Ingredients

1-1/2pkg. (8 oz. each) PHILADELPHIA Cream Cheese (12 oz.)
2Tbsp. toasted sesame seed
1tsp. poppy seed
2cloves garlic, minced, divided
2Tbsp. finely chopped fresh parsley
2tsp. chopped fresh thyme leaves
1tsp. finely chopped fresh rosemary
1/4cup finely chopped dried cranberries
2Tbsp. finely chopped PLANTERS Pecans

Steps:

CUT cream cheese into 6 pieces; roll each into a ball.
COMBINE sesame seed, poppy seed and half the garlic in small bowl. Mix herbs and remaining garlic in separate small bowl. Mix herbs and remaining garlic in separate small bowl. Combine cranberries and nuts in third bowl.
ROLL 2 cheese balls in sesame seed mixture, 2 cheese balls in herb mixture and remaining cheese balls in nut mixture.

1 package (8 ounces) cream cheese, softened
2 cups shredded sharp cheddar cheese
Optional toppings: Toasted sesame seeds, minced fresh rosemary and paprika
Optional garnishes: Halved rye crisps and rolled tortilla chips

Steps:

In a large bowl, combine cheeses. Shape into 36 balls; roll balls in toppings as desired. Cover and refrigerate for 8 hours or overnight. To serve, if desired, press a rye crisp or rolled corn chip into the top of each cheese ball.

Soften Ingredients: Add cream cheese, parmesan cheese, and butter to bowl fitted to electric mixer (Note 5). Let stand for 30 minutes to soften at room temperature.
Beat Mixture: Using electric mixer fitted with flat beater, beat for 1 minute on medium speed, then pause to scrape down beater and bowl. Continue beating on medium speed until mixture is light and fluffy, about 1 minute. Initially, mixture will combine into dense dough, then become airier, spreading out and clinging to sides of bowl.
Form Into Balls: Use cookie scoop (Note 6) to form 1.5-inch diameter ball. Roll ball or sprinkle with seasoning mix until covered all around, then place on sheet pan. Repeat until mixture is used up, yielding about 14 balls.
Chill & Serve: Transfer sheet pan to refrigerator and chill for 1 hour (Note 7). Transfer chilled cheese balls to serving plates and serve cold (Notes 8-9).
