SEAFOOD GRATIN
Steps:
- Preheat the oven to 375 degrees F. Place 4 individual gratin dishes on sheet pans. (If recipe is doubled serve it in a 14 by 9 1/4-inch oval gratin dish.)
- Combine the stock, cream, 1/2 cup of the wine, the tomato puree, and saffron in a medium saucepan. Bring to a boil, lower the heat, and add the shrimp. After 3 minutes, use a slotted spoon to remove the shrimp to a bowl. Add the halibut to the stock for 3 minutes, until just cooked through, and remove to the same bowl. Add the cooked lobster to the bowl.
- Continue to cook the sauce until reduced by half, about 12 minutes. Mash 1 tablespoon of the butter together with the flour. Whisk the butter mixture into the sauce along with 1 teaspoon salt and 1/2 teaspoon pepper. Simmer, stirring constantly, until thickened, about 5 minutes. Set aside.
- Melt 3 tablespoons of the butter in a medium saute pan. Add the leeks and carrots and cook over medium heat for 5 minutes, until softened. Add the remaining 3 tablespoons of wine, 1/2 teaspoon salt, and 1/4 teaspoon pepper and cook for 5 to 10 minutes, until tender. Set aside.
- Combine the panko, Parmesan, parsley, tarragon, and garlic. Melt the remaining 3 tablespoons of butter and mix it into the crumbs until they're moistened.
- Divide the seafood among the 4 gratin dishes. Strew the vegetables on top of each dish. Pour the sauce equally over the seafood and vegetables and spoon the crumbs evenly on top. Bake for 20 minutes, until the top is browned and the sauce is bubbly. Serve hot.
SEAFOOD AU GRATIN
This is delicious and well worth the effort! Make sure the seafood is very fresh. Best if served in individual baking dishes, but can be made in one larger dish if they are not available.

- Preheat oven to 400 degrees F (200 degrees C). Lightly butter 8 small baking dishes.
- In a large skillet, heat olive oil over medium high heat. Saute shrimp and scallops until firm, about 5 minutes.
- In a medium saucepan, melt butter over medium heat. Stir in flour until smooth. Gradually add chicken broth and raise heat to high. Stir until thickened. Mix in shallots, mushrooms and wine. Cook for 5 to 10 minutes.
- Arrange shrimp, scallops and crab in the bottom of prepared dishes. Pour sauce over seafood and cover with cheese.
- Bake in preheated oven until golden, about 12 t o15 minutes. Sprinkle with parsley and serve.

- Remove shells and tails from shrimp.
- Cook onion in butter until tender; stir in flour and seasonings.
- Add milk gradually and cook until thick, stirring constantly.
- Add 3/4 cup cheese and heat until melted.
- Stir in shrimp and mix well.
- Pour into 4 to 6 individual well-greased ramekins.
- Combine melted butter, bread crumbs and remaining 1/4 cup of cheese; sprinkle over top of each ramekin.
- Bake in a 400 degree oven for 10-12 minutes or until bubbly and brown.

- 1. Cook your macaroni as directed by instructions on the box. Drain and mix with 3 tablespoons of butter.
- 2. In another bowl add soup, cheese, cream and mushrooms, stir to blend.
- 3. Add the shrimp, and crab meat. Mix gently to keep from busting up the crab.
- 4. Now the seasonings
- 5. Now, blend the mixture with the macaroni.
- 6. Spoon the mixture into a casserole dish, sprayed with nonstick cooking spray. ( I used a 10 inch deep dish pie plate ) fits perfectly. Preheat oven to 350 degree F.
- 7. Melt your butter and mix with the crumbs. Spread evenly atop the pasta mixture. I sprinkled the top with a few shakes of paprika.
- 8. Bake for 30 minutes or till golden and bubbly. This casserole is great, served with a Caesar salad.

- In a heavy saucepan, melt the butter over medium heat, add the flour and stir until combined and lightly browned. Add the onion and celery to the mixture and cook on low-medium heat until the vegetables are tender.
- Add the evaporated milk, egg yolk, cheese, salt, black pepper and cayenne pepper, and stir continuously until the cheese has melted.
- Gently stir in the crab meat and cook on low heat for 5 minutes to heat through. Turn oven broiler on to HIGH. Scoop the mixture into a small oven-safe baking dish and top with reserved Swiss cheese, green onion and paprika.
- Place the baking dish onto a cookie sheet and place under broiler for 5 minutes, or until the cheese has melted and started to turn brown and bubbly. Remove from oven and serve warm with crackers.

