CRISPY ASIAN BRUSSELS SPROUTS SALAD



Crispy Asian Brussels Sprouts Salad image

Number Of Ingredients 9

One 16-ounce bag shaved Brussels sprouts
1/4 cup olive oil
Kosher salt and freshly cracked black pepper
2 tablespoons rice wine vinegar
1 teaspoon Dijon mustard
Zest and juice of 1/2 orange
2 scallions, thinly sliced
1/2 cup toasted slivered almonds
1/2 cup fried wonton strips, for garnish

Steps:

  • Preheat the oven to 400 degrees F.
  • In a large bowl, toss the sprouts with 2 tablespoons of the olive oil and season with salt and pepper. Spread evenly on a baking sheet and roast, stirring halfway through, until the sprouts are beginning to brown and crisp around the edges about 20 minutes. Allow to cool slightly.
  • Meanwhile, in a large bowl, whisk together the rice wine vinegar, mustard, orange juice and zest and half the scallions. Slowly whisk in the remaining 2 tablespoons olive oil until emulsified. Add salt and pepper to taste.
  • Add the sprouts and almonds to the dressing and gently toss to combine. Taste and adjust the seasoning. Pile high on a serving platter and top with the wonton strips and remaining scallions.

2 (3 ounce) packages ramen noodles, crushed
1 cup blanched slivered almonds
2 teaspoons sesame seeds
½ cup butter, melted
1 head napa cabbage, shredded
1 bunch green onions, chopped
¾ cup vegetable oil
¼ cup distilled white vinegar
½ cup white sugar
2 tablespoons soy sauce

Steps:

  • In a medium skillet over low heat brown ramen noodles, almonds, and sesame seeds with melted butter or margarine. Once browned, take off heat and cool.
  • In a small saucepan bring vegetable oil, sugar, and vinegar to boil for 1 minute. Cool. Add soy sauce.
  • In a large bowl, combine shredded napa cabbage and chopped green onions. Add the noodle and soy sauce mixture. Toss to coat. Serve.

75 g vermicelli, prepared according to directions
1 small red capsicum, sliced into thin strips
5 spring onions, sliced into thin strips
1/2 cup roasted peanuts
1/2 cup kraft* coleslaw dressing
1 tablespoon chili sauce
2 tablespoons finely chopped coriander

Steps:

  • Cut the carrot and cucumber into ribbons and then into thin strips.
  • Toss with cabbage, vermicelli, capsicum, spring onions and peanuts until combined.
  • Combine dressing, chilli sauce and coriander. Stir through salad ingredients. Chill before serving.

2 1/2 lbs chicken breasts, cooked and shredded
1/8 cup nonfat asian-style dressing (I recommend Trader Ming's Sesame Soy Ginger Vinaigrette)
1 head green cabbage, shredded very finely
2 carrots, grated coarsely
1/2 cup sliced almonds
1/2 cup green onion, sliced

Steps:

  • Toss the first two ingredients well in a medium bowl. Combine with the remaining four ingredients in a large bowl. Serve immediately, or cover and chill until ready to serve.
  • NOTE: The servings are for entree-sized salads. I make this for potlucks with approximately 20 people attending and this amount has been sufficient for that purpose.

2 boneless skinless chicken breast halves, cooked
4 -5 green onions, chopped
1/2 cup pineapple tidbits, drained
3 tablespoons mayonnaise
1 1/2-2 tablespoons sesame oil
1/4 teaspoon ground ginger
1 cup chow mein noodles
salt and pepper, if needed, to taste

Steps:

  • Cut chicken breasts into bite-sized pieces.
  • In a small bowl, blend together mayonnaise, sesame oil and ginger.
  • In a large salad bowl, toss together torn greens, chicken pieces, green onions and pineapple tidbits.
  • Add in mayo mixture and toss to coat.
  • Divide among 2 salad plates and sprinkle chow mein noddles over top.
  • Add salt and / or pepper to taste.
