EASY FRUIT COBBLER



Easy Fruit Cobbler image

This cobbler is so very simple, and so very delicious. I am writing this recipe with peaches, however you can use any variety of canned fruit. Hope you enjoy.

1/2 cup butter
1 cup self-rising flour
1 cup white sugar
1 cup milk
1 (20 ounce) can canned peaches, with fruit and juice divided

Steps:

  • Preheat oven to 350 degrees, put stick of butter in 9x13" pan and melt in oven.
  • Mix flour, sugar, and milk.
  • When your butter is melted pour your mixture into pan directly on top of butter.
  • Place peach/fruit slices into pan on top of cobbler.
  • Pour syrup over top of cobbler and bake for approximately 1 hours till crust is brown and edges are bubbley.
  • Serve hot with ice cream if you wish.
  • I put 8-10 on the servings it depends on the size of the servings.

This is a very old recipe my mother used to make. It can be made with your favorite pie filling - cherry, peach, blueberry etc. The crust gets golden brown and delicious while it bakes around the fruit filling. Delicious, sweet, simple, and cost effective. Great with vanilla ice cream!

1/2 cup salted butter
1 cup all-purpose flour
1 cup white sugar
1 cup milk
2 teaspoons baking powder
21 ounces pie filling

Steps:

  • Preheat oven to 350°F.
  • Place stick of butter on bottom of baking dish (can be 9x7, 9x9, 8x8, or 2-qt round casserole dish), and microwave until butter is completely melted. Set aside.
  • In a mixing bowl whisk together flour, sugar, milk, and baking powder. Pour mixture over butter - Do not mix into butter!
  • Again, without mixing, evenly distribute pie filling over butter/batter.
  • Bake at 350°F for approximately 1 hr and 15 minutes or until crust is golden brown, and top center of crust is fully baked.
  • Best when served warm with or without vanilla ice cream.

This is one of my favorite summer recipes, as it features peaches and berries that are in season. But it's just as delicious with frozen fruit any time of the year. The quick biscuit topping brings it all together. -Lauren Knoelke, Des Moines, Iowa

1/2 cup sugar
3 tablespoons cornstarch
1/2 teaspoon ground cinnamon
1/4 teaspoon ground cardamom
10 medium peaches, peeled and sliced (about 6 cups)
2 cups mixed blackberries, raspberries and blueberries
1 tablespoon lemon juice
TOPPING:
1 cup all-purpose flour
1/4 cup sugar
2 teaspoons grated orange zest
3/4 teaspoon baking powder
1/4 teaspoon salt
1/4 teaspoon baking soda
3 tablespoons cold butter
3/4 cup buttermilk
Vanilla ice cream, optional

Steps:

  • Preheat oven to 375°. In a large bowl, mix sugar, cornstarch, cinnamon and cardamom. Add peaches, berries and lemon juice; toss to combine. Transfer to a 10-in. cast-iron or other ovenproof skillet., In a small bowl, whisk the first 6 topping ingredients; cut in butter until mixture resembles coarse crumbs. Add buttermilk; stir just until moistened. Drop mixture by tablespoonfuls over peach mixture., Bake, uncovered, until topping is golden brown, 40-45 minutes. Serve warm. If desired, top with vanilla ice cream.
