1 c butter....cream well
1 c light brown sugar
1 c sugar
2 eggs
1-1/2 tsp vanilla
1/2 tsp salt
2-1/4 c flour
1 tsp baking soda
2 c see's... semi-sweet chocolate chips
1 c chopped walnuts...optinal

Steps:

  • 1. add butter, brn sugar, sugar & eggs, beating till smooth
  • 2. Beat in vanilla,salt,flour,baking soda, SEE'S chocolate chips and the walnuts if using.
  • 3. Drop by teaspoons, on a grease cookie sheet.
  • 4. Bake at 375 8-10 minutes. Yield is determined by the size of your cookie. 2-4 dozen. I made 3-1/2 dozen cookies.

  • Preheat oven to 375°.
  • Cream butter, sugars and vanilla until fluffy.
  • Add eggs and mix well.

  • Preheat oven to 375 degrees F (190 degrees C). Grease a 9x13-inch baking pan.

1 egg
1 egg yolk
1 teaspoon maple extract
1 teaspoon chocolate extract

2 1/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup semisweet mini chocolate chips
1 cup caramel-filled chocolate candies (recommended: Hershey's Caramel-Filled Kisses)
3/4 cup uncooked oats
1/2 cup chopped pecans

Steps:

  • Preheat oven to 350 degrees F.
  • Melt butter, sugar, and brown sugar together in a microwave for 15 to 30 seconds on medium to low power, careful not to burn the butter. Let the butter-sugar mixture cool just a bit and blend in the egg and egg yolk. Add the maple, chocolate and orange extract, and the heavy cream. Stir and set aside. Sift dry ingredients together and fold into wet mixture carefully. Add chocolate chips, candies, oats and pecans. Chill dough in a freezer for a few minutes to make sure it is cold. Using an ice cream scoop, drop dough onto parchment-lined cookie sheet. Bake for 10 to 12 minutes and transfer to a wire rack to cool.

Steps:

  • Preparation: The least stressful way to bake a project is to prep everything in advance. This includes two 6" sugar cookies with chocolate chips (double the recommended recipe), buttercream in two colors, raw cookie dough balls, a template of your choice and an Exacto knife for cutting out the template. In your prep, create the Totoro template.
  • Making the cookies: Place a baking mat or parchment paper on a half sheet pan (a baking mat is easier because it's heavier. Spread the cookie dough across a half sheet pan and then place chocolate chips. Place a piece of parchment paper over this and then roll out the dough until desired thickness. (Pro tip: the cookie won't get any thinner than your thickest chocolate chips. If you'd like a thinner cake use mini chocolate chips.).
  • Refrigerate for ½ hour until completely firm. Lightly outline the Totoro template and then peel the template away. Now make slices all the way around the cake to prep for removing. Next, you can cut by re-outlining the original template. Then remove all of the remaining pieces.
  • Baking: Refrigerate the cookie for 15 minutes then bake directly. Bake until barely seeing brown around the edges. (Pro tip: because this cookie is larger it helped to have another baking sheet in the oven on the top level. Let completely cool.).
  • Fill, crumb coat and frost the cake: Place the first layer of the cookie cake on a serving tray. Now pipe an outline of buttercream with a large star tip. Inside of that outline, place the chocolate chip cookie dough. Alternate to your liking.
  • Making decorations: For that next-level detail I used royal icings to make the arrows in his belly.
  • Final decorating: Place the second layer of the cake now. Create two outlines using an edible marker-one for Totoro's body and then the second for his belly. Pipe buttercream using star and round tips of your choice (try Wilton tip size 10 and 199). Now add his eyes (these were candies) and stomach arrows for a finishing touch! (Pro tip: for more color you could fill his belly with candy!).

Steps:

  • Cover a baking sheet with the foil and lightly coat with cooking spray. Roll out the cookie dough and cut out rounds. Use aspic cutters to cut out shapes within each circle. To make a hanging cookie, punch a hole in the top of each cookie with a chopstick. Place the cookies on the baking sheet and bake as directed. Halfway through the baking time, fill the holes with the crushed candy (do not overfill). Once thoroughly baked, repoke the hole at the top of the cookie. Cool, then thread with shoestring licorice or ribbon.

Steps:

  • Add the extract and salt: On low speed, add the peppermint extract and salt and mix just until combined.
  • Place the racks and preheat the oven: Just before the cookies finish chilling, arrange two racks in the middle and bottom third of the oven and preheat it to 350°F. Line two baking sheets with parchment paper.
  • Bake the cookies: Bake for 10 minutes or until the cookies are set, turning and rotating the pans between racks halfway through. The cookies will turn from glossy and wet to matte. They will feel slightly soft out of the oven but should barely make an indent when gently tapped them with your fingers. If they look shiny or feel too soft, continue baking until firmed up, about 2 minutes.
  • Melt the chocolate chips: In a small microwave-safe bowl, add the chocolate chips. Microwave for 30 seconds on full power, then stir. Repeat, heating and stirring in 15-second intervals until the chocolate melts into a smooth, homogenous texture.

½ cup butter (1 stick, softened)
½ cup granulated sugar
½ cup light brown sugar (packed)
1 large egg
1 tsp pure vanilla extract
1 ½ cups all-purpose flour*
½ tsp baking soda
¼ tsp baking powder
½ tsp sea salt
1 cup chocolate chips (regular or mini)
25 Miniature Reese's Cups (or 9 full size (or any other candy of your choosing)!)

Steps:

  • Preheat oven to 350 degrees F. and line a 9x9" baking pan with parchment paperand lightly grease. Set aside.
  • In a small bowl, mix together flour, baking soda, baking powder, and salt. Set aside.
  • In the bowl of a standing mixer, cream together butter, light brown sugar and granulated sugar until well combined.
  • Add egg and vanilla to the butter/sugar mixture and beat until combined.
  • Add dry ingredients and beat until all the ingredients are thoroughly combined.
  • Add chocolate chips and mix until evenly distributed.
  • Press a little less than half of the dough into the bottom of your prepared baking pan, leaving about a ½ inch gap between the cookie dough and the side of the pan (it expands during baking)
  • Place Reese's cups (or any other candy of your choosing) evenly spaced on top of the first layer of dough.
  • Top with the remaining cookie dough, making sure to completely cover the candy on both the top and sides.
  • Bake for 25-30 minutes, until the top is golden brown.
  • Let the bars cool in the pan for 30 minutes. Use the parchment paper to lift the cookie bars out of the pan, then cut into squares and serve.
