Categories     main-dish

Time 2h40m

Yield 4 servings

Number Of Ingredients 10

1 (3 to 5-pound) live lobster
1 white onion, chopped fine, plus 1 white onion, finely chopped
7 garlic cloves, minced
Olive oil, for sauteing
3 cups white wine
2 quarts heavy whipping cream
2 cups arborio rice
2 tablespoons salt
1 tablespoon pepper
Chopped parsley leaves, for garnish

Steps:

  • Cut lobster by piercing the middle of the skull and continue to cut through to the tail. Clean the inside thoroughly.
  • Saute 1 of the onions and the garlic together in olive oil for 2 to 3 minutes.
  • Add the lobster halves and cook 2 to 3 minutes or until the lobster turns a light red color. Remove the lobster. Pull the meat out of the shell, roughly chop and place in the refrigerator. Return the shells to the pan. At this time, deglaze the pan with 2 1/2 cups of the white wine. Add the cream and let cook uncovered until the cream reduces to 3 cups and turns a light red/orange color, about 1 hour 30 minutes. Remove the shells.
  • Saute the remaining onion in a saucepan in olive oil for 3 minutes, or until transparent. Add the arborio rice and stir for 1 minute. Deglaze with the remaining 1/2 cup white wine and cook until wine is almost completely absorbed.
  • Pour in enough water to just cover the rice. Cook until al dente, about 15 minutes. Add the rice to the lobster sauce and cook down for 15 minutes, or until the rice is creamy and tender. Season with salt and pepper.
  • To serve, spoon desired amount of risotto and place the lobster on top. Garnish with parsley.

BROWN BUTTER RISOTTO WITH LOBSTER

Brown Butter Risotto with Lobster image

Provided by Giada De Laurentiis

Categories     main-dish

Time 1h5m

Yield 4 servings

Number Of Ingredients 9

1 pound (about 2 medium) frozen lobster tails, thawed
4 1/2 cups reduced-sodium chicken stock
4 tablespoon butter, at room temperature
1 cup finely chopped onion
1 1/2 cups Arborio rice
1/2 cup brandy
1/2 cup grated Parmesan
1/4 cup chopped fresh chives
Kosher salt and freshly ground black pepper

Steps:

  • Bring a medium saucepan of salted water to a boil over medium-high heat. Add the lobster tails and boil for 8 to 10 minutes until the shells curl and the lobster meat turns white. Drain, transfer to a cutting board, and cool for 15 minutes. Using kitchen shears or a sharp knife, cut through the top shell lengthwise. Remove the meat and cut into 1/2-inch pieces. Set aside.
  • In a medium saucepan, bring the chicken stock to a boil. Keep hot over low heat.
  • In a large saucepan, melt 3 tablespoons of butter over medium heat. Cook until the butter begins to foam and then turns brown, about 1 to 1 1/2 minutes. Add the onion and cook, about 3 minutes. Add the rice and stir to coat with the butter. Add the brandy and simmer until the liquid has almost evaporated, about 3 minutes. Add 1/2 cup of stock and stir until almost completely absorbed, about 2 minutes. Continue adding the stock, 1/2 cup at a time, stirring constantly and allowing each addition of stock to absorb before adding the next. Cook until the rice is tender but still firm to the bite, about 20 minutes. Remove from the heat. Stir in the Parmesan cheese, the remaining butter and 2 tablespoons chives. Season with salt and pepper, to taste.
  • Transfer the risotto to a large serving bowl. Arrange the lobster meat on top of the risotto and garnish with the remaining chives.

Provided by Ming Tsai

Categories     main-dish

Time 1h30m

Number Of Ingredients 19

4 large, round rice wrappers
4 (6-ounce) fillets of halibut
8 ounces foie gras mousse
12 long chive batons
Salt and black pepper
Chives, for garnishing
Truffle oil for garnishing
8 ounces B or C grade fresh foie gras
1 whole egg
1/4 cup heavy cream
1 teaspoon white truffle oil
4 ounces diced chicken breast, skinless
1 tablespoon chives, finely chopped
Salt and black pepper
1 small spaghetti squash cut in half, deseeded
2 tablespoons butter
1 tablespoon honey
1/2 tablespoon minced ginger
Salt and black pepper

Steps:

