8 ounces pappardelle
Coarse salt and ground pepper
3 tablespoons olive oil
1 garlic clove, minced
1 cup fresh breadcrumbs
1 pound sea scallops, halved
1 teaspoon chopped fresh thyme, plus more for garnish
2 teaspoons grated lemon zest
4 tablespoons butter, cut into small pieces
1 tablespoon lemon juice
Lemon wedges, for garnish

Steps:

  • Cook pasta in a large pot of boiling salted water until al dente, according to package instructions. Reserve 1 cup cooking water; drain pasta, and return to pot.
  • Meanwhile, heat 2 tablespoons oil in a large skillet over medium heat. Add garlic and breadcrumbs; cook, stirring, until golden, 3 to 4 minutes. Remove; wipe skillet clean.
  • Pat scallops dry; season with salt and pepper. Heat remaining tablespoon oil in skillet over high heat. In 2 batches, brown scallops, about 1 minute per side; transfer to a plate.
  • Add thyme, zest, and reserved cooking water to skillet. Simmer over medium heat, scraping up browned bits, 2 to 3 minutes. Remove from heat; stir in butter and lemon juice.
  • Toss sauce with pasta. Top with scallops and breadcrumbs. Garnish with lemon wedges and thyme.

Steps:

  • Heat up a pot of water and cook the spaghetti until al dente, per the package instructions. Drain the spaghetti when they are cooked.
  • Season the scallops with salt and pepper. Heat up a skillet and add 1 tablespoon olive oil. Pan-sear the scallops on high heat until both surface turn brown. Remove the scallops from the skillet. Set aside.
  • Add the remaining olive oil into the pan and saute the garlic and crushed red pepper, about 10 seconds. Add the white wine, heavy whipping cream, lemon juice, salt and ground black pepper.
  • Transfer the spaghetti and scallops into the skillet, stir to mix well with the creamy sauce. Add the chopped parsley and serve immediately with lemon wedges.

All-purpose flour, for dredging
4 tablespoons (1/2 stick) unsalted butter, divided
1/2 cup chopped shallots (2 large)
1 garlic clove, minced
1/4 cup chopped fresh flat-leaf parsley leaves
1/3 cup dry white wine
1 lemon, cut in 1/2

Steps:

  • If you're using bay scallops, keep them whole. If you're using sea scallops, cut each 1 in half horizontally. Sprinkle with salt and pepper, toss with flour, and shake off the excess.
  • In a very large saute pan, heat 2 tablespoons of the butter over high heat until sizzling and add the scallops in 1 layer. Lower the heat to medium and allow the scallops to brown lightly on 1 side without moving them, then turn and brown lightly on the other side. This should take 3 to 4 minutes, total. Melt the rest of the butter in the pan with the scallops, then add the shallots, garlic, and parsley and saute for 2 more minutes, tossing the seasonings with the scallops. Add the wine, cook for 1 minute, and taste for seasoning. Serve hot with a squeeze of lemon juice.

  • Wipe out the pot and heat 2 tablespoons olive oil over medium. Add the shallots and cook until they begin to soften, 2 to 3 minutes. Add the tomatoes and cook, stirring occasionally, until they start to burst, 5 to 7 minutes. Add about 1/3 cup reserved pasta water, and press the tomatoes gently with the back of a spatula or wooden spoon to get them nice and jammy. Stir in the garlic and red-pepper flakes, if using, and cook, allowing the sauce to simmer, 1 to 2 minutes. Season with salt and pepper; set aside.
  • Season the scallops well on both sides with salt and pepper. In a 12-inch skillet, heat the remaining 2 tablespoons olive oil over high. When the oil shimmers, add the scallops, working in batches to avoid crowding the pan, and cook until golden brown and crisp, flipping once, 1 to 2 minutes per side.
  • Add the pasta, 1 1/2 cups herbs and 1/4 cup reserved pasta water to the pot with the tomatoes and toss to coat, adding additional pasta water if needed. Divide the pasta among shallow bowls and top with scallops. Garnish with additional herbs and a drizzle of olive oil, if desired.

