For an extra indulgent hors d'oeuvre, top this cheddar cheese shortbread with smoked salmon and caviar, and serve with glasses of champagne.

Provided by Martha Stewart

Categories     Food & Cooking     Appetizers

Yield Makes about 12 dozen

Number Of Ingredients 6

2 1/4 cups all-purpose flour
1/8 teaspoon cayenne pepper
1 cup (2 sticks) salted butter, chilled and cut into small pieces
2 cups grated sharp cheddar cheese
1/2 cup milk
1 tablespoon Worcestershire sauce

Steps:

  • Add flour and cayenne pepper to the bowl of a food processor; pulse to combine. Add butter, and pulse until the mixture resembles coarse meal, 8 to 10 seconds.
  • Add cheese to the food processor; pulse until combined. Transfer the mixture to a large bowl.
  • Using a fork, stir in milk and Worcestershire sauce until well combined. Have ready several pieces of parchment paper.
  • Form mixture into two 1-inch-diameter logs, and wrap in parchment. Transfer the logs to the refrigerator, and chill until very firm, at least 1 hour.
  • Heat oven to 350 degrees. Line 2 baking sheets with parchment paper. Remove logs from refrigerator, and cut each one into 1/4-inch-thick rounds. Place the rounds on prepared baking sheets, spaced 1 inch apart.
  • Bake the shortbread until golden, about 12 minutes, rotating baking sheets between shelves halfway through baking.
  • Transfer shortbread to wire racks to cool. Bake remaining dough. Store in an airtight container up to 2 days.

ROSEMARY PARMESAN SHORTBREAD

Rosemary Parmesan Shortbread image

Provided by Claire Robinson

Categories     appetizer

Time 1h29m

Yield about 2 1/2 dozen pieces

Number Of Ingredients 7

2 cups all-purpose flour
1 cup confectioners' sugar
2 teaspoons finely chopped fresh rosemary leaves
1/2 teaspoon salt
1/2 cup finely grated Parmesan
1 cup (2 sticks) unsalted butter, at room temperature
1 teaspoon water, if needed

Steps:

  • Put the flour, sugar, rosemary, salt, and Parmesan into the bowl of a food processor and pulse until combined. Add the butter and pulse just until a soft dough forms; the dough should hold together when squeezed with your hands. If not, add the water and pulse until combined.
  • Spread a large sheet of plastic wrap on a work surface and transfer the dough onto it. Using the plastic wrap as a guide, form the dough into a loose log along 1 edge of the long side of the sheet. Roll the dough log, twisting the plastic gathered at the ends in opposite directions until the log is tight and compact, about 2 1/2 inches in diameter. Chill in the refrigerator until firm, about 1 hour.
  • Preheat the oven to 375 degrees F. Line 2 baking sheets with parchment paper or silicone baking mats. Slice the dough log into 1/3-inch thick slices and arrange on the lined sheets, about 1-inch apart. Bake until the edges are just beginning to brown, 12 to 14 minutes.
  • Cool the shortbread on the pan for 5 minutes then transfer to wire racks to cool completely. Store the shortbread in an airtight container at room temperature until ready to serve.

THYME AND LEMON SAVOURY SHORTBREAD

Thyme and Lemon Savoury Shortbread image

Made these for the first time yesterday. Very easy to make and something different to sweet biscuits. Make sure you're generous with the sprinkled salt; I was a little stingy and found they tasted a lot better when I put some more on. They can be stored in an air-tight container for up to one week.

Provided by Snowbunny Andorra

Categories     Dessert

Time 30m

Yield 15 biscuits

Number Of Ingredients 8

210 g flour
1/4 teaspoon salt
1 tablespoon grated lemon zest
1 1/2 tablespoons fresh thyme, chopped
120 g unsalted butter, at room temperature
1 large egg, beaten
2 large egg yolks
1 tablespoon coarse sea salt

Steps:

  • Stir together the flour, salt, lemon zest and thyme.
  • Rub in the butter with your fingertips to form a breadcrumb-like consistency.
  • Using a wooden spoon, beat in the egg and yolks (reserve a small amount of beaten egg for brushing).
  • Knead a couple of times then wrap and place in the fridge for half an hour.
  • Unwrap and roll out until half an inch thick. Cut into whatever shape you wish - the traditional is strips.
  • Use a fork to brick the tops of the biscuits, then brush with the remaining egg and sprinkle generously with the sea salt.
  • Place in a pre-heated oven at 350F until golden (about 20 minutes). Turn out onto a rack to cool. Serve at room temperature.

  • Using the paddle attachment on a stand mixer, beat the butter until creamy. Scrape down the bowl with a rubber spatula. Add the parmesan cheese, flour, salt, thyme, and pepper, and beat until it clumps together into a ball, pulls away from the sides of the bowl, and few, if any, loose crumbs remain.
  • Turn the dough out onto a large sheet of plastic wrap, knead it a few times until a smooth ball forms without any major cracks, and roll it into a 13-inch log.
  • Wrap the log tightly in plastic wrap and freeze for 30 minutes, or until firm. While the dough chills, preheat the oven to 350ºF.
  • Slice the log into roughly 1/4- to 1/2-inch pieces (just make sure they're all the same thickness). Place the dough slices about an inch apart on the half-sheet pan and bake for 16 to 22 minutes (depending on their thickness), or until firm and golden brown.

  • Put the flour, cheese, rosemary, salt and pepper into the bowl of a food processor. Add the chunks of soft butter and pulse about 30 times to combine into a crumbly mixture. The process until the dough comes together, this should not take longer than 30 seconds to a minute. If the dough does not come together, add a tiny bit of water to the bowl, start with 1/2 tsp, and process again.
  • Turn the dough out onto a piece of plastic wrap and bring together into a smooth flat disk, just like you do with pie crust dough. The dough should be smooth and uniform, without dry floury parts. Knead it with your hands if necessary. Wrap the disk in the plastic and refrigerate for an hour.
  • Roll out the dough to about 1/4 to 1/8 thickness. I do this between two sheets of waxed paper and it works like a charm, no sticking. If you want to laminate herbs onto the surface of the dough, lay them out onto the dough, leaving space between. Put the waxed paper back over the top and lightly roll with your rolling pin to press the herbs right into the dough. Use a 2 inch round cookie cutter to cut out your circles. Remove the dough to a baking sheet. Reform the leftover dough, roll and repeat until all the dough is used.
