Number Of Ingredients 10

2 leeks, cut into chunks
1 1 medium to large onion
1 large white turnip root
2 clove garlic
1 pkg carrots, chopped
2 large red potatoes, cut into chunks (peel left on or off)

salt, pepper and thyme to taste (all optional)

Steps:

  • 1. Saute leeks and onion lightly. (Peel or not the carrots, turnips, potatoes, garlic and kale which is optional. I leave the peelings on as it is more nutritious and add more flavor. • 2. Put into blender or food processor by batches. Season to taste with the thyme, salt and pepper.

10 BEST KOSHER SOUP RECIPES - THE SPRUCE EATS

From thespruceeats.com

  • No-Chicken Matzo Ball Soup (Pareve, Passover) There's no powdered soup mix in this Vegetarian Matzo Ball Soup recipe–all of the flavor comes from vegetables, herbs and spices.
  • Hearty Mushroom Barley Soup (Parve or Meat) This Hearty Mushroom Barley Soup is easy to prepare, kid-friendly, and perfect for a cool fall or winter day.
  • Split Pea Lentil Soup (Parve) Giora Shimoni was in the midst of making soup when he ran out of split peas, so he added lentils to the pot. The combo proved tasty, so the family dubbed his creation "Great Mistake Soup," and has kept the recipe in rotation ever since.
  • Roasted Carrot, Apple and Celery Soup (Pareve or Dairy) Roasting intensifies the flavors and smooths the texture of the produce in this vibrant Carrot, Apple and Celery Soup.
  • Watermelon Gazpacho (Pareve) For a fabulously refreshing summertime starter, try this Watermelon Gazpacho. Melon replaces most of the tomatoes found in a typical gazpacho, but it's still got a vinegary kick and the savory flavors of cucumber, peppers, jalapeño, and onions.
  • Vegetarian Tom Yum Soup. It can be challenging to recreate Thai recipes in a kosher kitchen because certain key ingredients–think shellfish, shrimp paste, or oyster sauce–aren't kosher.
  • Lilya's Summer Beet Borscht (Dairy or Pareve) Served hot or cold, this updated take on borscht from Gefilteria owners Liz Alpern and Jeffrey Yoskowitz features a double dose of beets–some are pureed into the soup while others are roasted, chopped, and used to top each portion.
  • German Fresh Cream of Tomato Soup (Dairy, Pareve or Meat) Made with fresh Roma tomatoes, this German Tomato Soup recipe is easily adaptable to suit whatever type of meal you are serving.
  • Herbed Vegetable Soup. If you don't have stock on hand, never fear–thanks to the liberal use of herbs, spices, and lots of flavorful veggies, you can still make a great vegetable soup.
  • Quick and Easy Garlic Miso Soup Recipe. It's hard (if not impossible) to track down kosher-certified bonito flakes, which means kosher cooks can't whip up a proper dashi when a miso soup craving strikes.

THE ULTIMATE RANKING OF JEWISH SOUPS | THE NOSHER

From myjewishlearning.com
  • Yemenite Soup. A broad term for numerous sensational soups from the Yemenite kitchen unified by a warming spice blend called hawaij that features turmeric, black pepper, cardamom, cumin, and coriander.
  • Kubbeh Soup. If you’re new to this Iraqi delicacy, just think of kubbeh as a kind of stuffed, elevated matzah ball. Made with bulgur wheat or semolina, these dumplings are filled with meat, then simmered in a variety of broths, ranging from beet-based to turmeric-tinged.
  • Chicken Soup With Matzah Balls or Kreplach. This classic broth ranks highly for name recognition alone — it is arguably the quintessential Jewish soup.
  • Egyptian Golden Potato Soup. Of the various potato-based Jewish soups, this one stands out. The humble potato is elevated with a burst of brightness from lemon juice added just before serving and a healthy dose of trendy turmeric, responsible for its golden color.
  • Lentil Soup. This thrifty, filling concoction is the OG of Jewish soups — literally — boasting biblical roots. It plays a starring role in the feud for first-born dominance between Jacob and Esau.
  • Sopa de Huevos y Limon. This brighter, silkier take on chicken soup hailing from Turkey, Greece, and the Balkan States is a true comfort food. It’s so nourishing and gentle on the stomach that it’s a popular meal to bring in or break the Yom Kippur fast.
  • Borscht. Although in Eastern Europe borscht is considered a local, not Jewish, delicacy, this fuchsia riot of a soup has become synonymous with traditional Jewish eateries in the U.S. and wider Anglo diaspora.