  • Spread foie mousse on each fillet and top with 3 chives. Soak the rice wrappers in warm water until soft, about 3 minutes, then lay on a dry, clean hand towel. Place halibut, foie side down in the middle of the wrapper and fold in bottom side first. Then fold in the 2 sides followed by the top. Let rest on folded side for 5 minutes before cooking. These can be made 4 hours in advance. In a non stick pan, coat with a little oil and sear folded side first, about 3 minutes. This will seal the package. Flip over and sear the foie side until brown. Flip back over and toast in a 400 degree oven for about 8 to 10 minutes. On a large plate, place small mound of squash in the middle. Surround with mushrooms and garnish with truffle oil and chives.;
  • In a processor, puree into a mousse the foie gras, egg, cream, truffle oil and chicken until smooth. Transfer the mousse to a chilled bowl and fold in the chives and season with salt and pepper. Set aside;
  • Pre-heat oven to 375 degrees. Place squash on baking dish and add the butter, honey, ginger and seasoning. Bake for 45 to 60 minutes until squash is "al dente". Do not overcook the squash. Spoon out squash and check for seasoning. Keep warm for serving
  • Wild Mushroom Ragout: Canola oil 5 sliced shallots Salt and black pepper 1 cup crimini or button mushrooms 1 cup chanterelles 1 cup quartered shiitakes 1 cup morels 1 cup cepes or porcinis 1/2 tablespoon fresh minced thyme 1 cup red wine 1 cup veal demi-glace (1 cup chicken stock with 1 tablespoon dark soy sauce) 1 tablespoon butter (optional)
  • In a hot saute pan coated with oil, caramelize the shallots. Season. Add the crimini mushrooms first and cook for 1 minute. Add the remaining mushrooms and thyme. Check for seasoning. Deglaze with red wine. Let reduce by 75 percent then add the demi-glace. Simmer slowly for 20 minutes. Whisk in butter and keep hot for serving.
  • Yield: 4 servings
  • Suggested Wine: Sebastopol Vineyards, Dutton Ranch, Russian River, Pinot Noir, 1995

Time 5h

Yield 4 servings

Number Of Ingredients 29

1 tablespoon butter
4 pompano fillets, bloodline removed
Salt and white pepper, for seasoning
Squab Consomme, recipe follows
4 (1-ounce slices) foie gras
1 cup celeriac, chiffonade
1 small black truffle, julienned
2 bulbs spring garlic, shaved fine
2 spiny lobster tails, poached until medium rare and sliced into 1/4-inch medallions
2 spiny lobster tails, poached until medium rare and sliced into 1/4-inch medallions
Sprigs chervil, for garnish
2 squab, boned, breast and leg meat reserved for Squab Consomme, recipe follows (may substitute 1 duck, prepared the same way)
1 cup peeled and chopped carrot
1 cup peeled and chopped onion
1 cup peeled and chopped celeriac
4 cups chicken stock
15 whole white peppercorns
Sprig thyme
Sprig rosemary
4 squab breast and leg meat, reserved from above
4 egg whites, lightly beaten
1 stalk fresh lemon grass, chopped
5 star anise, crushed
1/3 cup sherry vinegar
1 small beet, peeled and chopped
1 cup peeled and chopped carrot
1 cup peeled and chopped onion
1 cup peeled and chopped celeriac
Squab Stock, see recipe above

Steps:

  • In a large saute pan or skillet, melt the butter over medium-high heat. Season the pompano with salt and white pepper. Place the fish, skin-side down, in the pan and sear for 2 minutes. Turn fish and cook 1 minute longer. Remove from heat.
  • In a small saucepan warm approximately 1 cup of Squab Consomme over low heat, but do not allow to simmer. Add the foie gras and cook for about 4 minutes.
  • In the bottom of four shallow bowls, arrange the celeriac chiffonade, black truffle, spring garlic, and lobster medallions, dividing evenly between the bowls. Top with the foie gras and fish. Pour the hot Squab Consomme over the top. Garnish with chervil and serve.
  • Preheat a medium saucepan over medium-high heat. Cut the squab carcass into small pieces and place in the saucepan. Stir occasionally until the bones are dark brown. Add the carrots, onion, and celeriac. Cook and stir until the onions are translucent. Add the chicken stock, white peppercorns, thyme and rosemary. Bring to a very light simmer, lower heat to medium, and allow to cook for 2 hours. Drain, cool, and reserve stock.
  • In a food processor, pulse the reserved squab breast and leg meat until fine.
  • In a large mixing bowl, place the squab meat, egg whites, lemon grass, star anise, sherry vinegar, beets, carrots, onion, and celeriac. Mix in the cooled Squab Stock and place mixture in a narrow, high-sided stockpot over medium heat. Stirring constantly, continue cooking while continuously scraping the bottom of the pot to avoid sticking. When the raft begins to form, stop stirring and monitor the heat closely. Do not allow the liquid to boil. When the consomme begins to simmer through the raft, continue cooking for approximately 30 minutes.
  • Using a small ladle, gently make a hole in the raft where the consomme can pool, then ladle the pooled consomme into a fine strainer lined with cheesecloth. Set aside for service.
