CINNAMON APPLE SWIRL CAKE

Steps:
- Whisk together the dry ingredients; set aside.
- Whisk eggs, OJ, canola oil and vanilla until well blended.
- Make a well in the center of the dry ingredients and pour in the wet ingredients.
- Using a hand mixer, blend together thoroughly.
- Butter and flour a tube pan. Preheat oven to 325°F.
- Pour half of batter into the pan.
- Sprinkle half of the swirl mix (directions below) evenly on top of the batter and repeat layers.
- With a knife, offset spatula or wooden skewer, swirl mixture gently to distribute throughout the batter.
- Bake for 1 hour and 20-30 minutes. Toothpick should come out clean. This may be dependent upon your oven so adjust accordingly.
- Remove from the oven onto cooling rack for about 10 minutes. Using an offset spatula, carefully go around the edges. Let it sit for about 15 minutes more, then pull cake up from the sides by grabbing the center tube.
- Using an offset spatula, go around the center tube and along the bottom to release it from the base of the tube pan. Allow it to completely cool, then lift the cake up with hands on both sides onto a cake plate.
- Slice and serve with vanilla ice cream. Store in a covered container. Enjoy!
CINNAMON SWIRL APPLE BREAD
This lovely apple bread has generous cinnamon swirl and crisp sugared top.

- Preheat the oven to 350°F and set an oven rack in the middle position. Spray an 8.5 x 4.5-inch loaf pan lightly with nonstick cooking spray. Line the long side of the pan with a parchment paper "sling" and spray lightly with nonstick cooking spray again.
- In a small bowl, mix the brown sugar and cinnamon until evenly combined. Set aside.
- In the bowl of an electric mixer fitted with the paddle attachment or beaters, beat the eggs and granulated sugar on medium speed until pale and creamy, about 2 minutes.
- With the mixer on low, gradually add the melted butter followed by the milk and vanilla, and mix just until evenly combined.
- Add the flour, salt, and baking powder to the batter and mix on low speed until evenly combined.
- Add the apples to the batter and fold with a rubber spatula until evenly incorporated.
- Spoon about ⅔ of the batter into the prepared pan. Sprinkle about ⅔ of the brown sugar-cinnamon mixture on top of the batter. Spoon the remaining batter over top, followed by the remaining brown sugar-cinnamon mixture. Using a butter knife, swirl the layers by making a zig-zag motion through the batter once in each direction (don't overdo it!).
- Bake for about 50 minutes, until the bread is golden brown and a cake tester or toothpick inserted into the center comes out clean. Let the bread cool on a rack for about 30 minutes, then use the parchment sling to lift the bread out of the pan and onto the rack. Let cool completely before slicing, a few hours or overnight. Store loosely covered with aluminum foil on the countertop for up to 4 days.

Steps:
- Preheat oven to 350 degrees.
- In a large mixing bowl, combine flour, sugar, baking soda, salt, nutmeg, and cinnamon. Blend together until well combined. Add chopped apple, and mix until apple is evenly distributed and covered with flour.
- In a medium bowl, combine buttermilk, eggs, banana, vanilla, and oil. Mix well, and slowly incorporate into dry ingredients. Gently fold together just until combined.
- In a small bowl, (like how I'm downsizing each time? ;) haha) combine 1/2 cup granulated sugar and 1 tablespoon cinnamon. Mix well.
- In a greased loaf pan (9x3x5), pour 1/4 of the batter, repeat with a second loaf pan. Sprinkle half of the cinnamon swirl mixture over batter; repeat. Cover both pans with remaining batter and swirl a butter knife through to make the marbled appearance.
- Bake for an hour to an hour and 5 minutes, or until golden brown and a toothpick inserted near the center comes out nearly clean. (A little gooey is okay, but if loaves start getting too dark before they're fully baked, cover with aluminum foil).
- For the glaze, mix together milk and powdered sugar and drizzle over cooled bread.

- Peel, core, and chop apples into small pieces.
- Mix together with 3 tablespoons sugar and cinnamon.
- Set aside.
- In large bowl, combine sugar and cooking oil; beat.
- Add eggs, orange juice, and vanilla.
- Sift together flour, baking powder, and salt; add to creamed mixture.
- Beat until smooth.
- Pour one third batter into greased and floured 12 cup bundt pan alternating with one half apple mixture.
- Repeat.
- End with layer of batter on top.
- Bake at 325 degrees F for 60 minutes or until cake tests done.
- Cool in pan 10 to 15 minutes; turn out on wire rack or serving plate to complete cooling.
- Sprinkle with confectioners sugar.

- Combine milk, 1/3 cup sugar, salt and 1/4 cup butter in saucepan over medium heat, stirring until butter melts.
- Cool to lukewarm.
- Dissolve yeast in warm water in large bowl.
- Stir in milk mixture and eggs.
- Gradually stir in enough flour to form stiff dough.
- Knead on floured surface until smooth and satiny.
- Place in greased bowl, turning to coat surface.
- let rise, covered in warm place until doubled in bulk.
- combine 2/3 cup sugar, 1 tbls of flour and cinnamon in bowl and mix well.

- Butter or spray a 3 quart baking dish.
- Slice cinnamon buns into 1 inch thick slices and place in dish.

- Preheat oven to 400°. Refrigerate icing from cinnamon rolls. Separate cinnamon rolls; press onto bottom and up the sides of an ungreased 9-in. deep-dish pie plate. Bake 7-9 minutes or until set. Cool on a wire rack. Reduce oven setting to 350°., For filling, in a large bowl, toss apples with lemon juice. In a small bowl, mix sugar, flour, cinnamon and nutmeg.
