2 (4 ounce) halibut fillets
6 scallops
6 peeled and deveined jumbo shrimp, tail still attached
⅓ cup dry white wine
2 tablespoons melted butter
1 tablespoon lemon juice
½ teaspoon seafood seasoning, such as Old Bay™
1 teaspoon minced garlic
Salt and pepper to taste
1 tablespoon chopped fresh parsley

Steps:

  • Preheat oven to 450 degrees F (230 degrees C).
  • Arrange the halibut, scallops, and shrimp in an oven-safe, glass baking dish. Drizzle with wine, butter, and lemon juice. Sprinkle with the seasoning and garlic. Season to taste with salt and pepper.
  • Bake in preheated oven until the halibut has turned white, and is flaky, 10 to 12 minutes. Sprinkle with parsley just before serving.

1/2 pound sea scallops
1 small onion, finely chopped
1 celery rib, finely chopped
6 tablespoons butter, cubed
7 tablespoons all-purpose flour
1-1/2 cups half-and-half cream
1 cup shredded sharp cheddar cheese
6 tablespoons sherry or apple juice
3/4 teaspoon salt
1/4 teaspoon cayenne pepper
1 pound cooked medium shrimp, peeled and deveined
1 can (6 ounces) crab
1 can (14 ounces) water-packed artichoke hearts, drained, rinsed, chopped and patted dry
1 can (8 ounces) sliced water chestnuts, drained
1/2 cup sliced almonds
1/4 cup grated Parmesan cheese

Steps:

  • Preheat oven to 350°. In a Dutch oven, saute scallops, onion and celery in butter until scallops are firm and opaque. Stir in flour until blended. Add cream. Bring to a boil; cook and stir 2 minutes or until thickened. Reduce heat; add cheddar cheese, sherry, salt and cayenne, stirring until cheese is melted. Remove from heat; set aside., In a greased 11x7-in. baking dish, layer the shrimp, crab, artichokes and water chestnuts. Top with sauce. Sprinkle with almonds and Parmesan cheese. , Bake, uncovered, 25-30 minutes or until heated through. Let stand 10 minutes before serving.

8 ounces thin egg noodles
1/2 cup butter divided
1 lb mushrooms, sliced
2 lbs shrimp, peeled and deveined
2 lbs bay scallops, trimmed
6 tbsp all purpose flour
1/2 tsp salt
1/8 tsp black pepper
4 cups of milk
2 cups shredded sharp cheddar cheese
1/2 tsp paprika

Steps:

  • In a large pot of boiling water, cook noodles according to package directions until just tender.
  • Drain and transfer to 12 cup casserole dish.
  • Meanwhile, in a large skillet, melt 2 tbsp of butter over medium-high heat.
  • Saute mushrooms for 5 to 7 minutes or until tender.
  • Spread over noodles, along with shrimp and scallops.
  • In a small sauce pan, melt remaining butter over medium heat. Whisk in flour, salt and pepper. Cook, stirring constantly for about 2 minutes or until smooth.
  • Gradually whisk in milk and cook, stirring constantly, until thickened. Pour over noodle mixture and sprinkle with cheese.
  • Cover and bake in preheated (350F) oven for 40 to 45 minutes or until hot and bubbly.
  • Remove from oven and preheat broiler. Uncover casserole, sprinkle with paprika and broil for 3 to 5 minutes or until top is golden brown.

I love pasta. I love anything cooked with white sauce and cheese. I also love seafood. So guess what the best combination for me is? Baked seafood pasta, of course!

2 teaspoons white rum
200 grams (7 ounces) shrimp (, peeled)
1 squid (, cut into rings)
sea salt ((and pepper to taste))
3 tablespoons butter
3 tablespoons all purpose flour
3 cups milk
1/4 teaspoon chicken bouillon
1/2 teaspoon thyme
1/4 teaspoon nutmeg
2 tablespoons olive oil
2 cups white mushroom (, sliced)
4 cloves garlic (, chopped)
250 grams (9 ounces) pasta
1 and 1/2 cup mozzarella cheese (, shredded)

Steps:

