Made with yogurt and semolina flour, Semolina Yogurt Cake is a one-bowl dessert or snack that doesn't require a mixer and comes out moist, tangy, and delicious.

Ingredients:
3/4 cup (180 mL) Water
3/4 cup (150g) White Sugar
1 1/2 Tbsp (22 mL) Lemon Juice ((optional))
3 Large Eggs
1/2 cup (100g) White Sugar
1 1/2 cups (350 mL) Plain Yogurt ((see note))
1/2 cup (120 mL) Vegetable Oil
1 cup (167g) Semolina ((see note))
3 Tbsp (23g) All-Purpose Flour
1 tsp Pure Vanilla Extract
1 tsp Baking Powder
1/2 tsp Baking Soda
1/4 tsp Salt

Steps:

  • Preheat the oven to 350°F / 177°C
  • Lightly grease an 8"x8" (20 cm x 20 cm) baking dish with cooking spray or lightly rub it with cooking oil.
  • Make syrup: Combine water and 3/4 cup sugar in a small saucepan. Bring to a boil over medium-high heat and boil for 1 minute to fully dissolve the sugar. Remove from heat and stir in lemon juice (if using). Set aside to cool completely.
  • Make the cake: In a large mixing bowl, whisk together eggs and 1/2 cup sugar until sugar dissolves. Add yogurt and vegetable oil and whisk again until evenly combined. Add semolina, all-purpose flour, vanilla extract, baking powder, baking soda, and salt. Stir just until everything is combined (do not overmix). Pour batter into prepared pan.
  • Bake: Bake until the center of the cake is set and the edges are golden brown and start to pull away from the sides, 30 to 34 minutes. (Note: Gently press on the cake in the center to be sure that it has cooked all the way through - it should have a springy but firm texture.)
  • Add syrup: Remove the cake from the oven and slowly pour the syrup over top, making sure to pour syrup evenly over the entire surface. (Note: much of the syrup will drip down the sides which is fine. The cake will absorb the syrup from the bottom as it sits.)
  • Let the cake cool completely before slicing and serving. (The cake is also great served chilled. If not serving immediately, store it in the refrigerator for up to 3 days.)

This has been a favorite dessert in many Middle Eastern and North African countries- this is my mother's recipe. It's very simple and easy to remember.

1 cup semolina flour
1 cup yogurt
1 cup sugar
1 cup butter
2 tablespoons baking powder
2 beaten eggs
3 cups sugar
1 cup water
1 teaspoon vanilla
1/2 lemons or 1/2 lime
1 cinnamon stick

Steps:

  • First make the cake:.
  • Preheat oven to 350.
  • Mix together flour, sugar, and baking powder very well in large bowl.
  • Melt butter, add into mixture.
  • Add yogurt into the mixture, mix well.
  • Add eggs, mix well again.
  • Beat mixture for 2 minutes til there are no lumps.
  • Pour into 9 X 13 inch baking pan brushed with very little oil.
  • Bake in middle rack of oven for 45 minutes.
  • While the cake bakes, prepare the syrup:.
  • Mix 3 cups sugar & one cup water in a pot, put on stove on high heat.
  • Add in vanilla and cinnamon stick. Stir well.
  • Squeeze half lemon into mixture, drop the lemon itself in there after squeezing.
  • Mix well, let boil for 1 minute, remove from heat.
  • After cake is a golden color (after about 45 mins), remove from oven, and let cool for about 5 minutes.
  • Pour syrup onto the whole cake, let cool. Cut into as many pieces as you like.
  • Enjoy!

1/4 cup fine semolina flour
1/2 cup sugar
One 16-ounce container whole-milk or part-skim ricotta
2 large eggs, separated
2 tablespoons orange liqueur
1 teaspoon grated orange zest
1/2 cup golden raisins
1/4 teaspoon salt
Confectioners' sugar for dusting

Steps:

  • Preheat oven to 350 degrees F. Butter an 8-inch round cake pan.
  • In a small saucepan, bring 1 1/2 cups water to a boil. Drizzle the semolina into the water, stirring constantly with a wooden spoon. Stir in 1/4 cup of the sugar. Cook, stirring often, until thickened, about 4 minutes. Remove the pan from the heat and let cool slightly.
  • In a large bowl, whisk the ricotta, egg yolks, liqueur, and zest. Stir in the raisins.
  • In a large bowl, beat the egg whites with salt on low speed until foamy. Gradually beat in the remaining 1/4 cup sugar on high speed and beat until the whites hold stiff peaks.
  • With a spatula, gently fold the egg whites into the ricotta mixture. Scrape the mixture into the prepared pan.
  • Bake the cheesecake for 1 hour or until puffed and golden on top. Remove from the oven. Let cool on a rack for 10 minutes. Invert onto a plate and let cool.
  • Serve at room temperature or chilled, sprinkled with confectioners' sugar.