- Melt butter in medium frying pan.
- Add onions and celery and saute until soft.
- Meahwhile, in a small bowl, lightly beat egg yolks with salt and red pepper flakes and set aside.
- Add flour to pan, and mix well.
- Immediately add evaporated milk gradually, stirring constantly to thin flour mixture.
- Add regular milk, stirring constantly, until completely incorporated.
- Add egg yolk mixture, mix well, and cook 10 minutes, stirring frequently.

- Preheat oven to 400 F or 200 C.Lightly grease a 9 x 9 inch baking dish (approximate size). *to customize this dish - individual smaller baking dishes can be used.
- In a bowl, whip together the egg yolks and heavy cream.
- Melt the butter in a large saucepan over medium heat. Sauté the onion, bell pepper and celery about 3-5 minutes. Season with salt, pepper, garlic powder, celery salt and Cajun seasoning. Reduce heat to low, cover, and simmer 10+ minutes, stirring occasionally, until very tender.
- Mix the flour into the saucepan, and cook on medium heat and stir continuously for 5 minutes. Mix in the egg yolk/cream mixture. Reserve 1/2 cup of cheddar and mozzarella cheese for topping. Stir in the remaining Cheddar, & Mozzarella cheese until melted. Remove from heat and fold in the crabmeat and crawfish or shrimp. Transfer the mixture to the prepared baking dish and sprinkle the cheese over the top.
- Bake 30 minutes in the preheated oven, until bubbly and lightly browned. Remove from heat and top with the remaining cheeses (to taste) and green onions. Allow the cheese to melt before serving.

- Preheat the oven to 350 degrees F (175 degrees C).
- Heat oil and butter in a skillet over medium-high heat until butter melts. Reduce heat to medium, whisk in flour, and stir until a thick paste forms, about 5 minutes. This is a FANTASTIC recipe that I developed many years ago. It began at first as Crabmeat Au Gratin & recently I decided to also add Shrimp, which greatly improved an already great dish. Also, instead of a mild chedder, I sometimes use the 4 or 6 blend of shredded cheese, either Kraft or Sargento.

- Place crabmeat into large mixing bowl.
- Add ONLY 1 cup unseasoned bread crumbs, eggs, butter or margarine, flour, heavy whipping cream, Port Wine or Cream Sherry, ONLY 1/2 cup grated mild cheddar cheese, salt, pepper, onion powder, garlic powder, thyme,& parsley flakes. Mix well with large spoon.
- Place into a well-greased oven-proof baking dish or casserole.
- Push the shrimp down into the mixture distributed evenly& then cover the holes with the mixture. Sprinkle top with additional bread crumbs& cheese. Sprinkle top with paprika.

SEAFOOD AU GRATIN
Steps:
- Arrange fish fillets in single layer in greased shallow baking dish.
- Sprinkle with wine, lemon juice, salt, and hot pepper sauce. Dot with 1 tablespoon of the butter and cover dish tightly with foil.
- Bake in a preheated oven, 400 F, until fish flakes easily with a fork; about 25 minutes.
- Cool, then carefully drain off broth into a cup or bowl; measure 1 cup of fish broth and set aside.
- Top the fish with crabmeat or halved shrimp.
- In a saucepan over medium-low heat, melt remaining 2 tablespoons butter.
- Stir in flour until smooth and bubbly. Stir in fish broth until thickened and smooth; remove from heat.
- Beat together egg yolks and half-and-half, then beat in a few tablespoons of the hot sauce from the saucepan; return egg mixture to saucepan, whisking briskly.
- Return to heat and cook, stirring, until slightly thickened, about 1 minute.
- Pour sauce over fish and shrimps; sprinkle with Parmesan.
- Broil about 5 inches from heat until fish is hot and the top is lightly browned about 10 minutes. Can be served with hot cooked rice or pastry shells.
