news show). It's simple and delicious! Baby carrots were used for this dish, but feel free to use large carrots, cut to size.

Steps:
- Peel the carrots, trim them, leaving an inch or so of the green top( I use prepackaged baby carrots with no tops).
- Heat a large skillet over medium heat. Add the oil, then the carrots. Salt and pepper them.
- Cook, rolling the carrots so they color on all sides, until they are golden, about 5 minutes. Add the buttter and rosemary and continue cooking until the carrots are tender, about 5 more minutes.
- Drain the carrots on paper towels befoe serving. Enjoy!
ORANGE GLAZED CARROTS
Orange Glazed Carrots are a simple but delicious side dish, featuring buttery, marmalade glazed carrots, pecans, fresh ginger and cinnamon!

Steps:
- Cook frozen sliced carrots until tender, according to package instructions (usually 6-8 minutes). When done, drain water from pan. Set carrots aside.
- Make The Glaze: Melt butter in a skillet, on very low heat. Add orange marmalade, and stir to combine. Continue to cook on low heat. Add finely grated fresh ginger, followed by the chopped pecans, stirring to combine.
- Now add the cooked, drained carrots to the skillet. Stir well, to coat carrots with glaze. Sprinkle with cinnamon. Stir to combine, and heat on low until the carrots are fully heated through. Serve hot, and enjoy!

- Preheat the oven to 400 degrees F.
- If the carrots are thick, cut them in half lengthwise; if not, leave whole. Slice the carrots diagonally in 1 1/2-inch-thick slices. (The carrots will shrink while cooking so make the slices big.) Toss them in a bowl with the olive oil, salt, and pepper. Transfer to a sheet pan in 1 layer and roast in the oven for 20 minutes, until browned and tender.
- Toss the carrots with minced dill or parsley, season to taste, and serve.
MARMALADE-GLAZED CARROTS WITH CANDIED PECANS

- Melt 2 tablespoons butter in a large skillet over medium-high heat. Stir in the marmalade, then add the carrots, orange juice, brown sugar, 1/2 teaspoon salt, and pepper to taste. Bring to a boil, then cover and reduce the heat to medium low. Simmer, stirring occasionally, until the carrots are almost tender, 13 to 15 minutes.
- Uncover and add the remaining 2 tablespoons butter to the skillet. Increase the heat to medium high and cook, stirring, until the liquid is reduced, 8 to 10 minutes. Transfer to a platter and sprinkle with the candied pecans.

- In a non-stick skillet melt butter. Add carrots and stir to coat with butter. Add broth through pepper. Bring to a boil, cover and cook for 6 minutes.
- Uncover and cook, stirring often until the carrots are tender and the liquid has reduced to a glaze (about 12 to 15 minutes).
- Stir in pecans and serve.
- To reheat if prepared in advance, add 1/4 cup water and heat gentley until water evaporates.

- Add chicken to the skillet, add sliced carrots, mix orange juice and soy sauce together and pour over the chicken. Place on stove and cover; bring to boil, reduce heat and simmer for about 15 minutes, or until chicken is tender. Can use boneless, skinless breasts, but the sauce isn't as flavorful. I also double the amounts of liquid, as I like to have extra sauce.

GLAZED CARROTS WITH BACON AND PECANS

- Cook the bacon in a 12-inch nonstick skillet over medium-high heat until crisp.
- Transfer bacon to a paper towel-lined plate to drain.
- Remove all but 1 tablespoon of the bacon drippings from the pan.
- Add the pecans and cook about 3 minutes.
- Transfer the pecans to the plate with the bacon.
- Add the carrots, salt, 1 tablespoon of the brown sugar, chicken broth, and thyme to the skillet.
- Bring to a boil, covered, over medium-high heat.
- Reduce heat to medium and simmer, about 5 minutes.
- Uncover, increase the heat to high, and simmer rapidly, 1 to 2 minutes.
- Add the butter and remaining 2 tablespoons brown sugar to the skillet. Toss the carrots to coat and cook, about 3 minutes.
- Off heat, add the lemon juice and toss to coat.
- Transfer the carrots to a serving dish, scraping the glaze from the pan into the dish.
- Season to taste with pepper, sprinkle the bacon and pecans on top.
- Serve immediately.