  • Prep all of your ingredients and have them at ready, then start pasta. Cook the pasta approximately 8 minutes. If the pasta is done before prepping all the ingredients, add 3 cups cold water into pot to hold. (Water will still be hot, but will arrest cooking.) Drain when ready to use.
  • In a large saute pan, heat the olive oil and butter over medium-high heat. When the butter has melted, add the scallops, cook for 1 to 2 minutes and turn over. When scallops are just cooked, remove from heat and set aside, keeping them warm. Let the juices in pan reduce for 1 minute, then add the mushrooms and saute for 2 minutes. Stir in the garlic, red pepper flakes and black pepper. Toss to combine. Add in the reserved scallops and half of the truffle oil. 10 ounces beef tenderloin steaks (2 (5 ounce) steaks, 1 1/2-inch thick)
1 teaspoon Sea salt and freshly ground pepper
3 tablespoons butter
4 ounces sea scallops (6 large scallops, rinse and pat dry)
2 tablespoons extra-virgin olive oil
¼ cup finely chopped green onions ((about 4 scallions), white and light green part)
3 large garlic cloves (minced)
¼ cup dry white wine
3 tablespoons butter
2 tablespoons freshly squeezed lemon juice
2 tablespoons fresh basil (cut into thin strips)
1 tablespoon minced parsley
¼ teaspoon lemon zest
Dash hot pepper sauce
Sea salt and freshly ground pepper (to taste)

Steps:

  • Season steaks with salt and pepper. In a 10 to 12-inch skillet, heat 2 tablespoons of butter over medium heat until hot and bubbly (more can be added, if needed). Add steaks to skillet and brown on one side for 4 to 5 minutes. (At this point, begin the sauce in another small, non-reactive skillet or wide sauce pan as described in step 2.)
  • Turn the steaks on end and rotate to brown the sides (this will take about 3 minutes), then turn over to brown the final side for 4 to 5 minutes. When turning the steak to brown the last side, add scallops to the skillet to brown at the same time, about 2 minutes on each side.
  • *If making the roasted asparagus, now is a good time to slide it under the broiler for 10 minutes.
  • To make the sauce in the separate skillet, sauté onion and garlic in 2 tablespoons olive oil over medium heat 3-4 minutes, until fragrant. Add wine and lemon juice; simmer to reduce slightly, 1-2 minutes. Add 3 tablespoons butter and stir until melted into the sauce. If the steak and scallops are not yet done, slide the scampi sauce off heat until they are ready.
  • Once the scallops are browned on each side, stir the fresh basil, parsley, lemon zest, and hot pepper sauce into the scampi sauce. Reduce heat to low, add the scallops, spooning the sauce over the scallops. Once the steaks reach an internal temperature of 125°F (the rare side of medium-rare), add to the pan with the scampi sauce and spoon sauce over the steaks.
  • Divide the steaks and scallops evenly between two plates and serve immediately, spooning more sauce over both the scallops and the steak.

1/2 teaspoon fresh lemon juice
1 tablespoon coarsely chopped fresh parsley

Steps:

  • Cook pasta in a medium pot of boiling salted water until al dente, according to package instructions. Reserve 1/4 cup pasta water; add peas to pasta, and drain. Return pasta and peas to pot. 24 sea scallops, about 1 1/4 pounds total weight; if too large, cut them in half crosswise

3 sprigs fresh thyme or 1/2 teaspoon dried
1/4 teaspoon red hot-pepper flakes
2 tablespoons anise-flavored liqueur, like Ricard or Pernod

  • Preheat the broiler or prepare a charcoal grill.
  • Place the peppers under the broiler or on the grill. Cook them on all sides until the skin is well charred. 4 tbsp butter (melted)
3 garlic cloves (pressed)

1/3 cup Panko bread crumbs
3 tbsp grated Parmesan cheese
1/2 cup shredded Parmesan cheese (for topping)

Steps:

  • Preheat the oven to 425°.
  • Mix melted butter, salt, and pressed garlic in a small bowl and set it aside.
  • Mix Panko bread crumbs and grated Parmesan cheese in another shallow bowl and set it aside.
  • Take scallops out of the package and pat each one dry with a paper towel.
  • Toss scallops in the melted butter mixture and then coat each one in Panko/Parmesan mixture on all sides.
  • Place coated scallops in a baking dish that's large enough to hold them with some space in between each one.
  • Carefully pour in remaining melted butter in between and around the scallops. (Don't pour on top.)
  • Sprinkle each scallop with some Parmesan cheese and bake for 10-14 minutes, depending on the size.

3 large heads garlic, broken into cloves, husks intact
2 tbsp olive oil
1 tsp kosher salt
18 medium scallops
2 tbsp extra virgin olive oil
1 1/2 cups chicken stock
1 1/2 cups white wine
1 tsp marjoram
2 tsp butter
1 lb pappardelle, cooked
Freshly ground pepper

Steps:

  • Preheat oven to 375. Toss the garlic cloves with the olive oil and 1 tsp salt and heat in oven 15 minutes. Remove the garlic, let cool, peel and slice. Saute the scallops in the extra virgin olive oil, 2 minutes per side. Remove the scallops and discard the oil. In the same pan, bring the chicken stock and wine to a boil and cook to reduce the liquid by half. Add the marjoram and whisk in the butter. Combine the scallops, the sauce and the garlic in a large bowl and then toss with the pasta Season in salt and pepper to taste. Divide between 6 individual plates.
