Sensational really is the best word for these bite-size chocolate truffles-and you'll be surprised at how simple they are to make!

Steps:
- Melt 8 oz. chocolate as directed on package. Beat cream cheese with mixer until creamy. Blend in melted chocolate. Refrigerate 1 hour or until firm.
- Shape chocolate mixture into 36 balls; place on waxed paper-covered rimmed baking sheet.
- Melt remaining chocolate. Use fork to dip truffles in chocolate; return to prepared baking sheet. Add decorations as desired. Refrigerate 1 hour.

Steps:
- 1. MELT 8 chocolate squares. Follow pkg instructions for microwave, or, melt using double-boiler.
- 2. BEAT softened cream cheese with mixer until creamy. Blend in melted chocolate. Refrigerate until firm.
- 3. SHAPE into 36 balls. (Approx 1") Place on waxed paper covered baking sheet.
- 4. Melt remaining chocolate. Use fork to dip Truffles in chocolate; return to baking sheet. Decorate, then refrigerate 1 hour. TIP: I decorate immediately after dipping each one, before it sets up. You can also use a spot of cake decorator frosting to hold your decorations of choice as well.
SIMPLY SENSATIONAL TRUFFLES
I found this great little pamphlet at the grocery store with some delicious recipes. It is a JELL-O, Cool Whip, Nilla Wafers, Philadelphia Cream Cheese, and Bakers Chocolate Squares book of recipes. This is one of them that I plan on trying this week. Sounds delicious. I may try and roll the truffles in the chopped nuts that you buy in the ice cream topping section. This recipe is using Baker's Squares and Philadelphia Cream Cheese. 10 minutes preparation time does not include refrigeration time.

CHOCOLATE CRANBERRY TRUFFLES
I found this in an old Ocean Spray cookbook, and have been making them for Thanksgiving,holiday parties and adding to my Christmas gift baskets for a few years. I love the combination of flavors. The amount really depnds on how large you make them..I usually get around 25-30

Steps:
- Place chocolate, cranberry sauce and heavy cream in a medium saucepan.
- Cook over medium-low heat until sauce is smooth, whisking frequently.
- Remove from heat and pour into a glass or plastic bowl.
- Cover with plastic wrap.
- Let sit at room temperature to thicken.
- Combine cocoa and 1 1/2 tablespoons powdered sugar on a small plate.
- Scoop out a rounded teaspoonful of chocolate mixture.
- Roll in cocoa, coating throroughly.
- Dust hands with powdered sugar.
- Roll truffle in hands to form a 1-inch ball.
- Continue forming truffles with remaining chocolate mixture.
- Store in tightly covered contanier until ready to serve.
- Before serving remove and place in decorative paper holders.

HOLIDAY TRUFFLES
I got this off the Pillsbury website. You can roll the truffles in coconut, cocoa powder, nuts whatever you want. I haven't tried them yet but they sound fairly easy and look like they would make great gifts for the holidays.

- Melt chocolate chips in medium saucepan over low heat, stirring constantly; remove from heat.
- Stir in orange liqueur and frosting; blend well.
- Refrigerate 1 to 2 hours or until firm.
- Place coconut* (or other toppings) in pie pan.
- Scoop mixture into 1-inch balls; drop onto coconut, (or other toppings), Mixture will be sticky.
