1 pound cooked ham, cut into one inch cubes
2 (14.75 ounce) cans creamed corn
7 potatoes - peeled, boiled and mashed
¼ cup butter

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place ham in a 2 quart casserole dish and top with corn. Heat in preheated oven 10 minutes. Remove and top with mashed potatoes. Heat in oven for 20 more minutes, then remove.
  • Turn oven to "broil" setting. Dot potatoes with butter or margarine, then place pie under broiler just until golden brown on top, about 3 minutes. Serve immediately.

When you're in the mood for a meaty, savory comfort-food classic, serve Alton Brown's Shepherd's Pie from Good Eats on Food Network.

1 1/2 pounds russet potatoes
1/4 cup half-and-half
2 ounces unsalted butter
3/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1 egg yolk
2 tablespoons canola oil
1 cup chopped onion
2 carrots, peeled and diced small
2 cloves garlic, minced
1 1/2 pounds ground lamb
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
2 tablespoons all-purpose flour
2 teaspoons tomato paste
1 cup chicken broth
1 teaspoon Worcestershire sauce
2 teaspoons freshly chopped rosemary leaves
1 teaspoon freshly chopped thyme leaves
1/2 cup fresh or frozen corn kernels
1/2 cup fresh or frozen English peas

Steps:

  • Peel the potatoes and cut into 1/2-inch dice. Place in a medium saucepan and cover with cold water. Set over high heat, cover and bring to a boil. Once boiling, uncover, decrease the heat to maintain a simmer and cook until tender and easily crushed with tongs, approximately 10 to 15 minutes. Place the half-and-half and butter into a microwave-safe container and heat in the microwave until warmed through, about 35 seconds. Drain the potatoes in a colander and then return to the saucepan. Mash the potatoes and then add the half and half, butter, salt and pepper and continue to mash until smooth. Stir in the yolk until well combined.
  • Preheat the oven to 400 degrees F.
  • While the potatoes are cooking, prepare the filling. Place the canola oil into a 12-inch saute pan and set over medium high heat. Once the oil shimmers, add the onion and carrots and saute just until they begin to take on color, approximately 3 to 4 minutes. Add the garlic and stir to combine. Add the lamb, salt and pepper and cook until browned and cooked through, approximately 3 minutes. Sprinkle the meat with the flour and toss to coat, continuing to cook for another minute. Add the tomato paste, chicken broth, Worcestershire, rosemary, thyme, and stir to combine. Bring to a boil, reduce the heat to low, cover and simmer slowly 10 to 12 minutes or until the sauce is thickened slightly.
  • Add the corn and peas to the lamb mixture and spread evenly into an 11 by 7-inch glass baking dish. Top with the mashed potatoes, starting around the edges to create a seal to prevent the mixture from bubbling up and smooth with a rubber spatula. Place on a parchment lined half sheet pan on the middle rack of the oven and bake for 25 minutes or just until the potatoes begin to brown. Remove to a cooling rack for at least 15 minutes before serving.

Made by my Scottish Granddad, this recipe is like a traditional Forfar Bridie (old-timely Scottish hot pocket), only in pie form. I prefer the beef version over the lamb.

1 pastry for double-crust pie or 2 ready-made pie crusts
1 1/2 lbs ground beef or 1 1/2 lbs ground lamb
1 small onion, chopped
1 cup oats (not quick cooking)
1 teaspoon Lawry's Seasoned Salt
1/2 cup beef broth or 1 beef bouillon cube
1/2 teaspoon salt
1/4 teaspoon pepper
1 teaspoon Worcestershire sauce
1 teaspoon mustard powder
1/8-1/4 teaspoon ground cloves (optional)
1/2 teaspoon nutmeg (optional)
1/8 cup butter

Steps:

  • Preheat oven to 350° F and put a kettle of water on to boil.
  • Place one pie crust in a deep-style pie pan. Prick crust with a fork several times and bake for 5-10 minutes.
  • In a large skillet with deep sides, sauté ground beef/lamb with onions. Season well with Lawry's, salt and pepper.
  • Mix well to combine.
  • When beef loses its pink color, stir in oats and beef broth or bullion cube. Then cover mixture entirely with boiling water. Simmer mixture for 10-15 minutes until water is mostly gone. Then stir in Worcestershire Sauce, dry mustard and spices.
  • Spoon the mixture into the partially baked pie crust and dot the top of the filling with diced butter. Place top crust on filling, crimp sides, vent crust, and bake for 1 to 1-1/4 hours. Make sure crust is slightly browned.

