One of Bubba's recipes that is fabulous and by the way it's Paula Dean's brother and a very good cook also.

2 tablespoons olive oil
2 garlic cloves, minced
1/2 cup vodka
1 (14 ounce) can crushed tomatoes
1/2 cup heavy cream
1/2 teaspoon red pepper flakes
1/8 teaspoon salt
1/8 teaspoon black pepper
1/2 lb bay scallop
1/2 lb large shrimp, peeled deveined
1 lb uncooked linguine

Steps:

  • Heat oil in a large cast iron skillet over medium heat. Add the garlic and cook for 2 minutes. Add the vodka and reduce the vodka by 1/2. Add the tomatoes,cream,pepper flakes, salt and pepper to taste. Cook stirring occasionally for 2-3 minutes or until thick, it will turn reddish orange.
  • Cook the pasta in a large pot of salted water according to the package instructions.Do not over cook! Drain and transfer to a large bowl,pour the sauce over the pasta,toss to combine. Serve immediately.

A different way to have your pasta and shrimp. It is so delicious and creamy, but you may want to double the recipe for the sauce as it doesnt make alot. There is enough sauce for about 4 servings.

1 lb baby shrimp (no shell)
2 teaspoons olive oil
3 cloves garlic, minced &,divided
1 cup heavy cream
1 1/2 teaspoons chili powder
1 teaspoon ground cayenne pepper
1/2 teaspoon red pepper flakes
salt
3/4 cup milk
2 tablespoons flour
1 package angel hair pasta

Steps:

  • While making the sauce, cook the pasta.
  • Put olive oil in sauce pan and let it heat up.
  • Then add 2 cloves of garlic and shrimp.
  • Saute for about 2 minutes.
  • Then add cream, chili powder, cayenne pepper, pepper flakes and salt.
  • Bring to a boil, and then put heat to medium high.
  • Combine milk and flour and mix well until there are no lumps.
  • Add into the sauce to thicken and let boil again.
  • Simmer for about 3-5 minutes, or until your pasta is done.

  • Combine all the spices and seasonings for the Cream Sauce Seafood Pasta in a small bowl. Cover and set aside until needed.
  • Heat extra virgin olive oil and unsalted butter in a medium sized sauté pan over medium-high heat, Once hot, add all of the seafood, lemon juice, kosher salt, freshly cracked black pepper, Herbs De Provence and sauté for a minute. Add garlic and a splash of dry white wine, give everything a good stir, then cover and steam for 4-6 minutes. Uncover the pan and transfer shrimp and squid to a clean bowl once they have just cooked through. Cover again and steam the clams and mussels for a further 3-5 minutes, or until their shells have opened and most of the wine has evaporated. Then, switch off the heat. (Note: Discard any clams or mussels after this point if their shells are still closed tight. They are not suitable to eat.)
  • In another large deep sauté pan, heat extra virgin olive oil and unsalted butter over medium-high heat until the butter has melted and is nice and bubbly. Once hot, add the onion and garlic and sauté for 1-2 minutes until fragrant.