  • In a small bowl, add the shrimp, 1 teaspoon rum, slightly grated salt and pepper and mix well with a fork.
  • In another small bowl, add the squid, the rest of the rum, slightly grated salt and pepper and mix well with a fork.
  • In a medium sizde sauce pan, melt the butter on medium low heat, whisk in the flour and mix with a wooden spatula immediately, mixing until the flour is completely integrated with the butter. Keep stirring for another 1 or 2 minutes, pour in all the milk at one time and immediately stir with a spatula. Turn to medium heat and keep stirring, until boiling, then turn to medium low heat. Add salt, pepper, chicken bouillon, thyme and nutmeg. Simmer until the sauce turns thick, after about 5 minutes. Adjust seasoning by adding more salt and pepper. The sauce should taste a bit salty by itself.
  • Bring a big pot of water to a boil and cook pasta according to instructions until al dente. Drain and set aside.
  • In a non-stick skillet, add 1 tablespoon of olive oil and heat on medium high heat. When oil is warm, add garlic and stir until fragrant. Add mushrooms and stir fry until mushrooms are cooked through and juice is fully absorbed. Place mushroom on a plate and set aside.
  • In the same skillet, heat half a tablespoon of olive oil, grill shrimp side by side, until both surfaces turn pink but the shrimp are not cooked through yet. Place shrimp on a plate and set aside.
  • In the same skillet, heat the rest of the olive oil and add squid, stirring until the surface of the squid turns white but the squid is not yet cooked through. Place squid on a plate and set aside.
  • Preheat oven to 180 degrees C (350 F).
  • To assemble pasta, place a layer of pasta in a baking pan / casserole dish, add pasta and white sauce, place a layer of shrimp, squid and mushroom, then top with mozzarella. Cover the pan with aluminum foil, bake on the middle rack for 15 minutes, then uncover and bake at 200 degrees C (400F) for another 5 minutes, until the cheese turns golden.
  • Let the pasta cool down for about 5 minutes, then serve warm with chilled sparkling wine or dry white.

2 cups water, lightly salted
1/2 cup white wine
1 sprig fresh dill
1 lb sea scallops
1 lb shrimp, shelled and cleaned
1/4 cup butter or 1/4 cup margarine
4 ounces fresh mushrooms, thinly sliced
1/4 cup chives or 1/4 cup green onion, chopped
1/4 cup flour
1 cup light cream
1 1/2 cups cracker crumbs
3 tablespoons butter, melted

Steps:

  • Bring water, wine and dill to a boil.
  • Add scallops; simmer 2 minutes.
  • Add shrimp; simmer 3-4 minutes longer or until shrimp are opaque.
  • Remove from heat.
  • Put seafood in a shallow 1 1/2 Quart baking dish. Set aside; reserve liquid.
  • Heat 1/4 C butter in skillet; saute mushrooms with chives or green onions.
  • Stir in flour continue cooking 1 minute until bubbly.
  • Stir in cream and 1 Cup of the reserved fish stock.
  • Cook slowly until thick. Add salt and pepper if desired.
  • Pour sauce over seafood.
  • Mix cracker crumbs and the 3 T melted butter.
  • Sprinkle cracker crumbs over the seafood.
  • Bake at 400 for 15-20 minutes or until bubbly and lightly browned.

1 cup dry white wine
1 cup water
2 small bay leaves (whole)
1/2 teaspoon Old Bay Seasoning
12 ounces shrimp (thawed, peeled and deveined)
12 ounces cod (cut into 1" squares)
2 tablespoons butter
2 medium leeks (white part only, cleaned and cut into matchstick pieces)
2 stalks celery (diced)
sea salt
1 tablespoon butter
1/2 teaspoon xanthan gum
1 cup heavy whipping cream
1/4 teaspoon sea salt ((or to taste))
4 ounces parmesan cheese (shredded)
1/4 cup super fine almond flour
2 teaspoons Old Bay Seasoning
1 tablespoon butter
1 tablespoon fresh parsley (chopped (optional for garnish))

Steps:

