3 tablespoons chopped fresh chives
½ bunch fresh cilantro
2 cloves garlic, chopped
2 (14 ounce) cans stewed tomatoes
2 serrano chilis, seeded and chopped
salt and pepper to taste

Steps:

  • Combine chives, cilantro, garlic, tomatoes, peppers, salt and pepper to taste in an electric blender. Pulse until the salsa is to your desired consistency.

1 small red onion, chopped fine
2 jalapeno peppers, chopped fine
2 yellow hot peppers, chopped fine
8 ounces chopped canned green chilies
1 bunch cilantro, leaves picked off stem and chopped fine (adjust to taste)
1 (8 ounce) can tomato sauce
1 tablespoon garlic salt

Steps:

  • Use a food chopper to chop everything up fine.
  • Serve immediately or keep for a day in the refrigerator.

My family has always gone for the rainbow version, sneaking in veggies of every color to round out the bowl. Jalapeno provides a kick, but you can remove the seeds or omit it altogether for less heat.

3/4 cup apple cider vinegar
1/2 cup vegetable oil
1 tablespoon water
1/2 cup sugar
1 teaspoon kosher salt
1 teaspoon freshly ground pepper
One 15-ounce can black-eyed peas, rinsed and drained
One 15-ounce can black beans, rinsed and drained
One 15-ounce can corn, drained
1/2 cup finely chopped red onion
1 green bell pepper, finely chopped
1 red bell pepper, finely chopped
1/4 cup finely diced jalapeno (remove seeds for less heat)
Tortilla chips, for serving

Steps:

  • Combine the vinegar, oil, water, sugar, salt and pepper in a medium saucepan over medium-low heat. Whisk together and simmer for 3 minutes then remove from the heat. Set aside to cool.
  • Meanwhile, combine the black-eyed peas, black beans and corn in a large bowl. Add the onion, bell peppers and jalapeno, then pour in the dressing and stir until well combined.
  • Serve the Texas caviar immediately with tortilla chips or cover and refrigerate for up to 24 hours.

3 jalapenos, sliced
3 cloves garlic, sliced
2 cans chopped tomatoes
salt and pepper

Steps:

  • Slice the garlic and the jalapenos and toss them into the blender, blend until chopped fine.
  • Add cans of tomatoes, with juice, pulse until blended.
  • Serve with sour cream and tortilla chips.

SOUTH TEXAS SALSA



South Texas Salsa image

This recipe is so simple and has not changed for generations!

2 large vine ripened tomatoes
1/2 medium white onion
1/2 small garlic clove
1 bunch or handful of fresh cilantro
2 serrano chiles
1 can(s) stewed tomatoes
1 tsp salt
1 pot of water
SOUTH TEXAS SALSA

Steps:

  • 1. Add tomatoes and serranos to pot of water and bring to a boil. Let it boil for one minute and then take off of heat. Leave ingredients in water for about 5 min's. Remove items from water very carefully they will be hot. Remove stem button and skin from tomatoes. Place in blender. Remove stems from peppers and cut in half. At this time you will either want to remove the seeds for a milder sauce or leave the seeds in for a hotter sauce. I leave the seeds in!! Add peppers to blender.
  • 2. Take your half of a white onion and quarter it. Add to blender. (You can use a yellow onion if you prefer) At this point you will find you might want to adjust the amount of onion to less or more. The onion can overpower the salsa so a med onion with the ends cut off I have found to be just enough.
  • 3. Wash and add a small handful of cilantro, 1/2 a small garlic clove, stewed tomatoes(un-drained) and teaspoon of salt. (Garlic is another ingredient you can adjust to your taste. Also using a couple dashes of powdered garlic will work just fine.) Cover and run blender on "chop" until ingredients are chopped up completely. At this time you will want to taste before pouring it out of the blender to see if you need a touch of salt or some other ingredient. I have used this recipe for so long it is pretty much set but everyone's tastes can differ. I hope you enjoy this salsa. It is a great appetizer with tortilla chips or add it to ANY food you like especially breakfast eggs!!! It will keep for about 2 to 2 1/2 weeks in your refrigerator. Enjoy!!!
