3/4 teaspoon prepared horseradish
1 teaspoon salt

1 1/2 cups French onion soup
1 1/2 cups beef broth
1/2 teaspoon granulated sugar
2 teaspoons Worcestershire sauce, plus more to taste
1/8 teaspoon salt, plus more to taste
Freshly cracked black pepper
Olive oil, for the grill pan
1 boneless rib-eye steak (about 8 ounces, 1-inch thick)
Salt and freshly ground black pepper

2 small baguettes, split in half lengthwise

Steps:

  • For the horseradish sauce: Combine the sour cream, horseradish, salt and pepper in a medium bowl. Cover and refrigerate to develop the flavors.
  • For the au jus: Combine the onion soup, beef broth, sugar, Worcestershire sauce, salt and 3/4 cold water in a saucepan and bring to a boil over medium-high heat.
  • Reduce heat and simmer 5 minutes. Taste and season with pepper and more salt if needed. Strain the mixture and discard the onions (if there were any in the soup.) Cover and keep warm.
  • For the steak: Heat a grill or grill pan over high heat. Oil the grill pan if needed. Season the steak with salt and lots of black pepper. Grill the steak for 2 to 3 minutes per side for medium rare. Let the steak rest, then thinly slice.
  • Spread the horseradish sauce on one side of each baguette. Dip the steak slices in the warm au jus and place on top of the bread with horseradish sauce, then place the other slices of bread on top. Transfer the remaining au jus to two dipping bowls and serve with the sandwiches for dipping.

One 8-pound lip-on boneless rib eye roast
1 cup Worcestershire sauce
4 ounces Montreal steak seasoning
3/4 cup red wine
3 tablespoons beef base
1 cup large-diced onion
6 cloves garlic
6 sprigs fresh thyme
6 to 8 good-quality hoagie rolls
12 ounces horseradish
12 ounces sour cream
12 to 14 slices Swiss cheese
1 1/2 to 2 cups caramelized onions
Serving suggestion: hand-cut fries

Steps:

  • For the prime rib: Preheat the oven to 350 degrees F.
  • Place rib eye fat-side down in a roasting pan. Pour half of Worcestershire over the top, then sprinkle on half of the steak seasoning. Flip and cover with remaining Worcestershire and seasoning.
  • Roast for 2 hours. Let cool completely, then slice thinly on a meat slicer.
  • For the au jus: Place red wine in a saucepan over medium-high heat. Reduce by half. Add beef base and dissolve thoroughly. Add onion, garlic, thyme and 6 cups water and simmer until vegetables are soft. Strain.
  • For the French dip: Split and toast hoagie rolls. Heat au jus until hot, then add prime rib to heat thoroughly.
  • Whisk together horseradish and sour cream in a bowl. Spread on hoagie rolls. Layer Swiss cheese in hoagies, then add caramelized onions and top with hot prime rib.
  • Plate sandwiches with fries and cups of warm au jus for dipping.

I tried for years to make a cheese steak as good as the takeout sub shops of southeastern Massachusetts. I think this is about as close as you can come at home. Freezing the steak the day before makes it easy to cut into very thin slices.

2 tablespoons butter
¼ medium onion, sliced
4 large fresh mushrooms, sliced
¼ green bell pepper, sliced into long strips
1 (1/2 pound) well-marbled beef steak of any type, sliced as thinly as possible
3 tablespoons chopped pickled hot peppers
1 teaspoon hot pepper sauce
2 slices sharp Cheddar cheese
salt and pepper to taste
⅓ French baguette, cut in half lengthwise

Steps:

  • Melt 1 tablespoon of butter in a large skillet over medium heat. Add the onion; cook and stir until tender. Push onion to the side of the pan, and add the mushrooms. Cook and stir until softened, then add the bell pepper and cook just until tender, about 3 minutes. Remove from the pan with a slotted spoon, and set aside.
  • Add the remaining butter to the skillet. No need to clean the pan, just let it heat up a little bit. Place the steak in the skillet along with the pickled peppers. Season with salt and pepper. The steak cooks really fast, just a couple of minutes. Once the steak is mostly browned, return the onion and pepper to the pan. Cook until heated through.
  • Turn off the heat, and place the slices of cheese over the top of the pile so they can melt. Scoop the whole pile into the awaiting bread, making sure to pour some of the juices onto that wonderful sandwich.

2 c beef stock
1/2 tsp sugar
1 tsp worcestershire sauce
fresh ground pepper to taste
FOR THE STEAK
1 lb shaved steak (tip: kroger sells packages of already shaved steak in 1 lb. packages for $5.99!)
2 Tbsp olive oil
salt & pepper to taste

1 baguette ((or your favorite rolls))
1 Tablespoon olive oil
1 shallot ((chopped))
1 Tablespoon all-purpose flour
10 ounces beef consommé ((use 2 cans if you like a lot of dipping sauce))
1 teaspoon steak seasoning ((I prefer McCormick Montreal))
3/4 pound lean roast beef ((thinly sliced))
4 slices Swiss cheese ((thinly sliced))

Steps:

  • Preheat oven to 400°F. Slice the baguette into 4. Then cut horizontally to make the sandwiches.
  • In a large skillet over medium heat, add olive oil and heat for 1 minute. Add shallots and sauté for 2 minutes. Add flour and sauté 1 more minute.
  • Slowly whisk in beef consommé. Bring to a boil over high heat. Reduce heat to low and simmer. Add steak seasoning and mix until combined.
  • Separate roast beef and place in the au jus sauce until warm. Using tongs, place an equal portion of beef on each section of baguette or rolls. Top with a slice of cheese. Bake for 3-5 minutes, or until the cheese has melted.

