SINIGANG SA MISO RECIPE

Sinigang sa Miso has all the goodness of the classic Filipino sour soup but is made even more flavorful with the addition of fermented soybeans! Enjoy this dish in less than 20 minutes.

2 tablespoon oil
3 cloves garlic
1 medium onion
1 thumb ginger
6 pieces tomatoes
1 1/4 cup miso paste
6-8 cups water
1 medium radish
3 tablespoon tamarind soup mix
1 pound salmon
3 pieces long chilis (siling haba)
6 pieces okra
1 medium eggplant
1-2 bunch mustard leaves
salt (to taste)

Steps:

  • Heat oil in a large pot, then saute garlic and onion then add the ginger. Cook until aromatic. Add the chopped tomatoes and cook until they soften.
  • Add the miso paste and cook for 2 minutes. Then add water, mix, and bring to a boil.
  • Add the radish and cook until tender. Add the tamarind soup mix and salt and stir.
  • Add the salmon fillets, eggplant, okra, and green chilis and gently mix them together. Cook for 5 minutes or until the veggies and fish are cooked through.
  • Add the mustard leaves, cook for another minute then remove from heat. Serve and enjoy!

This is a popular Filipino soup dish usually eaten for lunch with rice. Several variations of this soup dish abound in the Philippines. However, I suggest that the green chiles should never be excluded.

2 tablespoons vegetable oil
1 onion, sliced
3 cloves garlic, crushed
1 (1 inch) piece fresh ginger, sliced
2 tomatoes, sliced
3 tablespoons miso paste, or more to taste
1 teaspoon patis (fish sauce), or to taste
5 cups water
2 pounds red snapper fillets
1 white (daikon) radish, sliced
3 green chile peppers, or more to taste
1 bunch Chinese mustard greens with stalks
2 tablespoons kalamansi (Filipino lemon) juice, or more to taste

Steps:

  • Heat oil in a pot over medium heat. Add onion, garlic, and ginger; cook and stir until onions are translucent, about 5 minutes. Add tomatoes; cook and stir until mushy, about 5 minutes. Stir in miso paste and fish sauce; simmer until flavors combine, about 2 minutes.
  • Pour water into the pot; bring to a boil. Add fish fillets and radish; simmer until radish softens slightly, about 2 minutes. Stir in chile peppers, mustard greens, and kalamansi juice. Simmer, uncovered, until greens are wilted, 1 to 2 minutes.

  • In a pot over medium heat, heat oil. Add onions, garlic and ginger and cook, stirring regularly, until limp and aromatic. Add tomatoes and cook, mashing with back of spoon, until softened and release juice. Add miso and cook, stirring regularly, for about 3 to 5 minutes.
  • Add water and bring to a boil. Add tamarind base and stir until dissolved. Season with fish sauce to taste.
  • Add radish and cook for about 1 to 2 minutes. Add catfish. Lower heat, cover and cook for about 7 to 10 minutes. Add mustard leaves and cook for another 2 to 3 minutes. Serve hot.