3 bacon strips, diced
1 small onion, chopped
2 garlic cloves, minced

5-1/2 cups hot mashed potatoes (prepared without milk and butter)
2 eggs, lightly beaten
2 tablespoons butter, softened
1 tablespoon minced fresh cilantro
1/4 teaspoon salt
Additional butter, melted

Steps:

  • In a large skillet, cook beef over medium heat until no longer pink; drain and set aside. In the same skillet, cook bacon, onion, garlic and oregano until bacon is crisp; drain. Stir in the tomato sauce, olives and beef. Simmer, uncovered, for 10 minutes or until heated through. , Meanwhile, combine the mashed potatoes, eggs, butter, cilantro and salt. Spread half of the potato mixture onto the bottom and up the sides of a greased 9-in. pie plate. Layer with beef mixture and remaining potato mixture. , Bake at 375° for 20 minutes. Brush the pie with melted butter. Bake 10 minutes longer or until top is golden brown.

1 cup diced onion
1 teaspoon dry rosemary, thyme or savory, crushed
3 tablespoons butter
3 tablespoons flour
1 1/2 cups hot beef broth
Salt and pepper to taste
2 pounds russet potatoes, mashed (about 3 to 4 cups)

Steps:

  • Preheat oven to 375 degrees.
  • Using a meat grinder or food processor finely chop cooked meat. Combine lamb and beef with garlic, onion and herbs. Melt butter in a saucepan over medium heat. Add the flour using a whisk to whisk into the bubbling butter and make a white roux. Add broth and simmer for 20 minutes. Place chopped beef mixture into baking dish. Add gravy to beef and adjust seasoning. Decorate top of beef with mashed potatoes. Bake for 45 minutes and serve.

The use of lamb, the smoky, heather taste of Guinness® Draught (Irish, I admit), and the topping of sharp Cheddar and smoked paprika give this version its unique, smoky-sweet flavor.

5 cups mashed, boiled potatoes
½ cup sour cream
2 ounces cream cheese
2 tablespoons butter, softened, divided
1 egg yolk
½ teaspoon kosher salt
½ teaspoon freshly ground black pepper
1 ½ teaspoons olive oil
1 pound ground lamb
1 pinch salt and ground black pepper to taste
1 (16 ounce) can stewed tomatoes with juice, chopped
1 small onion, chopped
1 small carrot, peeled and chopped
½ cup peas
1 cup Irish stout beer (such as Guinness®)
1 cube beef bouillon
1 tablespoon all-purpose flour
1 tablespoon Worcestershire sauce
¾ cup shredded sharp Cheddar cheese
2 teaspoons chopped fresh parsley
2 teaspoons smoked paprika

Steps:

  • Stir potatoes, sour cream, cream cheese, 1 tablespoon butter, egg yolk, 1/2 teaspoon salt, and 1/2 teaspoon black pepper together in a bowl until smooth.
  • Heat olive oil in a cast iron skillet or nonstick pan over medium-high heat. Add ground lamb, reduce heat to medium, and cook, stirring frequently, until browned and crumbly, 4 to 5 minutes. Pour off excess grease and season lamb with salt and black pepper to taste.
  • Stir tomatoes with juice, onion, and carrot into ground lamb; simmer until vegetables are tender, 5 to 10 minutes. Add peas, reduce heat to low, and cook, stirring frequently, until peas are warmed, 2 to 3 minutes.
  • Heat beer in a saucepan over medium heat; add beef bouillon. Cook and stir beer mixture until bouillon is dissolved, about 5 minutes.
  • Heat remaining 1 tablespoon butter in a separate pan over medium-low heat until sizzling. Whisk flour into butter until thick and paste-like, about 1 minute. Stir beer mixture and Worcestershire sauce into flour mixture until gravy is smooth and thickened, 2 to 3 minutes. Stir gravy into lamb mixture and simmer until mixture is thickened, at least 5 minutes.
  • Set oven rack about 6 inches from the heat source and preheat the oven's broiler. Grease a 9x12-inch baking dish.
  • Pour lamb mixture into the prepared baking dish. Carefully spoon mashed potatoes over lamb mixture, covering like a crust. Sprinkle Cheddar cheese, parsley, and paprika over mashed potatoes.
  • Broil in the preheated oven until crust is browned and cheese is melted, 4 to 5 minutes. Cool for about 5 minutes before serving.

