Kneading the dough to make this flatbread recipe is a fun and much-loved task for little ones. Super-tasty, super-fun!

FLATBREADS
350 g self-raising flour, plus extra for dusting
1 teaspoon baking powder
350 g natural yoghurt
GARLIC AND HERB BUTTER (OPTIONAL)
2 cloves of garlic
a bunch of fresh soft herbs, such as flat-leaf parsley, tarragon, basil, dill
40 g unsalted butter

Steps:

  • Add all the flatbread ingredients to a mixing bowl and mix together with a spoon, then use clean hands to pat and bring everything together.
  • Dust a clean work surface with flour, then tip out the dough.
  • Knead for a minute or so to bring it all together (this isn't a traditional bread recipe, so you don't need to knead it for long - just enough time to bring everything together).
  • Put the dough into a floured-dusted bowl and cover with a plate, then leave aside.
  • If making the garlic butter: peel the garlic cloves and crush them with a garlic crusher.
  • Pick the herb leaves onto a chopping board and finely chop them, discarding the stalks.
  • Melt the butter in a small pan over a medium heat, then stir through the garlic and chopped herbs, then set aside.
  • Dust a clean work surface and rolling pin with flour, then divide the dough in half, then divide each half into 6 equal-sized pieces (roughly the size of a golf ball).
  • With your hands, pat and flatten the dough, then use a rolling pin to roll each piece into 12cm rounds, roughly 2mm to 3mm thick.
  • Use a knife to cut 6 lines into the centre of each round, leaving about 3cm at each end.
  • Place the griddle pan on a high heat, then once hot, cook each one for 1 to 2 minutes on each side, or until bar-marked and puffed up, turning with tongs.
  • Brush the flatbreads all over with herby garlic butter as they come off the griddle, then pile onto a serving board so everyone can dig in and help themselves.

3 heaped tablespoons natural Greek yogurt
1 tablespoon extra-virgin olive oil, plus more for the pan

Pinch of kosher salt
2 to 3 tablespoons tomato pasta sauce (Napolitano sauce)
3 to 4 slices ham off the bone
1 small handful grated cheese
1 teaspoon dried oregano
2 to 3 tablespoons tomato pasta sauce (Napolitano sauce)
1 small handful grated cheese

2 to 3 fresh basil leaves

1 button mushroom, sliced
1 small red bell pepper, sliced

Steps:

  • For the flatbread: In a small mixing bowl, add the self-rising flour, yogurt, olive oil, rosemary and salt and mix. It might seem like the consistency is sticky, but this is okay!
  • Dust a bench top with more of the flour and knead the dough until it forms a ball. If it's still sticky, add more flour to the bench. Roll out the dough with a rolling pin until 1/2 centimeter (1/4 inch) in thickness.
  • Heat a small splash of olive oil in a small pan over medium heat. Once hot, transfer the flatbread over and cook until light brown, about 2 minutes. Then flip and cook on the other side for another minute. Serve topped with one of the pizza topping combinations.

2 1/2 cups self-rising flour (or 2 cups self-rising flour plus 1/2 cup whole-wheat flour)
2 tablespoons plus 1 teaspoon vegetable oil (divided, plus extra for the pan)
2/3 to 1 cup warm water
Optional: melted butter

Steps:

  • Gather the ingredients.
  • Place flour(s) in a bowl. Mix in 2 tablespoons of the vegetable oil.
  • Add the warm water slowly, stirring as you go, until the dough starts to come together. Keep stirring, adding more water in small amounts, until the dough forms a ball.
  • Turn the dough out onto the counter and knead for a few minutes, adding a little flour if it is too sticky. The dough should be soft but not sticky enough to adhere to your hands or the counter.
  • Let the dough rest for 10 minutes, covered with a damp cloth.
  • Roll out the dough into a large circle, about 1/4 inch thick. Spread the remaining 1 teaspoon vegetable oil over the surface of the dough. Roll the dough up into a long roll.
  • Slice the log of dough into 8 to 10 pieces. Roll out each piece, cut-side down, into a 6-inch circle. Let the circles rest, covered with a damp cloth, for 5 minutes.
  • Heat a flat, heavy griddle or skillet (a cast-iron skillet or crepe pan works well) over medium-low heat.
  • Roll the first circle of dough out as thin as possible (to about an 8- to 9-inch circle).
  • Add about 1 teaspoon oil to the skillet and add a circle of dough. Cook 1 to 2 minutes, until the bread puffs up and turns light brown on the underside. Slide the roti to the side of the pan and quickly flip to brown the other side, cooking for about 1 to 2 minutes more.
  • Remove from the pan and place roti in a colander to cool. Cover roti with a damp towel while you cook the rest; this will help keep them from becoming hard. Add more oil to the skillet as needed.
  • Brush the finished roti with melted butter before serving, if desired. Serve and enjoy.

Steps:

  • Mix flatbread ingredients into a dough in food processor or by hand. Dust work surface with flour and knead for a minute then cover and put aside to rest.
  • Melt butter in pan with garlic and herbs.
  • Dust work surface with flour then roll out 12 equal sized rounds from the dough, about the size of side plates. Make six long incisions down the rounds to allow air through, leaving about 2inches still intact at either end. Cook on a hot, dry griddle for 2 mins each side.
  • As the second side cooks, baste the first with the butter. Serve.