I was looking for a varition of our families Harissa recipe but was suprised that Zarr did'nt have anything close to what we love to make every Ramadan and special occasion. Us Palestinians love sweets. So here it is and enjoy!

3 cups semolina
3/4 cup unsweetened butter, melted
3/4 cup sugar
1 1/2 teaspoons baking soda
1 cup plain yogurt
1/2 cup whole blanched almonds (to garnish) or 1/2 cup ground pistachio nut (to garnish)
4 cups sugar
3 cups water
1/2 small lemon, juice of (or equivalent citric acid)

Steps:

  • Mix the semolina, the sugar and the butter in a large bowl. Use your hands to corporate the butter with the other ingredients until mixed well.
  • Mix the yogurt and the baking soda in a separate bowl.
  • Wait a few minutes until the yogurt doubles in size.
  • When the yogurt has doubled (or almost)pour the yogurt mix on top of the semolina mix.
  • Use your hands again to mix.
  • After you combined the two mixes, press the mix down on a small jellyroll pan or a 9x13 pyrex baking dish.
  • (The cake mix should not be more then 1 inch thick. If it is bake the cake in a bigger pan or take out the extra and bake it in a separte pan.).
  • Cut a diamond or square design in the cake witha butter knife.
  • If using almond place one in each piece.
  • Bake at 400 degrees for 30min to 45 mins until its a bronze brown color.
  • Pour cold syrup on top while its hot so it can absorb all through.
  • If using ground pistashios sprinkle a little on top of each square.
  • FOR THE SYRUP:.
  • Mix all the ingredients for the syrup and place in saucepan on high until it boils. If using citric acid use only the the tip of a teaspoon.
  • Then reduce the heat to medium for 45 min to 1 hour until it coats a metal spoon.

Syrup:
2 bay leaves
1/3 cup sugar
Pinch of kosher salt
2 teaspoons fresh lemon juice
Cake and assembly:
3/4 cup (1 1/2 sticks) unsalted butter, melted, slightly cooled, plus more for pan
1 1/2 cups coarse-grind semolina flour
1 cup sugar
2 teaspoons baking powder
2 teaspoons finely grated orange zest
1 teaspoon ground cardamom
1/2 teaspoon kosher salt
1 cup plain whole-milk Greek yogurt
3/4 cup whole milk
3 oranges
Lemon juice (optional)

Steps:

  • Syrup:
  • Bring bay leaves, sugar, salt, and 1/2 cup water to a simmer in a small saucepan, stirring occasionally to dissolve sugar, about 5 minutes. Remove from heat and stir in lemon juice. Pluck out bay leaves; let cool.
  • Cake and assembly:
  • Preheat oven to 350°F. Butter a 9"-diameter cake pan. Whisk semolina, sugar, baking powder, orange zest, cardamom, and salt in a medium bowl. Whisk yogurt and milk in a large bowl. Mix in dry ingredients, then 3/4 cup butter. Scrape batter into prepared pan. Bake cake until golden brown and firm, 55-65 minutes. Transfer to a wire rack and let cake cool in pan 10 minutes. Turn a plate over top of pan and invert cake. Using a cake tester or toothpick, poke holes all over cake; gradually pour all but 1/4 cup bay leaf syrup over, letting it soak in. Let sit 30 minutes.
  • Meanwhile, remove peel and white pith from oranges. Slice into 1/4"-thick rounds; remove seeds. Combine in a medium bowl with remaining bay leaf syrup; let sit, tossing occasionally, at least 20 minutes. Taste and add lemon juice as needed.
  • Serve cake with oranges in syrup.
  • Do Ahead
  • Cake can be baked 2 days ahead. Store tightly wrapped at room temperature.