  • Preheat oven to 400º Fahrenheit. In a large, heavy saucepan, stir together dry white wine, water, bay leaves, and 1/2 teaspoon Old Bay. Bring poaching mixture to a simmer over medium high heat. Turn heat to low, and simmer, uncovered for about 3 minutes.
  • Add shrimp to the poaching mixture. Simmer shrimp until barely opaque, then remove to a bowl using a slotted spoon. Repeat for the cod. Reserve shrimp and cod for later.
  • Simmer the poaching mixture over medium high heat until reduced to about 1 cup of liquid. Remove from heat, strain, and reserve for later.
  • Meanwhile, melt two tablespoons butter in a large heavy saucepan or Dutch oven over medium-high heat. When butter stops foaming, add leeks and celery. Sprinkle lightly with sea salt. Cook leeks and celery, stirring occasionally, until edges begin to brown and vegetables are soft. Remove from heat.
  • Layer vegetables and seafood in a casserole dish. I used a handmade artisan dish, but any casserole that holds 7-8 cups should work. An 8" square baking dish should work as well.
  • Over medium heat, melt remaining tablespoon of butter in the same saucepan or Dutch oven used to cook the vegetables, without cleaning. Stir in the xanthan gum.
  • After xanthan gum is coated with butter, slowly stir in the reduced and strained poaching liquid. Bring liquid to a simmer, scraping up any browned bits in the pan.
  • When mixture has started to thicken, stir in the heavy whipping cream. Bring to a simmer and cook, stirring frequently, until mixture has a gravy-like texture. Taste and add salt (I used 1/4 teaspoon) if desired. Pour mixture over the seafood and vegetables in the casserole dish.
  • Place almond flour, parmesan cheese, 2 teaspoons Old Bay, and 1 tablespoon butter in a food processor. Pulse until completely blended. Sprinkle mixture on top of the casserole. Bake for about 20 minutes, or until top is crisp and brown.
  • If desired, sprinkle chopped parsley on to garnish before serving.

300g medium potatoes (about 3), thinly sliced
2 tbsp milk
40g mature cheddar , finely grated
1 tsp rapeseed oil
1 onion (160g), finely chopped
1 red pepper , deseeded and finely diced (270g)
2 tsp balsamic vinegar
1 tsp vegetable bouillon powder
400g can chopped tomatoes
½ x 30g pack basil , leaves picked and finely chopped
1 garlic clove , finely grated
280g pack skinless cod loins
100g frozen small Atlantic cooked prawns , defrosted
160g broccoli florets

Steps:

  • Boil the potato slices for 10 mins then drain, tip into a bowl and gently mix in the milk and half the cheese. Don't worry if the potatoes break up a little.
  • Meanwhile, heat the oil in a large frying pan and cook the onion until softened. Stir in the pepper and cook for 5 mins more. Spoon in the balsamic vinegar and bouillon powder, then stir in the tomatoes, basil and garlic. Lay the cod fillets on top, then cover and cook for 6-8 mins until the cod flakes when tested. Heat the grill to high.
  • Take off the heat, stir in the prawns and tip into a shallow baking dish, breaking up the cod into large chunks. Cover with the potatoes and sprinkle with the remaining cheese. Grill until golden. While it's grilling, steam or boil the broccoli to serve with the bake.

1 (12.8-ounce) package smoked andouille sausage, thinly sliced

16 large sea scallops
16 large prawns, peeled and deveined (see Note)
8 (84-98 g) East Coast lobster tails, butterflied or split in half lengthwise (see Note)

1/4 cup lemon juice
2 Tbsp. chopped fresh tarragon

Steps:

  • Preheat oven to 450˚F. Set out a large, 13" by 18" or similar sized sided baking sheet. Line it with parchment paper, if your pan is prone to sticking. Arrange the seafood on the pan. Combine the butter, wine (or stock), lemon juice, tarragon, garlic, salt, paprika, cayenne and lemon juice in a small pot and set over medium-high heat. Warm the mixture just until the butter is melted, and then remove pot from the heat. Spoon butter mixture over seafood. Set seafood in the oven and bake, uncovered, for 13 to 15 minutes, or until just cooked. Garnish with lemon slices and tarragon sprigs, set baking sheet on the dining table and enjoy. Steps:

  • Gather the ingredients.
  • Heat the oven to 350 F. Melt 1 tablespoon of butter in a medium saucepan or sauté pan over medium heat. Add the sliced mushrooms and cook, stirring, until they are tender.
  • Use a small piece of the reserved butter to grease a 1 1/2-quart casserole , then combine in it the shrimp, lobster, and crabmeat. Add the cooked mushrooms on top.
  • Add the remaining butter to a saucepan and place it over medium-low heat; stir in flour until smooth and bubbly. Continue cooking, stirring, for 2 minutes.

1 tablespoon flour
4 short ear cobs of corn
4 links Kielbasa sausages
8 new potatoes
2 tablespoons Old Bay seasoning
1 cup dry white wine
1 pound large shrimp

Steps:

  • Preheat oven to 350 degrees.
  • Add flour to bag, Shake. This helps prevent bag from bursting.
  • Add: corn, sausage, potatoes to Reynolds oven bag.
  • In a small bowl whisk together wine and Old Bay seasoning. Pour mixture into bag. Close bag with tie (found inside Reynolds package).
  • Cut six 1/2 inch slits in top of bag to allow steam to escape. Place bag in an 9 x 13 deep sided baking pan. Tuck ends of bag into pan.
  • Place pan in oven, allowing room for bag to expand during cooking without touching heating elements, wall or racks. Bag should not hang over pan. Bake for approximately 25 minutes.
  • CAREFULLY open bag and add shrimp. Re-close bag. Continue cooking for additional 5 minutes or until shrimp are pink.
  • To serve- carefully cut open top of oven bag. Remember - always support bag with pan.

