Steps:
- Sprinkle Salt on each Hen.
- Place Hen on a shallow baking pan.
- Mix butter, wine and the tarragon in a bowl.
- Pour 1/4 of the mixture over each hen.
- Bake at 350 for 30 minutes.
- Pour 1/2 of the remaining butter mixture over each hen and bake 25 more minutes.

SINGLE POT CORNISH GAME HENS
All in one pot and you are done, plus the flavors are so wonderful, elegant and romantic enough for dinner by candlelight!

Steps:
- In large Dutch oven (lid must be ovenproof) heat oil over medium high heat.
- Salt and pepper hens both sides.
- Brown on both sides.
- Add onions and garlic, let cook 5 minutes.
- Add potatoes and mushrooms on top.
- Sprinkle with rosemary and thyme and garlic powder.
- Pour in 1/2 can broth in pan and 1/4 cup wine.
- Squeeze 1/2 lemon on top.
- Cover with tight fitting lid.
- Place in oven at 350°F for 1 hour.
- Remove from oven and take out hens and vegetables.
- Over medium high heat add remaining ingredients (lemon juice, lemon pepper, chicken base, wine, broth) and let reduce for 15 minutes.
- Thicken with cornstarch and water.
- Taste and season as needed replace chicken and vegetables and cook for additional 10 minutes stirring very carefully and not very often.
- Serve immediately.
ROASTED CORNISH GAME HENS

- Preheat oven to 375 degrees F.
- In a small mixing bowl, stir together salt, lemon pepper, dried basil and poultry seasoning. Rub olive oil all over the hens and season each with the salt mixture. Place the hens on a baking sheet pan with plenty of space between them. You may need to use 2 pans. Loosely stuff the cavities of each hen with some green bell pepper, celery and onion. Roast the hens in the preheated oven for about 1 hour or until an instant-read thermometer inserted into the thickest part of the thigh registers 165 degrees F and the juices run clear. Remove the hens from the oven, loosely tent with foil and let rest 10 minutes before carving or serving.
SLOW COOKER CORNISH HENS
This is my fiance's favorite slow cooker meal of mine. I usually serve it with the veggies over wild rice. You can turn this recipe for 2 into 4 by splitting the hens lengthwise after cooking.

- Coat the hens with about 1/4 of the mushroom soup.
- Mix the remaining mushroom soup with mushrooms, olives, zucchini, and garlic salt in a bowl. Stuff the mixture inside the hens. Arrange hens, breast sides up, in the slow cooker. Spoon any remaining soup mixture over the hens.
- Cook the hens in the slow cooker on High for 4 hours.

ROCK CORNISH GAME HENS WITH CURRY
Cornish Game Hens just seem to be a "romantic" type dish. Try this with a "candlelight and wine" theme dinner.

- Mix garlic salt, thyme, curry and pepper.
- Sprinkle in cavity of each hen.
- Truss hens.
- Heat butter, lemon and paprika to make basting sauce.
- Put hens in shallow baking pan and baste.
- Place in hot 450°F oven for 1/2 hour.
- Reduce heat to 350°F and roast about 50 minutes more (until hens are a deep brown colour).
- Baste occasionally while cooking.
CARIBBEAN GAME HENS
This poultry dish, marinated with lime and white rum, sounds like a taste of the Caribbean! I'm sure the marinade would be great on chicken breasts, too. I found this recipe in a Mix-and-Match Menu cookbook. I haven't tried it yet, but it's posted in response to a request. Prep time includes marinating time.

- To make marinade, combine rum, honey, lime rind, lime juice, garlic, and ginger.
- Place birds in a shallow glass or ceramic dish and pour over marinade.
- Turn to coat, cover, and marinate at room temperature for 1 hour.
- Drain birds, reserving marinade.
- Thread a skewer through wings and legs of each bird half; brush with reserved marinade.
- Combine black pepper and coriander; rub over skin of birds.
- Cook, turning frequently, on a light oiled preheated medium grill or under a broiler for 15-20 minutes or until birds are cooked through.
BAKED CORNISH GAME HENS
Cornish game hens stuffed with a vegetable mixture, then roasted. A Cornish game hen recipe that I found and tweaked a bit for the taste and size of our small family, but it would be very easy to adjust it to fit your needs. It goes well with oven-roasted potatoes.

- Preheat oven to 325 degrees F (165 degrees C).
- In a small bowl combine the 1/2 cup melted butter, onion, celery, bell pepper, mushrooms, garlic, basil, oregano and parsley.
- Season hens inside and out with salt and pepper to taste, then stuff with equal amounts butter/vegetable mixture. Place stuffed birds in a 9x13 inch baking dish, breast side up. Drizzle with 1/4 cup melted butter.
- Cover dish and bake in the preheated oven for 1 1/2 hours. Remove cover and brown at 500 degrees F (260 degrees C).

- Mix 1/3 cup lemon juice, melted margarine, 1/2 teaspoon thyme, garlic powder, cumin, and red pepper flakes in a bowl. Pour and rub lemon juice mixture over Cornish hens. Mix 1/2 teaspoon thyme, salt, and black pepper in a bowl; sprinkle over Cornish hens.
- Pour chicken broth and 1/3 cup lemon juice into a slow cooker.
- Place about 1 tablespoon chilled margarine in the cavity of each hen; place hens in the slow cooker. Arrange the remaining margarine cubes in the chicken broth mixture.

- Remove the giblet packet (if present) from the cavity of the game hens. Carefully rinse the game hens under cold water. Thoroughly pat dry with paper toweling. Let sit at room temperature for 30 minutes.
- Set a rack in the center of the oven and preheat oven to 375º. Make sure that the hens are completely dry: if not, pat dry again with paper toweling. Sprinkle some of the salt and pepper (about 1/8 tsp of each for each bird) into the cavities of the game hens. Stuff 1 lemon quarter, 1/2 shallot, and 2 herb sprigs into each cavity. Mix the remaining salt and pepper into the butter and rub all over the hens. Set hens aside.
- Set a large, heavy-bottomed, oven-safe skillet or Dutch oven over medium heat and add the porcini oil (or olive oil). Add the shallots, fresh mushrooms, barley, salt, and pepper. Sauté until the vegetables have softened slightly and the barley begins to give off a nutty, toasted fragrance, 5–7 minutes. Bring the heat to high while stirring and add the wine. Continue stirring until about half of the wine has been absorbed/reduced. Stir in the vegetable broth and rehydrated mushrooms. Remove from the heat.
- Set a small rack into the bottom of the pot (see Recipe Note #4). Place the hens on top of the rack (balance them against the sides of the pot, if necessary).