1 small onion, sliced into rings

Steps:

  • Heat beef broth over low heat; keep warm.

6 (18g) cloves garlic (, minced)
3 (673g) onions (, sliced)
1 cup (250ml) unsalted chicken stock or high quality beef stock
1 tablespoon (15ml) regular soy sauce
1 tablespoon (15ml) fish sauce ((can substitute with regular soy sauce))
1 tablespoon (15ml) Worcestershire sauce
1 tablespoon (15ml) olive oil
1 pinch dried rosemary
1 pinch thyme
2 bay leaves
1 loaf french bread
2 - 3 slices Swiss cheese

Steps:

  • Brown Chuck Roast Steak: Heat up Instant Pot using Sauté More function. Wait until it says HOT (~8 mins). Pat dry the chuck roast steak and lightly season one side with salt + black pepper. Drizzle the inner pot with 1 tbsp olive oil. Then, place the seasoned side of chuck roast in Instant Pot. Lightly season the other side with more salt + black pepper. *Pro Tip: Brown each side for 10 minutes to develop some awesome deep flavors. *Note: If you prefer a "Dump-it-all-in" Recipe, you can skip the browning and saute steps.
  • Saute Onion & Garlic: Set browned chuck roast aside. Add in sliced onions, then saute until softened (~3 - 4 mins). Set aside roughly ⅓ of the softened onions for later.   • Deglaze Instant Pot: Pour 1 cup unsalted stock in Instant Pot, then deglaze by scrubbing all the flavorful brown bits off the bottom of the pot with a wooden spoon.
  • Pressure Cook Chuck Roast: Add in 1 tbsp (15ml) soy sauce, 1 tbsp (15ml) fish sauce, and 1 tbsp (15ml) Worcestershire sauce. Give it a quick mix. Place browned chuck roast back in Instant Pot and partially submerge it into the liquid as best as you can. Pressure Cook at High Pressure for 45 minutes + 25 minutes Natural Release.
  • Simmer Au Jus Sauce & Shred Beef: Set aside chuck roast in a mixing bowl, and shred the beef with 2 forks. While you are shredding the beef, bring Au Jus sauce back to a boil with the "Saute" function. Add in reserved onions, then let the Au Jus sauce reduce for 5 - 10 minutes. Taste & adjust seasoning accordingly. *Pro Tip: Reducing the Au Jus sauce will naturally thicken it. If you find the Au Jus sauce to be too oily, you can use a Fat Separator to filter out the fat.
  • Assemble & Serve Instant Pot French Dip: Optional Step - While the Au Jus sauce is reducing, preheat oven to 350°F. Layer 1 loaf of french bread with slices of Swiss cheese on top. 2 medium yellow onions
3 cloves garlic
1 teaspoon fresh thyme leaves
2 tablespoons olive oil
1 (3-pound) boneless beef chuck roast, tied
1 1/2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
4 cups beef broth, divided
2 tablespoons all-purpose flour
2 to 3 baguettes
12 to 18 slices Swiss cheese (optional)

Steps:

  • Place 2 tablespoons unsalted butter on the counter to soften at room temperature. Thinly slice 2 medium yellow onions and mince 3 garlic cloves. Pick the leaves from fresh thyme sprigs until you have 1 teaspoon.
  • Heat 2 tablespoons olive oil with the Sauté setting in a 6-quart or larger Instant Pot or electric pressure cooker until shimmering. Season 1 (3-pound) tied boneless beef chuck roast with 1 1/2 teaspoons kosher salt and 1 teaspoon black pepper. Add the beef to the pot and cook until deep golden brown on all sides, 7 to 9 minutes total. Transfer to a plate.
  • Add the onions and sauté until golden brown, 8 to 10 minutes, adding the thyme and garlic during the last minute of cooking. Add 2 cups of the beef broth, scraping any browned bits up from the bottom of the pot. Return the chuck roast to the pot.
  • Lock the lid on and make sure the valve is set to seal. Set to cook under HIGH pressure for 60 minutes. When the cook time is up, let the pressure naturally release for 5 minutes. Quick release any remaining pressure.
  • Transfer the roast to a cutting board and let rest for 10 minutes. Meanwhile, add the remaining 2 cups beef broth to the pot and simmer on the Sauté function to let the sauce reduce for 10 minutes. While the sauce is reducing, mash the butter with 2 tablespoons all-purpose flour until a paste forms. Heat the broiler.
  • When the sauce is reduced, whisk in the butter paste and simmer until slightly thickened, 2 to 3 minutes. Meanwhile, cut 2 to 3 baguettes into 6 (6-inch) pieces, then split each piece lengthwise to form sandwich rolls.
  • Place the split rolls on a baking sheet. Place a few slices of Swiss cheese, if using, on the top half of each roll. Broil until lightly toasted and the cheese is melted, about 2 minutes. Thinly slice the roast across the grain. Divide the beef between the baguettes and drizzle with some of the onion broth. Serve the onion broth on the side for dipping.

2 tablespoons butter

  • In a large dutch oven, or if you have an aluminum insert for your slow cooker add the canola oil and heat on high.
  • Add the Kosher salt and pepper to your chuck roast.
  • Brown on both sides aggressively (3-5 minutes on each side).
  • Don't move the beef before flipping (this lets the meat get a deep crust).
  • In a slow cooker add the meat, any meat juices from the pan, beef broth, Worcestershire sauce, beer and onions.
  • Cook on low for 6 hours.
  • Remove the meat and slice thickly.
  • To assemble, butter your hoagie rolls and toast.
  • Top with provolone cheese.
  • In a small bowl add a cup of the liquid from the slow cooker and dip the sandwich in the bowl.