I have adapted from another recipe I had for Shepherds's Pie. My husband's Scottish roots led me to this recipe. I have substituted ketsup for the tomato paste with good results.

5 large potatoes
2 teaspoons salt (divided)
2 tablespoons butter
2 tablespoons half-and-half cream (milk will work)
1 tablespoon sour cream (optional)
1 teaspoon pepper (divided)
1 lb ground beef (lean)
1 large tomatoes, chopped
8 ounces mushrooms, sliced
2 tablespoons parsley, chopped
1 tablespoon tomato paste (or substitute with Ketsup)
1 teaspoon Worcestershire sauce
1 cup beef gravy (from package mix)
10 ounces frozen green peas (or shelled peas)

Steps:

  • Cook potatoes in salted water. Drain, let cool and remove skins.
  • Mash in large bowl with butter, Half & Half, sour cream, and season to taste with 1/2 tsps. each salt and pepper. Spur cream is optional but does add flavor to the potatoes. Set aside.
  • Saute beef until browned and crumbly. Season to taste with 1/2 tsps each of salt and pepper.
  • Add tomatoes, mushrooms, parsley, tomato paste, Worcestershire and gravy. Stir to mix.
  • Add peas and cook about 5 minutes.
  • Fold mixture into casserole dish.
  • Spread potatoes evenly over meat. Bake at 400 degrees 40 minutes until top is crispy brown.

For the filling
Olive oil, for frying
1 kg minced lamb
2 garlic cloves, peeled and finely chopped
1 onion, peeled and diced
2 leeks, trimmed, halved lengthwise and finely sliced
1-2 Tbsp. Worcestershire sauce
1-2 Tbsp. tomato purée
100 ml red wine
250 ml chicken stock
2 rosemary springs, leaves only, chopped
Sea salt and freshly ground black pepper
For the topping
750g potatoes, e.g. Maris Piper, peeled and cut into chunks
50g butter
3 spring onions, trimmed and finely chopped
100g Cheddar cheese, grated
50-100ml milk (optional)

Steps:

  • Preheat the oven to 350° F/ 180° C/Gas 4. Place a large, wide frying pan or hob-proof casserole dish over a medium-high heat. Add a dash of oil and fry the mince in batches, seasoning each lot, until well browned. Add the garlic for the last 2 minutes. Transfer to a plate.
  • Put a little more oil in the same pan and cook the onion and leeks over a medium heat for 5-7 minutes, until completely softened. Add Worcestershire sauce to taste, then stir in the tomato purée.
  • Return the mince to the pan and stir well. Pour in the wine, scraping up any bits from the bottom. Bubble for a couple of minutes to burn off the alcohol, then add the stock and bring to the boil. Reduce to a simmer, then add the rosemary and adjust the seasoning as necessary. Cook gently for 10-15 minutes, until the sauce has reduced slightly and the flavours are well-combined. Set aside to cool.
  • Meanwhile, prepare the topping. Boil the potatoes until tender, then drain and mash until smooth. Mix in the butter and seasoning, then add the spring onions and three-quarters of the cheese and mix again. Taste and adjust the seasoning as necessary. If the mash is too dry add a splash of milk to loosen.
  • Put the lamb mixture into a 28 x 22cm baking dish and top with the mashed potato. Sprinkle with the remaining cheese and little salt and pepper. Bake for 15 to 20 minutes or until the potato is golden brown and the meat is bubbling underneath, and serve.