1 lobster tail, rough chopped
10 jumbo shrimp, cut in half
8 Jonah crab claws, shucked (optional)
2 shallots fine diced
2 cloves garlic, minced
2 tablespoons unsalted butter
1/2 cup Clos du Bois Chardonnay
2 tablespoons flour
2 1/2 cups milk or cream, I use milk
1 cup grated Parmesan, divided in half
Pinch salt & pepper
1/4 teaspoon dried tarragon or thyme
1 lb Barilla Penne, cooked Al Dente
2 tablespoon butter, melted
1 cup Italian bread crumbs

Steps:

  • Preheat oven to 425.
  • Heat a skillet over medium , drizzle with Olive oil.
  • Saute seafood for 1-2 minutes.
  • Slowly add wine to deglaze the pan, add shallots, garlic & butter. Stir.
  • Add flour, stir to coat seafood.
  • Pour in milk or cream, bring to a boil stirring constantly
  • Reduce to simmer, sauce should start thicken.
  • Remove from heat. Stir in 1/2 the Parmesan.
  • Cook, drain and rinse penne pasta.
  • Mix bread crumbs into melted butter.
  • Layer in casserole dish- pasta, sauce and seafood, bread crumbs, remaining Parmesan.
  • Bake 15 minutes or until top is golden and edges are bubbly.
  • Serve with a glass of Chardonnay and crusty bread.

Steps:

  • Heat grill to medium. In a small bowl, combine butter, dill, and garlic; season with salt and pepper. Set aside.
  • Fold four 14-inch squares of heavy-duty aluminum foil in half, forming 4 rectangles. Assemble packets: On one half of each of four folded pieces of heavy-duty foil, dividing ingredients evenly, arrange potatoes in a single layer; top with cod, then shrimp. Place 2 pieces of corn on the side. Season with salt and pepper. Add a dollop of the butter mixture and two lemon slices. Fold foil over ingredients, and crimp edges tightly to seal.
  • Place packets on grill, with potato layer on the bottom. Cook, rotating (but not flipping) packets occasionally, until fish is just cooked through and potatoes are tender, 12 to 14 minutes.
  • Remove from grill. Slit packets open, and transfer contents to serving bowls. Garnish with dill sprigs; serve with rolls.

1/2 cup shredded Swiss cheese
2 tbs grated Parmesan
Paprika
Sea salt and pepper

Steps:

  • Preheat oven to 375 degrees F.
  • Spray a glass or ceramic 7 x 11 baking dish with cooking spray
  • Cut haddock into about 1 1/2 in chunks and lay in pan. Add shrimp and scallops. Sprinkle with salt and pepper to taste.
  • Add minced garlic to fish and shrimp
  • Pour heavy cream over the fish and add Swiss cheese.
  • Sprinkle with paprika and Parmesan cheese. Bake for about 15-20 minutes being careful to not over bake so the shrimp doesn't overcook

Steps:

  • In a well-buttered 9"x13" baking dish, layer seafood in the order listed; cover with cheese. Mix together the Ritz cracker crumbs, butter, Worcestershire sauce and garlic powder; spread over the cheese, covering top.

4 medium thin skinned potatoes
Yukon gold or white
mandolin or thinly sliced
1 large bulb fennel (or 2 medium bulbs)
trim tops and core
thinly sliced with mandolin or by hand
1 large onion (or 2 medium)
thinly sliced
Salt and pepper
1 pound large shrimp
shells removed and reserved (for fortified stock
if making)
Four 6- to 8-ounce sustainable white fish fillets
such as halibut
patted dry
About 3 cups fortified stock (see below)
or store-bought chicken stock
vegetable stock
bone broth or water
3 anchovy fillets
chopped (optional)
2 to 3 cloves shaved garlic
One handful thyme leaves
plus another handful for garnishing
2 bay leaves
1 lemon
zest removed and reserved
halved
About ¾ cup white vermouth or white wine
1 cup chopped fresh celery tops
parsley and fennel fronds
Fresh parsley
for garnishing (optional)
1 leek
One handful fresh parsley and thyme stems
3 to 4 lemon slices
5 to 6 cloves garlic
crushed
1 baguette
split lengthwise
then halved crosswise and lightly toasted
Butter or olive oil
Dried chives
Dried parsley
Dried dill
Fresh garlic slivers
Crushed red pepper flakes
for sprinkling
Grated parm

