RUM BALLS
I wanted a good rum ball with a lot of kick, so I sat down and came up with this recipe. I didn't realize how good these were until one year I didn't make them for work. I just about got lynched! Needless to say, I've made them every year since (about 20 years). These are best if you use Meyers Original Dark Rum® chilled, and Nabisco® 'Nilla wafer cookies. They are at their peak if you make them 2 days in advance. Remove from fridge 30 minutes before serving.

Steps:
- Place vanilla cookies in a food processor and process into fine crumbs.
- Heat chocolate chips and corn syrup together in a saucepan over low heat. Cook, stirring often, until chocolate is melted and smooth, about 5 minutes. Remove from heat and stir in rum and confectioners' sugar until smooth. Fold in cookie crumbs; dough will be sticky.
- Place saucepan in the refrigerator until dough is firm and easy to roll, about 15 minutes. Cover 2 plates with waxed paper; dust with confectioners' sugar.
- Roll dough into 1-inch balls and place on the prepared plates. Dust rum balls with confectioners' sugar. Refrigerate until firm, about 30 minutes.
- Remove rum balls from refrigerator and transfer to a resealable bag, including the extra confectioners' sugar. Seal the bag and shake to coat the rum balls completely with confectioners' sugar.

DELICIOUS RUM BALLS (NO-BAKE!)
These Rum Balls are so good! But bear in mind, these are not baked, so no alcohol cooks away... These are NOT for the kiddos! Bring a batch of these to a Christmas party...(Not for a Church social!)

Steps:
- 1. In a food processor or electric chopper, blend up Vanilla Wafers (or Graham Crackers) until it reaches a mealy consistency. Add all ingredients together in a bowl, except powdered sugar. Roll them into pecan or walnut-sized balls. If they are too dry, add a tiny bit more corn syrup, or if too moist and are hard to form, add a little more processed vanilla wafers. When rolled to the size you want, roll in powdered sugar.
- 2. This makes about 2 dozen balls.(Don't make them too big!) Cover and refrigerate until serving. These can also be made without the liquor so kids can enjoy them. May have to add more prepared wafers to make up for the omitted liquid.
- 3. If you are taking these to a party, one batch may not be enough! Note: For a more interesting taste, use coffee liquer, or a peppermint, or butterscotch schnapps for the flavor instead of rum or bourbon, whiskey, etc. Warning!! Don't eat too many of these and drive! During the Holidays and always, eat and drink responsibly anything containing alcohol! Happy Holidays and Bon Apetit' Y'all!
RUM BALLS
Steps:
- In a mixing bowl fitted with the paddle attachment, or by hand, mix together the cake crumbs, cocoa powder, powdered sugar, and nuts. Stir in the 2 tablespoons of honey and the rum. Using your hands, try to form the mixture into a ball. If the mixture won't hold together add a little more honey. Roll the mixture into 1-inch balls, then roll them in powdered sugar or melted chocolate, and let them set up. Then, let them age or ripen 24 hours.
CLASSIC RUM BALLS RECIPE

Steps:
- Place toasted pecans in a food processor and process until fine. Be careful not to process so much they turn into pecan butter. Remove the pecans from the food processor.
- Add the vanilla wafers to the food processor and process until finely ground.
- Add the pecans back into the food processor along with the powdered sugar, cocoa, corn syrup, vanilla and rum. Process until mixture is thick and combined.
- Scoop 1 tablespoon size balls and roll between your hands. Roll in additional cocoa powder and/or powdered sugar. Store in an airtight container in the refrigerator for up to 2 weeks.

SCRUMPTIOUS RUM BALLS
These rum balls are the best thing since sliced bread. In this instance when people say that Grandma's recipes are the best, they're right.

Steps:
- Use a blender to grind up the packet of milk arrowroot biscuits. Pour crumbs into a mixing bowl when blended.
- Cut the glace cherries into quarters and add to mixing bowl.
- Add chocolate chips, chopped nuts, cocoa powder and 3/4 cup of coconut to mixing bowl. Mix everything together.
- Add the condensed milk and rum essence. Mix everything together really well. If need be get your hands into it.
- When mixed together, wet hands slightly. Depending on how big you want your rum balls, take mixture and roll into balls. Rub the balls in the extra cup of coconut until completely covered.
- place balls into an airtight container and put into fridge when complete. Rum balls can be frozen and will last a very long time.
- Enjoy.
