2 medium zucchini, cut into 2-inch chunks
1 teaspoon dried oregano
2 tablespoons parsley, fresh, chopped
1/8 teaspoon table salt
1/8 teaspoon black pepper, freshly ground
1/4 cup crumbled feta cheese

Steps:

  • Heat oil in a large skillet over medium heat. Add zucchini and oregano; sauté until zucchini is golden brown, about 4 to 6 minutes.
  • Remove skillet from heat and add parsley; toss to combine. Season to taste with salt and pepper. Sprinkle feta cheese over top just before serving. Yields about 1/2 cup per serving.

2 medium uncooked zucchini, cut into 2-inch chuncks
1 teaspoon dried oregano
2 tablespoons fresh parsley, chopped
1/8 teaspoon salt (to taste)
1/8 teaspoon black pepper (to taste)
1/4 cup crumbled feta cheese

Steps:

  • Heat oil in a large skillet over medium heat. Add zucchini and oregano; saute until zucchini is golden brown, about 4-6 minutes.
  • Remove skillet from heat and add parsley; toss to combine. Season to taste with salt and pepper. (some feta cheeses are salty so remember when adding salt). Sprinkle feta cheese over top just before serving.
  • Yields about 1/2 cup per serving.

8 large eggs
1 cup finely crumbled feta cheese
2 teaspoons chopped fresh oregano
salt
fresh ground black pepper
4 teaspoons olive oil
1/2 cup chopped onion
2 cups spinach, washed, tough stems removed

Steps:

  • Heat 2 teaspoons of olive oil in a skillet over medium-high heat.
  • Add the spinach, season with salt and pepper. Toss quickly until leaves are barely wilted, about 30 seconds. Remove from heat, drain and set aside.
  • Whisk the eggs, cheese, oregano, salt and pepper together until thoroughly combined.
  • In an 8" or 10" ovenproof skillet, heat 2 teaspoons of olive oil over medium heat.
  • Add the onion and cook until soft and translucent, about 5 minutes.
  • Add the spinach and turn the heat to low.
  • Add the egg mixture (do not stir) and cook over low heat until the eggs are set, about 15 to 20 minutes. Meanwhile, preheat the broiler.
  • Place the skillet under the broiler for 30 to 45 seconds to finish cooking the top.

1 tablespoon vanilla extract
1 cup zucchini (shredded)
1 1/4 cups whole wheat flour
1/4 cup baking cocoa
1 teaspoon cinnamon
1 teaspoon baking powder

Steps:

  • Heat oven to 350 degrees and grease 12 muffin cups with non-stick spray.
  • Combine all ingredients except zucchini.
  • Stir in zucchini.
  • Fill the muffin cups and bake for 20 minutes or until muffins test done.

1 tablespoon butter
1 sweet onion, chopped
1 clove garlic, minced
2 tomatoes, chopped
½ cup water, divided
1 cube chicken bouillon
1 large zucchini, thinly sliced
ground black pepper to taste

Steps:

  • Melt the butter in a large skillet over medium heat; cook and stir the onion in the melted butter until translucent, about 5 minutes. Add the garlic; cook and stir 1 minute more. Stir the tomatoes and 1/4 cup water into the mixture; cover. Cook until the tomatoes have reduced slightly, stirring occasionally, about 5 minutes.
  • Pour another 1/4 cup water into the skillet, and add the bouillon cube; stir until the bouillon is dissolved. Add the zucchini; continue cooking until the zucchini is tender, 5 to 7 minutes. Season with black pepper to serve.

4 lamb shanks
salt & freshly ground black pepper
1/2 cup olive oil
3 medium onions, thinly sliced
6 cups chicken stock
3 tablespoons fresh oregano leaves or 2 tablespoons dried oregano
1/4 teaspoon cayenne
1 (28 ounce) can peeled tomatoes, chopped,with juice
1 cup crumbled feta cheese

Steps:

  • Trim any excess fat from shanks, then season with salt and pepper.
  • Heat the oil in a stockpot over high heat.
  • Add shanks, turning requently to brown all sides.
  • Remove from the pot and reserve.
  • Lower the heat to medium and add the onions, stirring until golden brown, about 7 to 10 minues.
  • Add the stock, oregano leaves, cayenne, and tomatoes with juice.
  • Scrape the bits off the bottom of the pan to release the flavor.
  • Add the shanks back to the pan.
  • (If the shanks are not completely covered by liquid, add enough water to cover.) Bring to boil, then lower the heat and simmer for about 2.
  • 5 hours.
  • The shanks are done when the meat is practically falling off the bone.
  • To serve, arrange 1 shank per person in your favorite bowls.
  • Sprinkle with feta cheese and top with the onions and the sauce.
  • Serve immediately.

3 tablespoons feta cheese, crumbled
2 tablespoons mint leaves, minced
1 tablspoon extra virgin olive oil
1 teaspoon lemon juice, fresh
1 teaspoon lemon zest
2 scallions, minced
4 zucchini, about 1 . 5 pounds
4 sprays cooking spray
1/2 teaspoon kosher salt

Steps:

  • In small bowl, cobine feta, mint,oil, lemon juice, lemon zest and scallions; set aside.
  • Trim ends off zucchini and slice in half lengthwise.
  • Slice each half into 4 or 5 chunks.
  • Place on flat surface in single layer.
  • Coat both sides with cooking spray and sprinle with salt.
  • Off heat, coat grill rack or grill pan with cooking spray.
  • Heat over high heat.
  • Cook zucchini, flipping once until grill marks are evident and zucchini is soft, 3 to 4 minutes per side.
  • Arrange on platter and serve with feta topping.
  • Yields about 5-6 chunks zucchini and 1 tablespoon feta topping per serving.