Steps:

  • Preheat oven to 450˚F with rack in center
  • Arrange potatoes, fennel and onions in roasting pan and toss to coat with EVOO, salt and pepper
  • Roast 15 minutes
  • If making the fortified stock from scratch, toast shrimp shells in a skillet
  • Add leek, parsley and thyme stems, lemon slices and crushed garlic
  • Add stock, bring up to a bubble, then turn down to low and cook for about 20 minutes
  • Strain, return stock to pan and reduce over medium-low heat for 7 to 8 minutes, then stir in anchovies, if using
  • If using store-bought stock or broth, add to a pan and reduce over medium-low heat for about 8 minutes, then stir in anchovies, if using
  • Arrange fish and shrimp on top of potatoes in pan, season with salt and pepper
  • Drizzle fortified stock or reduced store-bought stock or broth on top, add shaved garlic, handful thyme leaves, bay leaves, and lemon zest, douse with vermouth or wine, cover with foil and roast until fish is flaky and lightly browned and shrimp is opaque, 7 to 8 minutes, then uncover and bake 2 to 3 minutes more
  • Spoon pan juices over top, then sprinkle with fresh herbs like thyme and parsley, and squirt with lemon juice halves
  • For the garlic bread, if making, put bread on a foil-lined baking sheet
  • Melt butter or heat up olive oil, and add dried herbs and garlic, about a ½ palmful of each herb
  • Brush onto bread and sprinkle with red pepper flakes and grated parm
  • Broil until crisp and golden
  • To serve, spoon seafood into shallow bowls, top with veg, mop up roasting pan juices with garlic bread (optional, but highly recommended!) and serve alongside

A creamy cheesy fish and shrimp casserole from Ireland.

2 cups whole milk
1 medium onion (peeled and quartered)
2 bay leaves
3 parsley stalks
1 pound monkfish fillets (cut in 1 inch cubes)
½ pound cod fillet (cut in 1 inch cubes)
4 ounces shrimp (cooked, peeled and deveined)
3 ounces butter
3 tablespoons flour
1 tablespoon lemon juice
6 ounces white cheddar cheese (grated)
4 green onions (thinly sliced)
4 ounces mushrooms (button or white mushrooms cleaned and sliced)
salt and pepper ( to season)

Steps:

  • Pour the milk into a large saucepan and add the onion, bay leaves and parsley stalks. Bring to a boil, then remove from the heat and let the milk stand to infuse with flavor.
  • When cooled strain the milk through a sieve and discard the onion and herbs.
  • Pre-heat the oven to 350° F. Grease a 2-quart casserole or a 13 X 9 baking dish with butter.
  • Melt the butter in a large skillet. Add the flour and stir to blend forming a roux. Cook for 2 to 3 minutes stirring constantly.
  • Gradually blend in the strained milk, stirring constantly to create a smooth sauce. Bring to simmering point then reduce the heat and cook gently for 1 minute stirring as the sauce thickens.
  • Season with salt and pepper. Add the lemon juice and two-thirds of the grated cheese. Stir the sauce until the cheese melts and blends completely.
  • Add the monkfish to the sauce and stir while cooking for 1 minute. Add the cod, green onions, and mushrooms and blend completely covering all of the ingredients in cheese sauce.
  • Transfer the mixture to the buttered casserole dish. Bake in a 350° F oven.
  • After 15 minutes add the shrimp evenly to the top of the casserole. Sprinkle with the remaining cheese.
  • Bake for a further 20 minutes until the top is golden brown.
  • Serve with a crispy side salad and Irish brown bread.

1 lb white fish fillet (haddock, hake, cod, pollock)
salt, pepper to taste
1/2 can cream of shrimp soup, or other creamed soup
1/2 cup heavy cream
2 tbsp dry sherry
1/2 cup bread crumbs
1/4 cup butter, melted

Steps:

  • Preheat oven to 350 degrees. Butter a 2 QT baking dish. In a small bowl, mix together creamed soup, heavy cream and sherry and set aside. Take fish fillets and put on bottom of baking dish. Put small amount of soup mixture on top of fish fillet. Alternate other seafoods with soup mixture. Top with bread crumbs. Pour melted butter over the top. Bake for 45 minutes.
